			<description>These are unbelievable  in that they have NO flour, NO oats, NO gluten, NO starches of any sort.  They are tender and must be turned carefully, but not inordinately so.  And they are delicious!  I use Lean Dessert Banana Nut Bread Protein, but use your favorite flavor of protein powder and just adjust the calories/carbs to match the protein powder you are using.  Adjust the amount of EggBeaters by the thickness of the batter.  Some protein powders are thicker than others. He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl.  Fortunately it is dairy free so it works well for my dairy allergic son.  My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking.  The batter can last in the fridge for up to 24 hours. 			<description>Boy, these are some of the best pancakes I've ever had.
They do have quite a  bit of butter in them so it's wise not to let them cook unattended. They are quite rich, light and fluffy. You don't need to grease your non-stick pan. I don't think they need that much syrup, I didn't use any butter aside from what was called for in recipe.  All 4 members in my home love them.  I made these two times in 2 weeks and froze enough for 6 meals. The recipe says you should get 24 pancakes I got 29 both times.

If it looks watery don't worry it will be fine, I was so freaked that I did something wrong. I rechecked the recipe and I didn't do anything wrong.
So I left it alone and cooked them and the pancakes turned out fantastic.

			<description>I first made these pancakes messages for my son's 4th birthday and then for the last day of kindergarten. Both times the kids loved them and ate up the pancakes. You can write on them even when they're frozen, which I think is actually easier. You can write any messages you want or draw any pictures you want. Now I make a whole bunch to freeze, take out what I need and write the message/picture right then for either breakfast, snack or lunch. The kids don't even eat them with syrup! Servings and yield are approximate since it depends on how much batter you have-I double mine and get about 60 or so pancakes.
