Toasted Spaghetti With Clams

Fast & Healthy. From "Fats Times with Ferran Adria" - Editor's Pick: Kristen Donnelly's Favorite from F&W Magazine, February 2005 edition. Ferran Adria credits the idea for this dish to one of his acolytes, Moreno Cedroni, the hyper-ceative Italian chef at La Madonnina del Pescatore in Italy's Marzocca di Senigallia. The method is very similar to risotto but spaghetti fills in for the arborio rice: Adria toasts it in a pan with a little oil, then adds hot clam juice until the pasta is fully cooked and loaded with briny flavor. Serve with a light zingy, minerally Albarino from Rias Baixas has the acidity to balance with the briny clams - try the 2003 Mar de Frade,
an easy-to-find aromatic, zesty albarino. -- posted by Manami

Spaghettini With Crab, Lime & Chilli

From Bill Granger's bills Sydney Food. This dish relies on the hot pasta to warm the other ingredients, so combine immediately after draining. This works well as a quick weeknight meal. I've made many variations, using only lemon zest and juice, coriander in place of the parsley, omitting the lime and adding Parmesan, etc. . . It's easy and versatile. -- posted by AmandaInOz

Pasta With Sun-Dried Tomatoes

A simple sauce tossed with your favorite pasta for a quick yet healthy dish.
Sun-dried tomatoes and mushrooms provide a nice meaty texture for those who choose not use meat. Personally, I add a pound of jumbo shrimp at the end and substitute clam juice or seafood broth for chicken broth.
This meal is served with a caesar salad and Texas toast After the sauce has cooked to desired thickness, just toss the pasta and you are ready for a treat.
My idea, my version. Takes less than an hour minutes to prepare. -- posted by Chef #1168101

Cajun Shrimp W/ Red Peppers Angel Hair Pasta and Cayenne Alfredo

This recipe combines grilled shrimp brushed with lemon butter and sprinkled with Creole seasoning. The shrimp is added to a mixture of red bell pepper slices simmered in olive oil with garlic and onions. Alfredo sauce is then added to the shrimp and peppers and laced lightly with cayenne pepper to kick it up a bit. This mixture is then served over a bed of angel hair pasta. I created this about two years ago on a whim and it has become a family favorite. The trick is not to make it too spicy - but the flavors of the grilled shrimp, sweet peppers and light amount of spicy alfredo is a real delight in our house. I doubt this recipe is original, but it is something my family asks me to make for special occasions because it is a favorite. The timing of the cooking of the pasta, peppers and shrimp is essential to avoid overcooking any of the ingredients. Think ahead, go for it and enjoy! -- posted by Chef Tony M.

Summer Shrimp Scampi With Linguini

I adapted this dish from a Tyler Florence recipe one evening while trying to come up with a way to use an abundance of fresh basil and tomatoes from my garden. I had made a batch of fresh pesto with toasted pine nuts the day before. You can make your own or use ready made from the grocers. AND I used large frozen shrimp (lets face it, most grocers more than 25 minutes from the ocean only sell frozen anyway!). The combination of shrimp and tomatoes with a little garlic and basil seemed like a natural for a summer evening dinner. Add a little toasted sour dough garlic bread. My family polished off the whole platter. -- posted by Pegasus from SF

The Realtor's Shrimp Scampi W/Spaghetti

This will blow you away. The first time you serve this, you'll be ok because they don't know how great it's going to be. The second time you serve this, you better put it on the table and get out of the way FAST cause they are going to knock you down trying to get to it. It's a recipe that I have developed through years of making it over and over and over. This is the best version I have been able to create. NOTE: This recipe is to be used with 1/2 pound of spaghetti. If you are using 1lb of spaghetti, double the recipe because there won't be enough sauce for a full pound. If you are doubling it, don't double the lemon juice or it'll be too tart, just bump it up to 3 Tbsp. and only bump the lemon pepper up to 3/4 tsp or it will be too salty for some people.
Sarasota's Creamy Mussels over Pasta With Herb Bread

Easy and flavorful. A rich creamy broth which can be served over angel hair pasta and crusty bread slathered with a herb butter. Now you can make your own butter, however, you can also buy a stick of herb butter right from any major grocery store which is great to keep on hand. The mussels open in a light creamy broth with tons of flavor, served in a large bowl so the bread and pasta can soak up all the good sauce. A fair amount of ingredients, but nothing hard. This recipe is for 8, but you can easily cut it in half. -- posted by SarasotaCook

Pasta With Tuna, Spinach, and Red Pepper Flakes

The original recipe came from the San Francisco Chronicle. The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach. If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use. However, I have used tuna in water when it was all I had in the pantry. Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version. Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!! I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it. This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). I look forward to reading your comments with your add ins :) -- posted by CharlieGal
