I didn't need to change anything but if I don't have Jack Daniel's I will sub Southern Comfort with good results.  You could also add whole cloves to the outside of the ham to intensify the flavour. 			<description>This looked so fab on his Christmas TV special. I am making it for christmas lunch this year, and a few other of the recipes provided. Cannot give a guarantee that it will be as brilliant as it seems, but fingers crossed it is.

I'll post the recipe for the stuffing too, but I guess you can use any favourite recipes for stuffing you like if you want to.

Make the butter and apply the night before cooking. 

The amount of butter required will depend on the size of the bird. For a 6 kilo turkey, around 150g-200g is used.

approx 30 minutes per kilo on 400 plus 20 minutes at the end.

As the years went by, I learned to love chicken any way you fix it. I think this is the best fried chicken recipe I've ever had. But naturally I'm prejudiced !

			<description>I went hunting recently for a tortiere recipe, this is an amalgamation of several recipes and my personal preferences to boot.  And to add to the debate of what to serve with tortiere?  My family likes HP sauce with theirs.

For the pastry you need a double-crust pie dough, chilled for an hour.  I usually make the full block of shortening, and add an egg and a tablespoon of vinegar to my water, it makes an awesome crust.  Even though I am now making dough enough for 3 double-crust pies that way. 			<description>An old-fashioned treat, this is a fabulous way to use up left over ham, although I have also put some freshly cooked ham aside especially for this when I have baked a ham for Christmas, Easter or another special occasion. The ham is finely minced and mixed through with old-fashioned spices and butter, and it keeps for several weeks in a cool place. Another name for this recipe is Potted Meat, and it was VERY popular in Victorian times, although recipes for potted meats (preserved under butter) goes back even further than that historically. Wonderful in sandwiches for the teatime table or for picnics, lunch boxes and festive buffets. This is an adapted recipe from Mrs Beetons Book of Household Management, where she suggests that this is a nice addition for the Breakfast or Luncheon table. Serve with sliced breads of all types, oatcakes, toast, bread rolls, and crackers or with salad, chutneys, mustard and pickles.  NB: Use a good cooked ham on the bone for this recipe: the sort carved by hand at the deli and old-fashioned butchers. I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. 			<description>I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like.
