Simple Tuna Pasta Salad

Some of the best recipes are the most simple. This is one of those. I prefer it just as written, but you may add any ingredients you choose such as chopped onion, scallions, chives, water chestnuts, chopped hard-boiled eggs, lemon-pepper, dill, parsley, etc. I often take this to potlucks when I need a quick and easy (and economical) dish. I've never had to take home left-overs. Tuna pasta salads can be found at many pot lucks. Albacore tuna is plentiful on the Pacific Coast, and this recipe represents the Western U.S. -- posted by PanNan

Isn't This Carbonara Pasta

I love pasta. It's so versatile you could eat it every day of the week and not have the same dish twice. This dish is a throw-together type dish that is so easy. It's the 'whatever happens to be in the fridge or cupboard' type dish. You can add tuna, salmon, shrimp or even legumes as the protein, and any vegetable in the crisper, or none at all. Kick it up with more garlic and spices, or just salt and pepper. Your main ingredients form the staple of the recipe; pasta, egg and broth, and cheese. -- posted by Karen1961

Ultimate Stove Top Macaroni & Cheese

Here's a family favorite simple mac 'n cheese recipe that I always seem to go back to (it's almost identical to the one found on the Velveeta box). It's quick and easy, creamy, cheesy and good! I like to mix in some veggies (Fordhook limas are my favorite, DH likes extra pepper and cottage cheese in his ), some leftover ham, a can of tuna, or even some sliced hotdogs for a quick and easy one-pot comfort meal. Be as creative as you like! Perfect for those busy week-night dinners. Pssst...it's great topped with grated Parmesan cheese, at the table. I hope you enjoy. -- posted by BecR

Grandma Grace's Macaroni Salad With Tuna

I don't know where my mother learned to make this macaroni salad, but it is a multi generation family favorite. And it is so simple! The only family get togethers where we don't make this are Thanksgiving and Christmas. I think my father would dis-own my sister and me if one of us didn't make it for Easter! It always disappears when taken to pot-lucks and picnics. There is no mustard in it, and it is the only macaroni salad my dad will eat. My mom used to use regular tuna packed in oil, but I now use solid white albacore packed in water, whole wheat pasta and canola oil mayo in an effort to "lighten it up". Prep time includes 2 hours cool time. -- posted by Simply Chris

I havent ever added the last 3 ingredients I think it tastes just fine without it.
Tuna Macaroni Casserole

This is another one of those “in every kitchen cabinet” type of recipes that I have been cooking for years. It originated because I basically didn’t know how to cook (still not sure that has changed much). Now-a-days we use the recipe in those not much time to prepare situations and still enjoy remembering, as well as laughing about, how it was when my husband and I started our journey through life together. -- posted by IOjaw

Cheesastronie Soup or Leftover Tuna Macaroni Casserole Soup

As anyone who cooks for one or two knows, it’s hard not to get stuck with leftovers. Since many of the meals I cook consist of portions too large for one sitting, I normally separate the remaining recipe into one and two person serving containers, and then freeze. Sometimes, such as when we are having a hectic day or perhaps just don’t feel like
cooking from scratch, we combine two of the individual recipe portions to create a new recipe or take one of those retro cans of soup and combine it with one of the leftover portions of my own recipes.

Shrimp Macaroni Salad

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Mrs. Alice (Podgie) Meyer. She didn't specify the number of servings this recipe makes. So, I am using guesswork.
Shrimp Pasta Salad-- Waco Style

This is my spin on my Mom's famous shrimp salad -adapted for my DH's tastes - which means no mayo or mustard. ;) I tend to sprinkle, pour and shake until the consistency and flavor are to my (our)liking, so please bear that in mind as you make this and adjust the flavor to your liking. ;) **My mom makes this using Knott's Honey Dijon dressing in place of the Berenstein's....and it is great - a bit less of the savory seasonings as it is a different flavor, but DH will NOT eat that one - hence my version. His friends ask for this when we have parties or take trips. **Prep time is boiling of pasta and chopping, Cook time is assembling pasta. Chill time not included as it is not required.****Can make this ahead and increase the serving size for large gatherings easily as it is usually a hit anywhere we take it***

Murray's Tuna Casserole

My dad would make this often, serve it warm for dinner, and cold for leftovers the next day. If you like cheesy tuna casserole, you can add 1/2 cup of shredded cheddar cheese to the mayo mixture or sprinkled on top followed with the breadcrumbs. While warm, this is very creamy. When you refrigerate it, the macaroni absorbs the mayo and it becomes flakier. Both ways are delicious! --Bird -- posted by 2Bleu

Summer Pasta Salad

This is the quintessential summer comfort food. When it was too hot to cook or eat a heavy dinner, my mother would often make this as a light summer meal. The leftovers taste great the next day! NOTE: Many of the spices can be adjusted to taste. I like to experiment with new flavors, like adding dill or curry powder.
Penne With Roasted Red Pepper, Artichoke, & Garlic Puree

This is a very easy homemade recipe that has all the traditional tastes of Italy. It's a Penne Rigate dish with Roasted Red Pepper, Artichoke, Onion & Garlic Puree. I happen to love this and so does DH. You have to like roasted red pepper to enjoy this recipe to the fullest extent. It's so simple to prepare as most of the prep is done with a food processor or blender for the puree then you just serve it over your favorite pasta - we like it best over Penne Rigate, but any pasta will do. ** You could also stir in some cooked shrimp or cooked sliced sausage if you want a more hearty dish ** -- posted by BlondieItaliana

Vegas Style Mac 'n' Cheese With Grilled Lobster

I saw Adam make this on The Next Food Network Star Season 4 and wanted to try it so badly! I found the recipe on The Food Network website. I'm not sure how to separate each section of ingredients. The top section (from the butter to chopped parsley) is for the mac and cheese itself. The 1 cup parsley leaves through lobsters is for the grilled lobster and the bread crumbs through the Italian Romano cheese is for the bread crumb topping. I haven't tried this yet myself and have listed the steps in the same order as Adam Gertler, but I will gladly work on the procedure if I, or a reviewer, finds a better order to list the directions for the grilled lobster and bread crumb topping. I am also listing the prep and cook times from The Food Network and will revise if needed. There is 1 hour of inactive prep time. -- posted by Scarlett516
