Sausage Casserole

This recipe is VERY easy! I got it from a college friend of mine--easy way to impress others! Prep time is minimal! It's a great meal anytime of day! It sounds like a really weird combination, but it's sooo good! Is great left-over also! I usually just use the crescent rolls that come in a a can--they taste great! -- posted by Mrs. Wisnewski

Pepper and Chorizo Sausage Frittata

Make the most of sweet, colourful peppers with this tasty one-pot dish. Stir-fry them with onion and smoky chorizo sausage then lightly set with eggs and herbs - it's brilliant for breakfast or supper!
Top tips: Dot 5 or 6 dollops of fresh goat's cheese over the cooked peppers before pouring over the eggs.
If you can take a little heat, fry some chopped red chilli with the peppers.
Make a vegetarian alternative and replace the sausage with 175g (6oz) chopped shiitake mushrooms. You will have to add a couple of tablespoons of olive oil to the pan.
The frittata makes a fantastic picnic dish in summer served cold on its own or sandwiched in crusty baguettes. -- posted by English_Rose

Penzey's Pizza Tortillas (Quesadillas)

Just got this in Penzey's fall 2008 catalog. I might suggest using a little more ground pork, like 3/4 lb (I used gr. turkey). I didn't have pizza seasoning, so I used Sharon123's Recipe #133784. I also added red pepper and sauteed the onions and pepper first. I completely forgot the olive oil, vinegar, garlic and oregano! And it still came out good. Even in the oven, the center of the tortillas were soft and messy, so be careful, and use both hands. -- posted by WI Cheesehead

Sausage Crescent Breakfast Casserole

This is a tastey breakfast casserole that can be done in under an hour! You can make it spicy or mild depending on which cheese you decide to use. Or you can mix them and choose the middle ground. For kids, I usually have to choose the mozzarella though. For adults, I sometimes add some green chiles or a seeded jalepeno, chopped very fine. But I really like heat. I also sometimes increase the garlic! -- posted by breezermom

Simple Sausage Stuffed Mushrooms

So many stuffed mushroom recipes call for mixing, chopping and pre-cooking the sausage. This one is so simple the little ones can help out. It takes just a matter of minutes to get them ready to pop in the oven. Since the sausage actually cooks in the mushroom the sausage flavor is bolder. Hope you enjoy as much as we do! -- posted by Food Goddess

Sawmill Gravy

I don’t really have a recipe, but when I make it, I make a crock pot full. It isn’t particularly good for the health-conscious, and certainly isn’t good for the waistline, but what the heck? The amounts below will make enough for about 15 people
You can do all sorts of stuff with this. Serve it over hot biscuits, cornbread, or toast (my daddy used to call it “S_ _ t on a Shingle.”) Instead of sausage, you can use ground beef or turkey, or thinly sliced beef, or ham. You can use it as a base for a pot pie, just add veggies, put it between two crusts, and bake…… -- posted by Swordbreaker

In New Jersey, every butcher makes, and smokes their own sausage, and every one's just a little bit different. It took me a while, but I've been able to find a place that will vacuum bag it, then ship it to South Carolina.

If you'll be making the Kielbasa Soup, use the chicken and beef broth. If you're not making the soup, you can just boil it in water.

Frittata Di Spaghetti (With Sausage and Mushrooms)

This is a great way to use up left-over spaghetti (or left-over pasta of any kind). I often cook extra spaghetti just so I can make this the next morning. You can use unsauced pasta as well, but I like the spaghetti just covered with red sauce. This is a wonderful brunch dish and one that many have never tried before. Have some warm red sauce (try (Recipe#350995)) to serve over and top with grated Parmigiana and a sprinkle of finely shredded fresh basil leaves. -- posted by Alan in SW Florida

Cindi's Awesome Crespelle Lasagna

If you're looking for something fast and easy to make for dinner tonight, this isn't it! But if you're looking for a lasagna to impress, this one's it. The crespelle, which are italian crepes, add a lighter fluffy texture to the lasagna, so I go lighter on the cheese than you would with traditional lasagna. If you like a less sweet sauce, cut the sugar in half. If you want it sweeter, more power too you! -- posted by LuvsSushi

Baked Sausage-Stuffed Jumbo Pasta Shells

A Canadian Living hit with the Ontario ZAARians, at our Annual Appy-fest. While this recipe actually calls for mild Italian sausge I used Bajan-seasoning called Delish-Dish in a meatball stuffing. I doubt that many ZAARians have "Bajan Delish-Dish" in their pantry. To stay true to the original recipe, therefore, I shall post the recipe as it appears in Canadian Living.. I like the recipe because of the ease with which ingredients combine to produce an interestingly flavourful filling.
Sausage Breakfast Muffins

