Spanish Omelette (Tortilla De Patatas) (Spain)

POSTED FOR ZAAR WORLD TOUR 5. Along with paella, the ubiquitous tortilla de patatas - is perhaps one of the best-known Spanish dishes. It is impossible to find a self-respecting tapas bar that does not feature tortilla in its repertoire.
As delicious as it is versatile, this Spanish staple lends itself to countless variations according to personal taste. Some cooks mix in mushrooms, beans, spinach, and tomatoes, while others choose to omit the onion and instead cover the tortilla in tomato sauce. Others still would never dream of serving the tortilla without heaping mounds of mayonnaise. Each region, and each tapas bar, will have its own variation of the traditional tortilla. This delicious tapa can be served warm or cold. From http://www.spain-recipes.com. -- posted by UmmBinat

Basic Omelette

This is a basic omelette recipe that has several variations, Everyone has their own favorite - The proper pan is important to successful omelette making. The right size pan for 1, 2 or 3 egg omelette is about 8-inches in diameter at the base. It should ba shallow with sloping sides to make it easier to slide the omelette onto the plate.

Always prepare individual omelettes, rather than one large one , you will find each one will be lighter, fluffier and easier to handle. Multiply the recipe for as many servings as you need and use 1/2 cup of egg mixture for each 2-egg omelette and 3/4 cup for a 3-egg omelette. -- posted by Chef mariajane

Skillet Souffle

Fluffier than scrambled eggs, this souffle is just as easy to prepare and is perfect served alongside a juicy wedge of melon and a green salad.

Note -- When you make the Skillet Souffle, keep in mind that deflating is part of the natural life cycle of any souffle. Though this skillet version is sturdier than the average recipe, don't be dismayed (or apologetic) when it eventually falls.

Bakinbaby's Egg & Mushroom Breakfast

Bacon, mushrooms, red pepper and onions bring excitement to the scrambled egg. If using leftover bacon drippings isn't your thing, you might try olive oil. This has become DH's favorite breakfast. Sometimes I eat one of the pieces of bacon (while DH isn't looking), so if you're like me, plan on cooking more. Adding the cheese and bacon right before serving insures the bacon is crisp and the cheese is barely melted.
revision: 7/17/09 per kate's review: at step 5 be ready and prepared to add back in the sauted veggies when eggs are not quite done, certainly not set, but not completely runny, if you let the eggs cook too much, you'll end up with over cooked eggs, no fun!!!! Then right before serving toss/fold in the fried bacon. I'm sorry this was not completley clear in my original posting of the recipe. -- posted by BakinBaby

Corn and Green Chili Frittata (Ww 4 Points)

The green chiles you;ll find in squat little cans in the Mexican aisle of your supermarket are extremely mild, as they are usually seedless Anaheim peppers. If you prefer a little more spice with your eggs, substitue a jalapeno or two - fresh or canned - for the green chiles.

When I have company, I put out bowls of different fillings like diced bell peppers, mushrooms, red onion, etc.and I let them choose there own. Great way for kids to feel included and also get their veggies!
Light, Delicious Vegetable Egg White Omelet

This recipe is a great way to start off the day without the cholesterol or fat of a whole egg without sacrificing any of the flavor! Usually egg white omelets are really bland unless you stuff them with cheese, which cancels out the entire purpose of using egg whites. Anyway, wanting a delicious egg white omelet for breakfast one sunday morning, i whipped this up and was astounded with its amazing flavor! Using a lot of veggies kept me full until lunch, and the protein in the egg whites kept me going all day. Enjoy!
This recipe can be easily altered by adding meat or different vegetables, i am a vegetarian so i didn't put any meat in. Also, change the cheeses to whatever you like, i used mozerella to keep the flavor mild.
Note: Braggs liquid aminos is a healthy soy sauce substitute that adds protein and flavor to any desired dish. It can be found at most regular grocery stores and if not, at any health food store. If you don't have braggs, use soy sauce to taste on top of omelet. It sounds weird, but adds delicious flavor to the omelet! -- posted by Chef #1290167

Italian Sausage, Pepper and Potato Meal

This dish has always been a staple in my very Italian family. It is quick and easy, and great for breakfast, lunch or dinner. My grandmother used to make it for my mom when she was little, as did my mother for me and now me for my son! I usually like to serve this dish for dinner, with the links stuffed into rolls and the rest of the mixture piled on top of the links, but I have also used it for breakfast as well. Usually when I serve it for breakfast I slice the sausage into wheels. I hope you enjoy it as much as my family has. -- posted by rubygirl

Crab and Havarti Omelet

Skagit Bay Hideaway, La Conner, Washington. One of the most iconic foods of the Northwest, Dungeness crab is caught along the ocean coast, in the Puget Sound, and in numerous bays such as Skagit Bay. Here the sweet crabmeat is paired with mushrooms, tomato, Havarti, and green onion for a savory breakfast dish. At the Skagit Bay Hideaway, they often garnish the omelet with nasturtium flowers from the garden.

