Corn Side Dish

This is not only fairly easy, but if you have all of stuff ready can be thrown together in the microwave and it's done in 12-15 minutes. I got it when I bought my Panasonic microwave way back in the 70's. It is very good & very different. -- posted by M Messer

Adi's Shepherd's Pie

I started making this for my family when I was around 13. My brother Adam, who I call Adi, was crazy about it. Some people use creamed corn, I found that the frozen corn kept everything nice and moist. I eyeballed everything in this recipe, so hopefully the amounts are fairly accurate. Enjoy... -- posted by Miraklegirl

Rainbow Roasted Salsa & Gazpacho Bonus

Made this myself. The only non-roasted veggie is ONE, solitary garlic clove which just punches up the flavor. The salsa is not spicy at all. My mom described it as a little sweet. The salsa was a hit. I was tempted to title this Witchin' Salsa (replace the W with a B), but this is more kid-friendly. For you heat-eaters (myself included), you can add cayenne, hot sauce, or replace the jalepenos with other chiles. I just had to go wimpy because of my mom. I swear, I can practicially DRINK tobasco. My mom enjoyed the gazpacho part with a grilled cheese. You can even spread the salsa on crusty bread and call it 'Bruschetta'. Alternatively, you can GRILL the veggies -- posted by nomnom

Quick Polenta Rounds With Sage Butter and Parmesan

This delicious and quick recipe calls for "1 tube prepared polenta" - Many grocery stores carry pre-made polenta in tubes in the refrigerator section which can be sliced into rounds.

If you don't have access to pre-made polenta or wish to make your own, I recommend following RecipeZaar "Recipe #45131" (omitting only the last step). Alternately, you can make polenta to your liking, spreading it on a baking sheet while still hot in a 1/4" layer, and cool it in the fridge for an hour or until firm, then use a juice glass to cut small disks out of the polenta. I changed this recipe on 12/11/06 to reflect reviewers' feedback. -- posted by What's Cooking?

Jefferson's Polenta With Garden-Fresh Vegetables

From vegetarian times. Adapted from one of Thomas Jefferson’s recipes, polenta, with its origins in Italy, resembles America’s cornmeal mush, a staple in the US diet since the nation’s very early days. This makes a substantial entrée, delicious with raw, steamed or sautéed farm-fresh vegetables, such as tomatoes, green beans or chard. Preparation and cooking times are guesstimates. -- posted by sugarrushkid

Lemon and Thyme Sausage Kebabs

One of several budget-savvy, "sizzling sausages" recipes in the current issue of the Australian magazine 'New Idea'. This one food editor Barbara Northwood has costed at $A2.26 per serve. Vary the vegetables to meet your taste preferences and add some heat if that's what you like! If making this, I'd be inclined to increase the number of mushrooms and use onion slices in place of the corn which I've never been particularly fond of. -- posted by bluemoon downunder