I wanted to come up with a filling breakfast with sufficient protein that my fiance could take on the go or my boys could have before school. Going off a breakfast casserole recipe, I completely modified it to make these hearty, energy filled muffins. I am going to work on a healthier version next go around, using ground chicken.
*These freeze well.
*Could be baked as a casserole in a 9 x 9 pan. 350 F for approx 1 hour.
*Use glass, ceramic or best choice, stoneware pans. Metal pans turn the bottoms too dark. -- posted by Shannon & boys

Italian Sausage, Pepper and Potato Meal

This dish has always been a staple in my very Italian family. It is quick and easy, and great for breakfast, lunch or dinner. My grandmother used to make it for my mom when she was little, as did my mother for me and now me for my son! I usually like to serve this dish for dinner, with the links stuffed into rolls and the rest of the mixture piled on top of the links, but I have also used it for breakfast as well. Usually when I serve it for breakfast I slice the sausage into wheels.
Jimmy Dean Six Layer Breakfast Casserole

The jalapenos give this casserole a nice kick to wake you up in the morning. I found this recipe at jimmydean.com, and I must confess the directions were confusing to me but maybe because it was 5am when I made it. I put half my eggs on the bottom, fit the bread slices in the bottom of the pan, put the entire sausage mixture on top, and covered it with the rest of the egg mixture. Whatever floats your boat...I figure it's all going into the same place (your belly). Personally, I'd use less than 1 teaspoon of salt (probably 1/4 to 1/2 teaspoon), but you decide. I also found it needed to cook more than the 15 minutes the recipe listed and cooked it for closer to 30 minutes at 350. I've posted the recipe the way it was written. Let me know if you're able to decipher it better than I did. Enjoy! -- posted by AmyZoe

Tasty sausage patty recipe, from a recipe card in my files, with ingredients readily available. Substitute ground chicken or turkey for the pork if you like, and adjust the seasonings to taste. The patties are good served on toasted English muffins with a slice of cheese and a fried egg for a 'McMuffin'. Add home fries and sliced fresh tomatoes for a 'big breakfast'. Times given are estimates and do not include the one hour chilling time. -- posted by foodtvfan

Scottish Lorne Sausages: Square Breakfast Sausage!

Wherever you go in Scotland you will come across Scottish Lorne Sausage, which are square and sliced. Whether you be in a Hotel, a Guest House or a Bed and Breakfast, you will be offered a Scottish cooked breakfast, that will usually include the slices of this Scottish Lorne sausage. It is nearly always on a breakfast menu, along with bacon, egg, and "tattie" (potato) scones, and many Scots will eat it in a bread roll for lunch or maybe serve it with potatoes and vegetables for dinner. This is an easy recipe - and the sausage can be frozen in slices for ease and convenience. Prep time includes chilling time. What's in a name? It is thought that the Lorne sausage, which also goes by the names of square sausage, sliced sausage or sausage slice, was an invention of the Scottish comedian Tommy Lorne who lived from 1890 and died in 1935. He was born in Kirkintilloch near Glasgow. His birth name was Hugh Gallagher Corcoran. Tommy Lorne performed in many Scottish theatres and often performed in Glasgow and Edinburgh and was much in demand for pantomime. In his own acts he would apply white make-up and wear a short kilt, a glengarry, boots that were far too big for him and a jacket that was short. He spoke in an hilarious high pitched voice. It is thought that Lorne sausages were named after Tommy Lorne because of one of his famous catchphrase: "sausages are the boys" - he loved his sausages! He often ate a sausage sandwich between his acts. It has even been suggested that not only were Lorne sausages named after Tommy Lorne and to give people an easy to make sausage sandwich, but that Tommy Lorne was the inventor of the Lorne sausage. -- posted by French Tart

Pork Sausage and Egg Casserole

This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix. Perfect for a brunch, we also love it for supper too! -- posted by Chef Learnee

I recommend broccoli if you're going with ham but asparagus or more spinach if you're going with sausage -- posted by GoldsmithLissa

Sausage and Hash Brown Breakfast Pie

A great and hearty breakfast pie that is sure to please everyone. I've never had anyone not enjoy it or even suggest a way to make it better. You can add more bacon if you like. Sometimes the hash browns need to cook longer, so please keep that in mind.

Prep time is probably off because I make it early in the morning. Cook time should be dead on. -- posted by Nate From SoCal

Cream Cheese Rotel Dip

This recipe was brought to my grandmothers for our Christmas Eve dinner as an appetizer. The bowl was cleaned and everyone wanted the recipe. It's quick and easy and offers a twist on the original velveeta rotel dip. Dip with tortilla chips or fritos. You will love this dip!!! -- posted by ~mommyof3~
