The traditional trouchia is a specialty of Nice, where slices of it are sold and eaten cold on the street.  This is a very versatile recipe.  You can  substitute almost any green (kale, beet greens, mustard greens) serve this warm, room temperature or cold, as an appetizer or main dish, and at any meal.  It even makes a great sandwich filling.

			<description>My husband and I come from large families, many of whom do not live close by and often stay overnight.  I came up with this Breakfast Strata when I had guests over Easter weekend. I served it with Easy Gooey Caramel Rolls and fresh fruit and it was most assuredly a hit!  Everyone wanted recipes and my husband and daughters request it often. I just made the strata again this past weekend (had bread I needed to use up) and it's always such a treat. 
Quick Note: I like to split the recipe and put half in each of 2 8&amp;quot; square pyrex baking dishes. In one, I skip the cooked onions and use cheddar cheese, for those who prefer a milder flavor. In the other, I load up on the onions and use Pepper-Jack cheese (my favorite). Spinach, sun dried tomatoes with goat cheese.  Bacon, cheddar and onion.  Broccoli, ham and onion with gruyere.  2 cheese and just fresh herbs.  Sausage, cheddar and peppers.

			<description>I invented this in my kitchen at the end of the first week of Phase 1 out of desperation for a sweet instead of savory breakfast. Enjoy plain, or with sugar free syrup, or jam. For Phase 2 I would recommend fresh fruit (like berries), and fat-free no sugar added whipped cream; or you could core and slice some apples and saute in margarine before adding the egg mixture. This is also good with some yogurt on the side - try plain with fruit infused stevia (apricot is excellent!)
