			<description>I found a Christmas tree cupcake pan at a local supermarket and decided to make them using the Easy White Cake recipe from the recipe booklet which came with my new (Christmas gift) KitchenAid mixer. They were fun to make and messy to frost. LOL Having more than one pan would definately have speeded things up. I decorated the trees with some star-shaped Christmas candies. I also dropped some of the candies into the batter before baking, which gave some of the cupcakes a color-spotted inside. The round cake bits which resulted from cutting off the cupcake &amp;quot;humps&amp;quot; make nice, bite size, sandwich 'cookies' when put together with extra frosting. 			<description>A beautiful cupcake for Christmas -- or Valentine's Day.  The cake has become almost traditional for the upcoming season and now here is an individual-sized serving to highlight a dessert tray.  The recipe came from a book of cupcake recipes and decorating ideas.  I'm sorry to say I know neither the name of the book nor the author but am grateful to have gotten such a great recipe!  Note that the recipe for a suggested frosting is included at the end of the recipe, but any white frosting of your choice may be used.

			<description>These are from Jessica Seinfeld's book.  I have not tried these yet, but they are next on my list.  They pack a nutritional punch with yellow (winter) squash, blueberries, and spinach.  To make the squash and spinach purees, pre-cook the veggies.  The key is to puree them (in the food processor) until absolutely smooth and creamy. 			<description>White cupcakes with seasonal spices. Really good for fall! Goes really well with Chocolate Italian Meringue Buttercream. You can make this cake by hand or with a mixer. If you chose to use a mixer be careful not to over mix.
