Chicken Casserole II

This is a make ahead bake later casserole that I got from the organist at church, thank you Ruth. This needs to be refrigerated for at least 8 hours before you bake it, so the macaroni can absorb the liquid. Talk about good tasting comfort food. YUM! You can use 2 cans of any combination, of the following soups, cr. of mushroom, cr. of potato, cr. of celery, cr. of broccoli or even a can of cheddar soup is what Ruth told me. -- posted by Charlotte J

Honey and Soy Sauce Marinade

This is a lovely marinade for barbecued or fried chicken. I usually use it for chicken breasts cut into not too thin stripes which I cook on a table barbecue. Most raclette gadgets in Switzerland also include a barbecue facility. In the winter I like to invite people for a raclette and table barbecue evening and the marinated chicken stripes are always part of it. Everybody loves them! I found this marinade in a chicken cooking book and there they recommend it in particular for chicken thighs meat (bones removed). I'm sure it will be nice with whatever part of chicken you fancy. Just remember that the bigger the parts you want to fry/barbecue, the longer the meat should be in the marinade. You may even want to marinate your meat overnigt. -- posted by tigerduck

Egyptian Kebabs

As a big fan of yogurt based marinades for chicken (for example Chicken Tikka), this one immediately caught my eye. Unlike Tikka, you only marinate this one for 30-45 minutes so it doesn't require much planning ahead. I have not tried this one yet but wanted to make it public for the Zaar World Tour.
Layered Chicken Cobb Salad

This is a wonderful main coarse salad to feed 4-6 people. The dressing can be made well in advance and chilled, and will become stronger in flavor with refrigeration time. This is the perfect salad to serve at your next dinner party, not only is is the most delicious salad, it makes a beautiful presentation. If you are serving more than 4 people, I suggest to double or increase all ingredients and also the dressing. -- posted by KITTENCAL

Crab-Stuffed Chicken Breasts

Purchase the largest and thickest chicken breast you can find to make this recipe. Plan ahead the cream cheese mixture needs to chill for 2 hours before using or up to overnight. I added some Old Bay seasoning to the cream cheese mixture when I made these. This recipe can be cut in half to make 4 breasts. If desired you can sauté/cook the stuffed breasts completely in the frypan and omit the oven. Prep time includes the chilling time. -- posted by KITTENCAL

Lemon Coriander Chicken

Found the original recipe in one of those supermarket magazines. (Don't ask me why I still buy them despite the fact that I have hundreds of recipes saved in my cookbooks here waiting to try.) Easy to prepare and great results make this a winner for me. The original calls for conventional (out of the jar) ground corriander. I like to toast my seeds and coarsely grind them as it adds a nice toasty flavor and rustic look to the dish. Do what works best for you. Please note preparation time does not include 3-24 hour marinading time. -- posted by justcallmetoni

Fried Chicken With Mashed Potatoes and Gravy

Comfort food at its best--not for dieters though! We served this with brocolli but I think it would be better with green beans or another "comfort food" type of vegetable. The original recipe (Bon Appetit October 2006) used sausage in the gravy an chilies in the potatoes and gravy which we skipped. The chicken requires a 4-hour soak (I put my chicken in to soak in the morning and it was ready to make at the end of the day). This is also an easy recipe to divide or multiply depending on how many you will be feeding, however the leftover chicken freezes wonderfully for chicken salads. Order of preparing dinner is: (1) soak chicken, (2) boil potatoes and start to heat oil to fry chicken, (3) fry chicken and start gravy and finish potatoes and cook vegetables. Gravy can be made ahead and reheated before serving. -- posted by ellie_

A little pre-holiday cleaning has me tossing out stacks of cooking magazines. Rather than tearing out the recipes and creating small stacks to replace the large ones, I'm typing them up and keeping them here for safekeeping.
Chicken With Cashews

A Chinese type of Chicken with Cashews recipe. I added less peanut oil when I was stir-frying as I thought six tablespoons was a bit to much. I used chicken liquid stock instead of water to give the recipe more flavour. I use bean sprout instead bamboo shoots (personal taste) however I think you could add any vegetables you wish without dramatically altering the flavour. When I make this again I would add cashews to the wok to allow them to warm a little instead of sprinkling them at the end. The recipe said the yields is four servings but we had small servings for three people. This recipe is from 'Cooking with Love' by Friends of Karen, Inc Does not include marinating time. -- posted by Chef floWer

Garlic Chicken

This is a simple and delicious recipe for garlic chicken. Even if you are not fond of garlicky dishes, don't rule this one out. The garlic does a wonderful job of tenderizing the chicken so it nearly melts in your mouth. The secret is to make sure you use fresh garlic. If you see any green or hints of sprouting, the bulb is not fresh. I got the recipe from a newspaper article. -- posted by Lainey6605

Seasoned Oven-Fried Chicken

Not sure where I got this recipe. Uses bone-in chicken parts. You can lighten this up with less oil and butter and by removing the skin. Note- there is a 2 hour chilling time once the chicken is coated so prepare earlier in the day to account for time. I made it without chilling and it worked fine. DH found it was quite lemony so if you like lemon you'll like it. It has a lemon-tarragon flavor. -- posted by Oolala
