A friend from work gave me this recipe when I was taking care of my niece and nephew. It is a HUGE hit with kids of all ages and a great alternative to throwing hot dogs in with box mac and cheese!
Quickie Chicken Casserole (W/Elbow Pasta & Pf Stuffing Top)

This is just a quickie chicken casserole dish that we really enjoy. I know there are many chicken casserole recipes out there. They are all pretty good. This one is made with a Pepperidge Farm Stuffing, bread crumbs, & grated cheese topping. If you like a creamy version of a casserole, stir in 4 oz. sour cream & 4 oz. softened cream cheese before cooking.
** Also, I quickly cube chicken breasts & cook with some olive oil & a full tablespoon of refrigerated chopped garlic in saute' pan then drain off the fluid & add it in. -- posted by BlondieItaliana

Picadillo De Chorizo Con Maccarones(Minced Chorizo W. Macaroni

This is a recipe with no hard and fast rules. You can change your ingredients according to availability. This is a genuine recipe from northern Spain which can be adapted because its so flexible. If you cant get minced chorizo, the best way is to use half ground beef, half pork and some pieces of chorizo cut into small pieces. Its great, easy and the taste is supreme. -- posted by PhilH

Mrs. Shirley's Goulash

This goulash was made everytime our church would go to the homeless shelter in Detroit. The ladies from our church would get together the day before and get all the food ready. We would go to Mrs. Shirley's home and she would just whip up this goulash. I usually do not like goulash but hers was just so good that you couldn't help but love it. It is a simple as can be. She would always cook it for hours while we prepared other foods for the shelter. You could smell it coming together and mmmmm smells so good!! -- posted by ladyautumn

Macaroni Goodness

I let my husband name this dish. Of all the things I cook he says this is one of his favorites. I certainly don't mind making it because it's so good and so easy. I guess I can stop trying to be "gourmet" if this is what he really wants to eat. :-) This is good comfort food and is easy for a quick weeknight meal. The quantities listed below are approximate since I just eyeball most of the stuff. If I don't have the family size box of mac and cheese on hand I just use 2 regular boxes. I also like to use the frozen veggies that you can microwave right in the bag. -- posted by RayMakMama

Macaroni W/ Squash, Salami in Ricotta Tomato Sauce

From Food and Wine Quick from Scratch Pasta Cookbook. The ricotta with sun dried tomatoes really makes this dish special. Any meat could be subbed for the salami, i.e. chicken, bacon, etc (or skip the meat alltogether). I added the parm with the ricotta and took off the heat. Different, but really good; not a "saucy" pasta, but really nice. -- posted by Vicki in CT

4th of July Triple-Layered Savory Casserole

From Family Favorites Cookbooks by Readers Digest, c. 1993. THREE LAYERS OF YUMMY - VEGETABLE, MEAT & PASTA! This dish is a crowd-pleaser at a 4th of July celebration or at a pot luck supper. Can substitute ground turkey or veal for the ground beef. For serving, use a clear, ovenproof dish to show off the layers of the vegetables, beef, and macaroni.
My Dad's Ultimate Macaroni and Tomatoes

I am originally from the Canadian east coast, and like most people from that area, I grew up with classic macaroni and tomatoes. Sound plain? Well, it can be, but not the way my Dad makes it! Even if you think this doesn't sound that exciting, give it a try- I know you will love it! Kids love this too...

*** Edit for the person who mentioned they left out the summer savory because they don't like mint flavouring in their food- it is NOT minty, it is another herb similar to sage and thyme actually. Hope that helps! However, since I know it is hard to find in some areas, it isn't necessary, it's just that I love it, hehe. -- posted by Lady Clare

Bacon and Macaroni Frittata

This is quick and easy to prepare- a great meal with salad in the summer or with more substantial sides in the winter. I like that it is a complete meal, without the fatty crust associated with a quiche. If you do not have Cavenders seasoning, pepper will do. I use extra lean bacon medallions so add about 1/2 tablespoon of oil to cook the bacon in. -- posted by Shuzbud

Buffalo Chicken Mac-N-Cheese

Buffalo chicken meets mac-n-cheese. How can you possibly go wrong? I threw this together for the end-of-the-year potluck lunch at the high school where I teach, and it went over really well.

Addendum: Like the first two reviewers, I also used Ken's. Worked great! However, I have to disagree with one reviewer about the celery. I've made this with and without the celery, and its inclusion really makes a world of difference in terms of texture. -- posted by Cluich
