			<title>Healthier Basic Crepes</title>

			<description>This is my adaptation of  Recipe # 55172. Unsweetened soy milk is best. (I'm lactose intolerant.) Reduce the sugar if you use sweetened soy milk. For vegetable crepes, omit vanilla and reduce or omit sugar. (It does not need salt, but if you must, you can add a pinch of salt.)  For what it's worth, I am using an old Wagner cast iron frying pan, that's so worn I can't read the markings, but it measures 8 3/4&amp;quot; wide at the top (inside dimension), and cooking on a Frigidaire glass/ceramic cooktop. 			<title>Cheese Blintzes With Blueberry Sauce</title>

			<description>The Old Farmhouse Bed &amp;amp; Breakfast, Salt Spring Island, British Columbia. Owner Gerti Fuss notes that these blintzes can be made ahead of time and heated just before serving. Put the filled blintzes on a baking sheet and freeze until firm, about 1 hour, then wrap the blintzes individually and freeze for up to 2 weeks. To serve, Fuss (who makes as many as 100 at a time!) defrosts them on a baking sheet overnight in the refrigerator, covered with a cloth to keep them from drying out, and then reheats them in a 300&amp;deg;F oven until heated through, about 15 minutes.

You can use just one type of fruit or more for color and flavor.  This recipe works really well with Pear by itself. I would bet that an apple would be really nice by itself too.  Use whatever is in season. I am really liberal with the  cinnamon, so I probably use more than the 1/2 teaspoon total that I put in the recipe. 			<description>Oh my gosh these are AWESOME!  This can of pineapple on the counter was calling to me, and my husband can't eat wheat, so if I make pancakes they're gonna have oats in them.  Plus, the Tahitian Pancakes came up on Heroes in the past week or so, so that's on my mind.
I combined two different recipes that I found online, one for pineapple pancakes and one for oatmeal pancakes.  Neither one is like this new version though.  SO AWESOME!  
One last thing, I used coconut milk instead of cow milk, since my husband is also on this non-dairy kick.

			<description>This is a stunningly simple and delicious recipe from The Food You Crave cookbook. I have copied exactly, the books version but we make it slightly different at our home. I've used artisan loaves of bread: raisin/pecan; apricot/almond; and other fruit/nut combinations for the bread. Then, instead of the combination of egg whites and whole eggs, we just use the entire egg and 2% milk. I have found that there is NO difference between the hard-to-find frozen peach slices and drained, canned peaches so we now use canned. I've also made this with a combination of fruit: canned peaches and apricots, just one of the fruits or sauteed Granny Smith apple slices with butter and Applejack Brandy added to the saute pan. This is a hearty and beloved recipe at our home and extremely easy to adapt to your taste and calorie needs. 			<description>I used my Belgian waffle machine for these, although you can use any type of waffle iron as these are not true Belgian style waffles.  These were so good and did not last long at all.  I don't remember how many this made - I think about 8 full round waffles. Next time I make them, I will update the amount with more accurate info on the servings. 			<description>I invented this in my kitchen at the end of the first week of Phase 1 out of desperation for a sweet instead of savory breakfast. Enjoy plain, or with sugar free syrup, or jam. For Phase 2 I would recommend fresh fruit (like berries), and fat-free no sugar added whipped cream; or you could core and slice some apples and saute in margarine before adding the egg mixture. This is also good with some yogurt on the side - try plain with fruit infused stevia (apricot is excellent!)
