			<description>This is a delicious almond flavored biscotti-type cookie that is not overly sweet.  It was my favorite as a child (grandma used to make them).  God bless her--she made them by hand.  I use a machine (a Cuisinart or a stand mixer) for mixing the rather stiff batter.  If the dough is too sticky, lightly flour your hands to shape the loaves. I recommend allowing dessert to freeze overnight to set for cleaner service.  Cut with a hot knife and it will serve cleanly.

Can be made healthier or allergen-free by using different cookies and ice creams!  I make it with sugar-free lemon or other cookies and no-sugar added sorbets and icecreams!

Also try mixing which flavors you get from sorbet and which from icecream...such as mango sorbet and strawberry icecream, etc.

Add some white chocolate chips (or regular chocolate or mixed!) to batter before baking!  Or use as topping!  I like to dip whole strawberries or sliced berries in melted white chocolate before I set atop!  I've also used blueberries in the cupcakes, strawberries on top, and a different berry jam for center! 			<description>The secret ingredient here is pudding!  Either banana flavoured or vanilla pudding works great. It makes the banana bread moist.  Another tip is use bananas that are so overripe that they are all completely brown.  This will add better flavour to the loaf.  This recipe is all about the techniques which will help keep the loaf moist.  Covering the loaf with foil while baking is necessary, and will ensure a moist top that isn't crusty.  I've added some cake flour to the mix because Canadian wheat has alot of gluten and I wanted to make the bread dense but will bake evenly.  Feel free to experiment with adding different types of nuts or sweeteners to make this receipe your own.  So far I've baked this loaf in flimsy aluminum pans and glass pans, and the disposable aluminum works better than the glass pan.  I've also made mini acorn-shaped bread in Williams-Sonoma decorative pan as well as the W-S bundt pan and had impressive results with pretty designs. It is a traditional dessert from the Pays Basque region of France with a double cookie-like crust and a custard or jam filling (use Recipe #405945).  It's not overly sweet and can be enjoyed any time of day. It's very sturdy and therefore good for transporting.
You can use different fillings like blueberry jam, sweet cranberry relish, or even lemon curd. This simple dessert is best plain or with a little whipped cream or ice cream.
Doug requires at least 30 minutes to chill.
Storing: Wrapped well, the jam-filled cake will keep for a day or so at room temperature. You can also keep the cream-filled cake overnight, but it will need to be refrigerated. However, because refrigeration can dry cakes. 			<description>This is a recipe from the Bagley House Bed and Breakfast.  It is their most requested recipe and is an adapted version of Miss Bobo's Apple Goodie recipe from Lynchburg, Tennessee.  It's very much like an apple crisp. Their recipe gives instructions to clean the dish as soon as possible or reheat adding water and a few drops of dishwashing soap to help remove the caramelized sugar.  I didn't and boy do I wish I had.  The recipe reads 4-5 servings, but because it is so sweet, I cut down on how much to serve.
