Power Pancake

My friend Julie was on the Body for Life diet when she gave me this recipe. It might have come from the literature in that program. This makes a pancake for one. I used the quick cooking and have never tried it with the old fashioned oats. She topped it with peanut butter for the protein. This may be used as a breakfast or as a quick snack in the middle of the day. It really tastes better than it sounds! -- posted by dogsandwoods

Buttermilk Pancakes

These were voted "best buttermilk pancake ever" at my house. They are so light and fluffy ( I hate heavy pancakes). The recipe is very similar to most, but uses 2 eggs. I also think the way they are mixed together contributes to the fluffiness. I hope you enjoy them as much as we do! -- posted by Sweet PQ?

Family Secret Pancakes!

This is the first recipe I was taught as a child. Not so much a huge secret as it is a lost way of preparation. The extra prep in this recipe involves the egg that few recipes call for. The effect is an amazingly light, pure pancake that doesn't weigh you down, and could be compared to a crepe in density, but not in actual form!!

My favorite way to prepare these is with a stack of 3 pancakes..the first with a small bit of butter...then a generous amount of JIF Peanut Butter! The second pancake has syrup only, ending with a peanut butter-syrup layer on top. Sprinkle with a bit of powdered sugar, and devour! -- posted by Mortinus

Pancakes With Jarred Baby Food - Simple and Very Tasty

It is a trick to get my kids to eat veggies, so I started using jars of baby food in pancakes to boost the nutritional value. I prefer the orange vegetables such and carrots, sweet potatoes, and corn and sweet potatoes. The pureed consistency mixes easily into the pancakes and the flavor I have found can be quite tasty. It isn't just for the kids, either. This is so flexible I have used jars of fruit too, but since the veggies are the hardest thing for me to get my kids to eat, I usually use those. You can add wheat germ for an added nutritional boost. I like to use the Log Cabin Lite syrup - there is no high fructose corn syrup and the reduced sugar does not seems to reduce the taste at all. These can be frozen or refrigerated after being made for easy make ahead breakfasts. You could also use pancake mix as your dry ingredient base, I suppose. Have fun! -- posted by Mama Wendy

These are really good cooked on a cast iron griddle, greased with a dab of bacon grease over an open fire or camp-cookstove! You can also make them at home on your favorite griddle.
Taste wonderful when served with real maple syrup or homemade blueberry sauce, along with some thick sliced bacon or breakfast sausage! -- posted by Ackman

This recipe is great for a sunday morning breakfast. And unless you are a fast cooker you don't need to pre-heat the oven untilstep 2 or 3.

P.S. happy cooking
P.S.S. 6 granny smith apples are advised but I use 7 or sometimes 8. You also don't need to use granny smith apples I just do because then it is sour and sweet. -- posted by Chef Ryley

Fuzzypugs Pear, Peach & Strawberry Pancake Bake

Delicious fall flavored pancake-bake that is light, colorful, healthy and best of all easy to make. I have made it a couple of ways. You can use just one type of fruit or more for color and flavor. This recipe works really well with Pear by itself. I would bet that an apple would be really nice by itself too. Use whatever is in season. I am really liberal with the cinnamon, so I probably use more than the 1/2 teaspoon total that I put in the recipe. This will impress any brunch guest or Christmas morning guest (think: inlaws!) I hope you enjoy this as much as we did. -- posted by fuzzypugs

French Toast

This is the best French toast recipe I have ever had. It takes a little preparation (mostly just remembering to do it the night before), but it is so worth it. Common sense would tell you that the bread would be a soggy mess in the morning, but if you handle the bread carefully, you will have the best French toast on earth.
Pancakes for One or Two

This is another recipe I found in the 1998 Taste of Home Annual Recipes. It was sent in to them by Ann Schenk of Winnett, Montana. She added two teapoons of wheat germ when the dry ingredients were mixed together, but I left it out. And they seemed to come out just fine. This recipe make enough for one, but if you make them just a bit smaller you could get enough for two. And serve eggs and sausage on the side for a much heartier breakfast or even dinner.Serve with margarine and syrup, if desired.
Crepes - Natural and Healthy

This is a modified recipe of the the original one I found on "The Simple Dollar" blog. The recipe does not use any sugar or sugar substitutes. It is probably the healthiest crepes recipe there is. For topping, I like to spread Nuttela (hazelnut spread) and thinly sliced bananas on top of it. Sometimes, to mix it up, I put cinnamon, coconut flakes, and raisins only.
I have been making it for breakfast every Saturday morning for my wife. That may be the reason she loves me so much. -- posted by slobo80

Pancakes

I developed this pancake recipe when we were short of syrup... it has its own distinct sweetness that is great with or without syrup... I love it with some whip cream and strawberries. It is my most requested recipe. It's great because I constantly have slumber parties so I mix up the dry ingredients ahead of time... add the eggs and milk and voila... done quick!
I like to weigh my ingredients...so put both measurements. Enjoy! -- posted by Pink Box
