Pesto and tomatoes are so lovely and aromatic together and roasting allows the flavors to intensify. What a simple way to create an incredibly delicious dish. In order to soak up every delicious drop I would serve this over a simple rice like my Recipe#137364 or serve it with a good crusty bread. Adding a simple green salad and a wonderful bottle of wine would make this meal totally rock! I would serve it with Chateau Ste Michele Dry Riesling. My mouth was watering so much when I read this recipe that I had to share it with you as fast as I could! After Breezermom's helpful comment I edited the directions for the pesto and lemon juice so the pesto is not runny. 			<description>This recipe is by Jim Shirley, the chef at &amp;quot;Fish House&amp;quot; in Pensacola, FL.  It was prepared at the cooking demonstration during the Seafood Festival in 2007.  Everyone that got a taste loved it, and at the festival this year (2008), people were still talking about it.  He used redfish, but you could also use any nice firm white fish, such as trigger, snapper, or grouper.  *Please note...If you choose to use tilapia, reduce the fig mixture..the tilapia is not a firm enough fish nor is it thick enough to support these flavors as posted!.  Generally tilapia fillets are much thinner than redfish, and the sauce will overwhelm it.* **Please note...most of the reviews have used frozen tilapia....this fish is not thick enough to support the flavors of this recipe....please reduce the fig mixture if you are using tilapia!** Of course, fresh always tastes better than frozen, so try to go fishing or to your local fish market if you are on the coast. 			<description>This literally takes minutes in the oven. Tilapia (an inexpensive fish, but you can add some great flavor to it), fresh grapefruit and dill make this dish absolutely wonderful.
Serve this with some oven fries or fingerling potatoes and some fresh oven roasted zucchini planks, just with olive oil and fresh herbs is perfect.  A light fresh dinner. For those who love the light tart taste of grapefruit this is for you.
