My Daddy's Mac and Cheese

My father is a wonderful cook, but he never writes down a recipe, and rarely measures ingredients. I end up having to guess the recipe by watching him make it, then try it myself. After many experiments, it usually turns out. This is one of those. It makes a huge batch, but luckily, it freezes very well. Make it with the basil when you have some around, and without when you don't. That's what Daddy does. -- posted by EmmyDuckie

Ypsi's Mom's Macaroni Salad

A simple, classic & tasty pasta salad from my childhood that was a standby whenever we "cooked out". The tangy, salty flavor is a nice counterpoint to the sweet and smoky richness of barbecued ribs or chicken.

I would suggest tasting the dressing before adding the macaroni and veggies. If it's almost *too* salty/vinegary, then it will be perfect with the pasta.

Also, while it can be made ahead and chilled, be aware that the pasta will absorb and damp down a lot of the flavor in the process, so if it's been chilled a while, taste and correct seasoning if needed. -- posted by Ypsi

Cafeteria Macaroni and Cheese

I'm not sure where the "cafeteria" comes in, but I stole this recipe from: http://allrecipes.com/Recipe/Cafeteria-Macaroni-and-Cheese/

We like it because you don't have to fuss around with a bechamel sauce (which always goes gritty on us, it seems) and also, it tastes darn good.

I think the crumbs on top are unnecessary, and the recipe has plenty of saturated fat without them, but use them if you like the crunch. We use a smoky, Spanish paprika, which adds some exotic flair, in addition to a bit of color. -- posted by Podkayne

Lighter Macaroni and Cheese

I found this recipe in the Low-Fat cookbook published by Cook's Illustrated. I used, as was recommended by the cookbook, Cabot brand 50% cheddar. The cheese looked pretty white, but the final recipe had a yellow tinge. This cheese is sold in block form. Block low-fat cheese generally melt better than pre-shredded low-fat cheese. -- posted by Reddyrat

This is a very easy homemade recipe that has all the traditional tastes of Italy. It's a Penne Rigate dish with Roasted Red Pepper, Artichoke, Onion & Garlic Puree. I happen to love this and so does DH. You have to like roasted red pepper to enjoy this recipe to the fullest extent. It's so simple to prepare as most of the prep is done with a food processor or blender for the puree then you just serve it over your favorite pasta - we like it best over Penne Rigate, but any pasta will do. ** You could also stir in some cooked shrimp or cooked sliced sausage if you want a more hearty dish ** -- posted by BlondieItaliana

This is an easy and low-fat pasta salad, enjoyable with grilled goods, on a picnic or even as side dish. If it has to be prepared beforehand, try to add the yoghurt and mustard shortly before serving, otherwise it gets dry.

Egyptian Lentils Rice and Macaroni

Although a vegetarian dish, this gets eaten with reckless abandon by carnivores.
it sounds way too healthy (and it is) but dang! it is GOOD. try it. give about 45 minutes from start to finish.
If you don't have cooked brown rice lying around, start that first and foremost.

Pasta Bake With Vodka Sauce

This is a simple, quick and relatively healthy pasta recipe (especially if you use whole wheat pasta and low fat cheese). I recommend using shorter pastas like penne, ziti, farfalle, macaroni or rotini. If you want to use spaghetti or linguine, break the noodles into thirds or quarters. You can also use any kind of sauce. I prefer vodka tomato sauce, but I've also used garlic basil, and it tasted great. I also stick the dish under the broiler for a minute or two after it's done baking to make the cheese brown and crispy. -- posted by Mitsein

My family's favorite comfort food! I must warn you, this is extremely cheesy and we find it highly addictive. Not a diet food!
Four-Cheese Macaroni With Curry Crunch

A touch of spicy curry flavour is a surprisingly terrific match for cheesy pasta. Do try the four cheeses below (though you can also use up bits of cheese lingering in your refrigerator). In either case, be sure to use the goat cheese for luscious creaminess. For variety, stir in sliced mushrooms or chopped broccoli.

