			<description>&amp;quot;Describing&amp;quot; the recipe preparation actually takes more time than the actual cooking time itself -- so, don't panic!  It's very simple and wonderful!  For example, cooking jasmine rice properly has it's own little secret.  Using coconut oil, if you can find it, is healthy, nutritious, and really flavorful.  However, if you don't have it available, EVOO works fine!  And, lastly, you can substitute any flaky white fish, such as sea bass or tilapia, but be sure to adjust the cooking time according to thickness. 			<description>This is my original recipe. It is so easy you won't believe how good it is. Beautiful white halibut, lightly smoky from the BBQ, with a sauce of red currant jelly and garlic.  Feel free to add a bit of finly chopped jalapino if more heat is your taste.
If you can't find red currant jelly, seedless red raspberry works well, but will be sweeter.

I am going to have to guess on the amounts, as I only made 2 skewers to go with our other dishes. I think the amount listed should be about right for 4 people you can adjust pesto for your personal taste, we love pesto and I probably used a tablespoon per skewer that I made. Serve these with your favourite vegetable or a nice green salad. I know that Alton Brown insists that a cast iron dutch oven is the best way to go for deep frying. But in my opinion, get an electric deep fryer with a basket and a digital temperature control. Watch the Good Eats &amp;quot;Man Food&amp;quot; episode for tips on selecting a good deep fryer. I posted the cooking time as 1 hour, because if you are using the dutch oven set up on an electric stove top, it takes awhile to heat up that much oil and for the heat to rebound between batches. Regarding the cilantro root -- my husband looked at every Asian market in the area to no avail thinking if anyone would have cilantro root they would.  He felt it was essential to the recipe despite the recommendation of adding additional cilantro instead.  He mentioned to me he had been looking for cilantro root -- &amp;quot;Did you think of the herb section of the nursery?&amp;quot;  I bought a little 4-inch pot of cilantro from the herb section and washed the roots thoroughly (a chore, I will admit).  Sometimes you can find cilantro with some of the roots attached, but rarely. Cooking time is the marinating time in the refrigerator.  Letting it sit in the vegetable mixture overnight is not included.
