Pasta E Fagioli (Pasta & Bean Soup)

Pasta e Fagioli, pasta fazool, or any way you want to say it! Regardless of how you pronounce it, this is a soup made with love. And, unlike so many others, this is not a copycat from any restaurant chains. I've made this rustic Italian soup a hearty dish by adding sausage. Served with a good Chianti and a fresh loaf of Italian bread, and you are ready to find some one's heart...by way of his or her stomach! :) -- posted by Alan in SW Florida

Family Marinara

This is my own version of the family marinara recipe that we've been making for generations. I think the biggest difference between the different family members' recipes are the herbs we choose to flavor the sauce with, but the basic preparation is the same.

Marinara is actually quite easy to make, and it goes wonderfully on any pasta, as well as chicken dishes, cutlets, or eggplant.

It is also wonderful to eat when you are sick, since the onions and garlic are great antiseptics and the tomatoes are full of vitamin C!

And finally, this sauce also freezes great. See note below. -- posted by Starrah

Roasted Tomato Black & Tan Soup

This was a demonstration recipe at Charlotte Anne Albertson's Cooking School (Wynnewood, PA), for "Awesome Soups with Brian Duffy" (Jan 24, 2006). Brian Duffy (http://www.chefduff.com) hosted the Food Network shows "Date Plate" and "Hot Trends 2005" and is executive chef at Shanachie, an Irish restaurant in Ambler, PA. This will make 3/4 gallon soup, enough for 12 8 oz servings.

All I can tell you is that this is a lovely change from the usual tomato soup and has a richness (courtesy of the roasting) and a yeastiness (courtesy of the beer) that no other soup delivers. -- posted by Gandalf The White

Quick and Easy Vegan Tomato Soup

In my opinion, this tastes just like Campbell's, but without the dairy, gluten, and other nonsense. For the non-dairy milk, I used So Delicious brand coconut milk. This is a new product which you can find next to the refrigerated soy milk at your health-food store. It doesn't have a strong coconut flavor, but it does have a lot of good fat, which means it works really well in a recipe like this. You can also try soy milk, nut milk, etc. -- posted by Prose

Creamy Tomato Soup

Of all my recipes, this is one of the few dishes that is repeatedly requested by my family and friends. We usually serve this soup with a couple of grilled cheese sandwiches, and it's such a satisfying meal for a cold and chilly day. I have made the delectable soup using canned tomatoes as well as fresh tomatoes from our garden, and I cannot tell the difference between the two versions. The time calculated for this recipe is based on using canned tomatoes (which is how I usually make it since it's more convenient). But if you wish to use fresh tomatoes, please consider that it will be about 10-15 minutes more of preparation time. -- posted by NorthwestGal

Jim Lahey’s No-Knead Pizza Margherita

This is a great recipe for a simple, thin crust pizza. It's from Jim Lahey (of no-knead bread fame) who now runs a popular NYC pizzeria called Co. The recipe was printed in New York Magazine (Jul 12, 2009). If you don't have a pizza stone, this works well in a cast iron skillet. The recipe requires very little time and effort but the dough must be started the day before. -- posted by blucoat

Easy Tomato, Red Onion, and Kalamata Olive Summer Salad

This refreshingly-light summer salad is my absolute favorite way to enjoy vine-ripened summer tomatoes. It's a quick and easy tummy-satisfying dish on a warm midday when the last thing I want to do is turn on the stove. The juicy tomatoes, sweet onions and rich-tasting Kalamatas are dressed simply with olive oil, red wine vinegar, fresh herbs, salt and pepper. If desired, add whatever other garden veggies you enjoy - our family loves cucumbers; or add a slice of feta and some sliced green peppers and you've got a Greek “village” salad! Don't forget the crusty Italian bread to mop up the tomato and vinaigrette juices. -- posted by Feast Your Eyes!