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

Make this 1 sauce (it makes a lot of sauce, so this is perfect if you're having a BBQ) - and you can use it to make 5 summer favorites all at the same time: Chicken Salad, Macaroni Salad (pasta salad) Potato Salad, Egg Salad, Chicken Salad AND if there's any left over - make some Deviled eggs! -- posted by BBCFan

Goat Macaroni and Cheese

My allergy to cow's milk leads me to experiment in interesting ways. This recipe is all goat based, although all items can be substituted with oil or veggie based cheese replacements.

I prefer white pepper in my "cream" based recipes, but green pepper is also excellent in this recipe. -- posted by Jennifer Cross

Raw Macaroni and Cheese

This isn't the creamiest, best tasting macaroni and cheese out there. This is a yummy, super quick casserole, that my family adores. My kids love the pepperoni variation the best. It is easily adapted for your pickiest eater. I have also increased the quantity easily. I add a bit more butter, and noodles. Just be sure the milk comes up to top of noodles. I've never had to increase time. It does rise and could boil over if there isn't enough room in pan. -- posted by Ezri_B

Double-Dutch Mac & Cheese With Chard

This is a rich and delicious macaroni & cheese from Bon Appétit Magazine (May 2009). You can use any combination of good melting cheeses such as Gruyere, Emmentaler, Fontina, or cheddar. It works with kale, chard, or spinach. If you omit the greens, this also makes a great traditional mac & cheese. If you want a creamier macaroni & cheese, just add a little more milk until you get the desired consistency. -- posted by blucoat

My My My Minestra - Italian Vegetable Soup With Pasta

Some of Italy's finest ingredients make up this warming soup.

Adapted from 'Pasta Cooking' by Parragon.... the original recipe called for spinach, which I didn't fancy, so I subbed zucchini. I get the impression that our zucchini are generally a bit smaller than those in the Northern hemisphere, so balance the amount used with your other vegetables, just feel your way! You don't want your soup to be over-loaded with any one vegetable.
Hope you enjoy! -- posted by Karen Elizabeth

I got this from the back of a box of macaroni. We loved it and I wanted to share it. Also, didn't want to lose it and knew it would be safe if I put it on here. It is very simple and quick to make and during the summer that counts for a lot because I don't have as much time to cook. I took it to a potluck and brought home an empty dish so I was happy about that...lol.
Vegan Spaghetti Casserole

This is a nice change from the typical burger or parmesan topped spaghetti sauce. Easy, tasty and the kids like it! I also like that it is a one dish meal. You can use any small pasta in place of the wheat. I use home canned tomato puree but you can replace that with two 28 ounce cans of tomato sauce and 2 cups of water. Serve on top or on the side with frozen corn that is steamed. -- posted by RussianMama

This is different from most mac and cheese with tomatoes recipes, as it does not use flour or milk. It's good for potluck suppers. My boyfriend made this with no low-fat adjustments, and it was pretty darn good. I personally would have used low-fat cheese and yogurt instead of sour cream. This was from the October 2009 edition of Country Living magazine.
Garbanzo/Chickpea Pumpkin Macaroni Casserole

Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking. Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond "cheese", skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! I make it when I know I have a busy week ahead and can easily get about 4 meals out of it for just me. -- posted by the80srule

Jamie Oliver Mac N Cheese

Jamie: ''Mac 'n' cheese' is a classic American pasta dish - everyone loves it. Sometimes it's done so badly in the convenience area, it's almost become famous for being horrible, but when you do it properly, trust me, it's an absolute killer. Feel free to use any tubular pasta you want. I've made this dish my own by lightening it with sweet tomatoes and given it some crunch with delicious breadcrumbs. Just you wait till you try it!

This dish isn't going to win any prizes in the nutrition department, but you can, and should, balance it with a nice salad. If you only have it once in a while as a special treat it'll do you no harm."

Haven't tried it yet but it sounds so good so posted for safe keeping.. Preperation and cooking time are estimates -- posted by mamaDlicious

Originally posted on VegWeb.com by beep_i_am_a_robot. I haven't made this myself yet, but I want to get the nutritional breakdown. I plan to tweek by reducing the salt content (using Bragg's amino rather than soy and leaving out the salt), reducing the fat and increasing the tofu (several reviewers on VegWeb have done this and liked it).
