Cauliflower Gratin With Queso Cotija

I made this for our Tex Mex day after Thanksgiving menu. It would make a great side to any Mexican dinner and I won't wait until next Thanksgiving to make this one again. It received many compliments. You can assemble this gratin (through step 2) a day ahead; cover and chill.
Cauliflower Salad

This recipe has been passed around most of my town; everyone who tries it LOVES it and asks for the recipe. If you don't have fresh lemons, only juice (eg in a bottle), you can leave the rind out. Delicious side dish to barbecued or grilled meat. Tastes even better the next day.
Aloo Gobi Mattar

This is an adaptation of Aloo Gobi Mattar Recipe #187408 - a very tasty recipe. All I have done is rewrite it with the ingredients in the order they are used. At this time, I have only prepared it once. I used a combination of olive oil and butter for cooking, ginger paste in lieu of all of the fresh ginger, vegetable stock, and went without the hot green chili pepper, fenugreek seeds and fresh cilantro as I did not have them on hand. This dish is an excellent addition to any Indian meal and equally good reheated the next day. -- posted by MA Blossom

Parmesan Cauliflower

I tried this once when my parents were getting home late and hadn't eaten anything yet. We had more cauliflower than we knew what to do with, so I made my own recipe. Keep in mind, when I tried this, I played everything by eye, no physical "tbsp, tsp," that kind of thing. So I'm estimating how much I used.
Low Carb Basil and Garlic Cauliflower Mash

When I first made this recipe, I couldn't wait to have my friends who aren't on a low carb diet try it - because you literally can't taste that it's not potatoes! And I was right! They didn't believe me that it was cauliflower and kept on trying to steal more bites of it at lunch. It's SO rich and creamy, and with a bite from the garlic and fresh basil, I guarantee you're going to be making this every night (I do!) You don't even need salt or pepper. -- posted by cckarl

Smashed Cauliflower-Potatoes

Here is another vegetable side dish that I make once or twice a week. This recipe fits perfectly with phase 1 of The South Beach Diet and is a great alternative for those wanting to cut back carbs. Even my meat-and-potatoes husband enjoys this recipe. Cooking the cauliflower in milk is what makes this version unique (and tasty). Also, I have used a couple of bags of fresh cauliflower already cut up like they sell at Trader Joe's or 1 20 oz bag of frozen florets for convenience. -- posted by Foodie Friend

this recipe comes from a cookbook i purchased while living in thailand, as recommended by a native. the key is cooking time for the vegetables. be sure they are not overcooked and too soft. always use fresh vegetables, as frozen always turn out soggy. this is a great side for any dish, not just thai food. to make a great spread, i cook this along with my cashew chicken and sweet & sour pork/chicken. -- posted by gnet

This is a family favorite that is served at all our family dinners by my grandma. She loves to cook and found it in an old church cookbook she got years ago. It makes a good side dish to any dinner and doesn't take long to make. Fast and easy, this one is a keeper.

Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~

Cauliflower Steaks With Cauliflower Purée

Originally found on Epicurious, great easy recipe. Few ingredients, big payoff: Large "steaks" are cut from a head of cauliflower, sautéed until golden, then baked until tender. They're served over a simple puree made from the cauliflower florets. An impressive first course, this can also be a lovely side. Just sear two mahi-mahi fillets in butter and place them alongside the cauliflower. -- posted by jwith12

Cauliflower and Shells With White Cheddar Dill Sauce

There is an amazing website here in Richmond, VA called Black Sheep (MUST GO IF YOU'RE LOCAL!). They currently have seasonal side dish that inspired this copy-cat recipe for my family's Christmas dinner - with no baking necessary. I have pretty exotic taste buds, but my two brothers and father have a diet that consist of tacos, hot wings, pizza, burgers and steak - NO VEGGIES.
Cauliflower and Potato Gratin (Russ Parsons)

A simple, satisfying vegetarian recipe than can be served as a holiday side dish or a or as a main the rest of the year. Do be sure to cook the cauliflower well to mellow the flavor. And make the white sauce a little thicker than you might think appropriate -- the cauliflower and potatoes will both give off some moisture while they bake.
