Baby Bok Choy Saute

If you can buy baby bok choy, please do give a try. We much prefer the flavor of baby bok choy to standard boy choy which to our palates at least is quite bitter and too strong tasting. Omit the Thai pepper and replace with milder chile or freshly ground black pepper for less spicy version.
Wilted Garlic Bok Choy

I recently fell in love with Bok Choy & this is one of my favorite recipes. It is an easy, delicious, healthy & colorful side dish that seems to go with any meal.
FYI: The 1TB of olive oil is an approximation, I usually just eyeball it, so you may need more or less.
And for all you Monk fans..."Adding to the list Bok Choy." -- posted by Sirpezy

Kung Pao Tofu Rice Salad

This is a surprisingly satisfying vegetarian salad. I got the recipe from Leanne Ely's "Saving Dinner" e-mail service. I have since stopped using the service, but this recipe remains a family favourite. We are meat-eaters but enjoy this anyway! Cooking time is time to cook rice. If you plan ahead and use your rice cooker, this is a very quick meal to throw together! I *think* this is vegan but it might depend on the brands of soy and hoisin sauces you use. -- posted by Gingernut

Zippy Stir-Fried Baby Bok Choy

Easy to make, this side dish adds a colorful green vegetable to a meal and is a bit spicy and tangy. My DH loves it. If you choose to substitute fresh garlic and/or gingerroot, cook them in the hot oil before adding the cabbage. This side dish goes well with most Asian-spiced meats and poulty. Fried garlic (in jars) can be found at most Asian grocers, and imparts a bit of a roasted flavor to this dish. -- posted by artistclogger

Bok Choy With Ginger Vinaigrette

The flavor of this was much different than I had expected. You really taste the dijon mustard. I didn't chop up my bok choy just left it in whole leaves and poured the sauce over. I got this on the web and I have only had it warm, but it could be served as a cold side as well. -- posted by cookiedog

Baby Bok Choy in the Wok

This is a fast and easy recipe for cooking bok choy or baby bok choy. You can adjust the amount of flavor by adding more or less sake/soy sauce mixture (use equal amounts). We've found that adding the sesame oil at the end gives it more sesame flavor, but you could also just cook the bok choy in a mixture of vegetable and sesame oil. When in doubt, it's best to slightly undercook the bok choy. -- posted by Chef #910147