Chinese Eggs and Tomatoes

You can have this as a side dish, or even a main dish over rice. There are a few different ways to make this; but this way is my personal favorite. Don't be afraid to throw in some ground pork, cumin seeds, more or less eggs or tomatoes, etc. I will frequently drizzle sesame oil on top of the finished dish. -- posted by Mrs.R

Easy & Hearty Vegan Tomato Soup Chock Full O Veggies

Just because it's vegan doesn't mean it's tasteless! This soup is pretty rich and hearty, and it's a healthy meatless and animal-product-free version of the classic comfort food. It's a fun soup for the whole family, and your kids will LOVE it with grilled cheese sandwiches! I love my grilled cheese dipped in this soup. :) This is my very own recipe: my uncle is a professional chef and taught me how to cook in his massive kitchen but I can't do the insanely complex stuff he does. Thus while trying to find vegetarian and vegan recipes, I discovered this mixture by accident-- and have now perfected it instead of eating some overly salty Progresso crap.
Other Notes: 1) This is the UPDATED recipe, the first one was kinda rough, I've perfected it now. 2) You can also use 1-2 bay leaves for extra kick but I usually don't keep them around. 3) Try it with some extra orzo or ditalini if you want to make a meal out of it! -- posted by the80srule

Recipe by Terrence Brenan. Brenan cooks this pasta risotto-style by stirring in rich chicken stock a ladelful at a time. As the pasta releases its starch, the dish becomes delicately milky. Instead of finishing the dish with a knob of butter he folds in fresh goat cheese, which turns creamy in the gentle heat. Here, Brenan uses a small tube-shaped pasta called ditalin, but any small cut works. From: Strategies for Cooking with Cheese, Pairing of the Day, F&W Magazine, Published October 2008. Wine Pairing: Jason Miller, wine director at Picholine, pairs this recipe with the 2006 Charles Joguet Cuvée Terroir, a Cabernet Franc from Chinon in France’s Loire Valley. When grown in Chinon, this red grape tends to have herbal, spicy notes that make it an ideal match for goat cheese as well as tomatoes. Another good Chinon to look for is the cherry-inflected 2006 Marc Brédif. -- posted by Manami

Easy Puttanesca Sauce

A lovely warming sauce; a good sinus-clearer; or just some proper traditional Italian cooking! This sauce announces itself at full volume, because of the chillies, but is also full of flavour. It is pantry food - a sauce that can be thrown together from ingredients you can keep in the cupboard for months at a time. This is the simplest recipe for it I have found, but is still delicious. When condensed down there may not seem to be much sauce, but you want to treat this like pesto - a small quantity swirled through lots of pasta, rather than drowning in sauce. If you try to split this only between two you may find it too rich. -- posted by Boo L

Tomato Barley Soup With Thyme

I made this up quick when I had limited ingredients in the house, and unexpected company on their way for a meal. It's great comfort food and easy to make. I like to have nice crusty loaf of bread to serve along with and it makes a very hearty meal, especially with the beans (omit those if you're not a big fan). The barley makes it nice and thick. You can use homemade or store purchased soup stock if you prefer, just omit the bouillon and water. -- posted by Canning_Queen

Perfect Spaghetti Sauce (Crock-Pot)

As a kid, I was pretty picky about spaghetti sauce, and then mom got this one from a friend...SO good! Now that I have kids of my own, they love it and I've been able to improvise on the recipe myself to make it both kid- and adult-friendly! An easy meal that you don't have to think about and will make your house smell delicious! Plenty for freezing,as well, for another day. Hope you enjoy!

*Sometimes, I'll replace some of the tomato sauce with crushed tomatoes and add a little more spice and garlic to compensate*

We love minute steak... our butcher does a really nice job and I always want to try a new way to prepare it, I have done this before but I really liked it today...maybe it was the wine? The wine I put into the sauce... lol
Minute steak is really tender off the bat but I am sure that if you simmered round or serlion steak about an hour it would be really tender too.
This is especially yummy with mashed potatoes, but nice with rice or pasta too. -- posted by Marmie's

Traditionally, Italians dine on seven different fish and seafood dishes (symbolizing the seven sacraments) on Christmas Eve. (By the way, you don't have to wait for Christmas to make this wonderful dish.) This recipe is typical of the Calabrian region of Italy. Have plenty of crusty Italian bread available to scoop up the sauce. And, remember to buy your dried, salted cod (baccala) three days before cooking, so you can prepare it.
Fennel Ratatouille

The addition of fennel seeds and bulb fennel in this ratatouille gives an extra Mediterranean flavor. It goes perfectly with grilled meat, especially lamb. It can also be served hot or at room temperature and also makes a great sauce when stirred into hot pasta. -- posted by English_Rose

Alabama Living Soup

This recipe comes out of a local electric company magazine. We love hearty soups on the cold, damp days. This recipe fits the bill. Just place everything in the crock pot, go to work, come home to a wonderful soup. This makes a large crockpot of soup. For thicker soups you can use less broth, for thinner soups, use more. The cups measurement for the broth is up to your preference. -- posted by Jellyqueen