French Omelette

Julia Child urged a nation to put down their beaters, and pick up a whisk!! When Julia Child first started teaching the fundamentals of French cooking, eveyone tended to use electric beaters for basic blending and mixing, Then she introduced them to the whisk. Child used whisks in numerous recipes, including sauces, creams and soups, as well as for beating eggs. She encouraged cooks to get a variety of sizes, including a large balloon whisk for beating egg whites. Child featured a whisk during the pilot to her public television show The French Chef. She used it to make an omelette. Her method for unmolding the eggs from the pan may seem complicated, but it produces a nicely folded omlette ideal for filling. -- posted by Chef mariajane

Southwestern Omelet(Flat Belly Diet)

A simple, but really delicious omelet, full of veggies, it satisfies the craving for a savory dish. You know how chicken soup surprises you because the simple mix of celery, onion and carrot is so delicious? This omelet does the same thing for me. A half an onion and half a red pepper makes a huge omelet. If you are having a hard time getting full, that's the low calorie, yummy option. If you're not so hungry, cut the onion and pepper to 1/4 each, or if you decide to add some of the following vegetables.

Other vegetable options are as follows: sauteed mushrooms, jalapeno pepper ( if you want it spicier), drained green chilies, drained rotel tomatoes, or advocado on top.

It's pretty versatile, obviously, as omelets are. The thing you can't leave out if you're doing the Flat Belly Diet is the black olives. Another option for the Flat belly diet is to use 5 olives and a couple of slices(1/8 cup) of advocado. If you don't like the black olives, substitute a full 1/4 cup of advocado. I would put the advocado on top, not in the omelet. The calories are going to be about the same.
Another option for making this omelet that is really fast is to add your raw, (not sauteed) vegetables after step 2. I like it just as well that way. The vegetables are kind of like a pico de gallo in your omelet because they are cruchy and raw when you do that, but I like them that way just as well. Then the omelet takes less than 5 minutes to cook. -- posted by Heartsong

Tomato and Spinach Frittata

There are lots of Spinach, Tomato recipes but when I checked this one is a little different. I threw it together and liked the result. I say it is for 2 but that is if it is served with a salad and a roll. Hope you enjoy it. I like lite Havarti but use your favorite cheese. The hot spice is optional but it does give some pep to the recipe. An 8" pie plate works but it needs to have at least 1 1/2 " sides. I used an 8" x 6" casserole dish. I used adobo chili pepper for my "Hot" spice. -- posted by Bergy

Leek and Pepper Omelette

I found this recipe in Janet Wright's book "The top 100 health tips", published by Lifetime Distributers, Castle Hill, Australia.
Janet says "Eating the right meal within an hour or two after excercise could make the biggest difference you've noticed yet. That's the time when your body needs - and most effectively uses - food to turn your effort into stronger muscles and increased energy levels. It's also when you burn fat most effectively. Eggs are a concentrated source of muscle-building amino acids and other body-building nutrients. They're also rich in vitamin K, which helps to heal bruises and other minor sports injuries. This vitamin works by ensuring that blood is able to clot normally, so it could also reduce the danger of blood clots in arteries."
The original recipe called for groundnut oil, but I think butter would work just fine - or any other oil you have on hand.
This would make a nice breakfast for an extremely hungry person, or could be shared among a few people. If you're just making it for yourself, you might want to halve it.
I haven't tried this recipe yet. -- posted by TALIA #3

Ham and Cheese Brunch Squares

I got this recipe from a friend....it is a Pampered Chef recipe. It is delicious! Just a little bit of work - especially if you want to get up and make it in the morning. I don't move that fast in the morning so I usually make this for us for dinner in the evening and cut up and freeze the leftovers. Pampered Chef says that you can sub the ham with 3/4 lb bulk sausage (which I did with chicken sausage!) or 1 lb bacon that is cooked, drained and crumbled. We also used the light, flavored cream cheese. I used a carton of egg substitute and added four eggs. -- posted by Sky Hostess

A real treat! I was looking for recipes this morning to use Eggnog in, and the majority of them were for things like French toast. I went to the kitchen to make scrambled eggs and used eggnog rather than milk. Turned out AMAZING and will be a regular seasonal treat in my house. Actually, they ended up being far fluffier than my normal scrambled eggs, too. Try it!
I was experimenting with ingredients I had leftover from making spinach quiche and decided to try making a yummy omelet with some of them. I love pepper so I chose to increase the amount of it in my omelet. I also used frozen spinach. There's no need to thaw it. I used a knife to shave off what I needed. Cheese is optional because this omelet has great flavor without it and is much healthier.
