			<title>Is It Frittata or is It Quiche</title>

			<description>This came about when wanting to make a light quick easy tea for the DM and myself.  I started out thinking mushroom frittata but then there was 1 lonely tortilla there and I decided it need to be used so the following recipe was created.  I photographed it step by step (after cooking up mushrooms) and is in this thread http://www.recipezaar.com/bb/viewtopic.zsp?t=289609.  I didn't accurately measure the ingredients so they are approximate as is the timing.  I served with a simple salad.  You could cut into small wedges and serve as you would a pizza. I used goat feta as I have a lactose intolerance and also gluten free flour mix as I am gluten intolerant - you can use ordinary, it doesn't seem to make any difference (I've had them both ways pre-diagnosis!) 			<description>I need to use up some potatoes and already cooked bacon, and I found this recipe in 1990 Hometown Collection America's Best Recipes.  It is from Charlotte Givens and was originally in The Delaware Heritage Cookbook.  The recipe didn't look that exciting to me, but it I was pleasantly surprised at how yummy it was!  I let the potatoes cook in the pan and didn't cook them in advance.  I threw in some red onion (more like a cup--not 2 tablespoons) and green and yellow peppers for color/flavor (probably a cup as well).  I used a cup of cheddar cheese and threw the bacon in right before I melted the cheese.  It's probably the bacon grease that makes it so tasty. This has become DH's favorite breakfast. Sometimes I eat one of the pieces of bacon (while DH isn't looking), so if you're like me, plan on cooking more. Adding the cheese and bacon right before serving insures the bacon is crisp and the cheese is barely melted.
revision: 7/17/09 per kate's review: at step 5 be ready and prepared to add back in the sauted veggies when eggs are not quite done, certainly not set, but not completely runny, if you let the eggs cook too much, you'll end up with over cooked eggs, no fun!!!! Then right before serving toss/fold in the fried bacon. Usually egg white omelets  are really bland unless you stuff them with cheese, which cancels out the entire purpose of using egg whites. Anyway, wanting a delicious egg white omelet for breakfast one sunday morning, i whipped this up and was astounded with its amazing flavor! Using a lot of veggies kept me full until lunch, and the protein in the egg whites kept me going all day. Enjoy!
 This recipe can be easily altered by adding meat or different vegetables, i am a vegetarian so i didn't put any meat in. Also, change the cheeses to whatever you like, i used mozerella to keep the flavor mild.
Note: Braggs liquid aminos is a  healthy soy sauce substitute that adds protein and flavor to any desired dish. It can be found at most regular grocery stores and if not, at any health food store. If you don't have braggs, use soy sauce to taste on top of omelet. Janet says &amp;quot;Eating the right meal within an hour or two after excercise could make the biggest difference you've noticed yet. That's the time when your body needs - and most effectively uses - food to turn your effort into stronger muscles and increased energy levels. It's also when you burn fat most effectively. Eggs are a concentrated source of muscle-building amino acids and other body-building nutrients. They're also rich in vitamin K, which helps to heal bruises and other minor sports injuries. This vitamin works by ensuring that blood is able to clot normally, so it could also reduce the danger of blood clots in arteries.&amp;quot;
The original recipe called for groundnut oil, but I think butter would work just fine - or any other oil you have on hand.
This would make a nice breakfast for an extremely hungry person, or could be shared among a few people. If you're just making it for yourself, you might want to halve it.

Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands.
