			<title>Pineapple and Coriander Salsa</title>

			<description>This pineapple salsa is ideal for summer barbecues. Serve it as a dip with white corn chips, on top of grilled fish, throughout a salad of prawns or along side any chicken dish. The best time to make this is about 1/3rd of the way into pineapple season as that is when they are at their sweetest and luckily also when summer is in full swing.

In 1896 Oscar Tschirky, Maitre d'Hotel made this salad which contained apples. chicken, celery &amp;amp; mayonnaise - later the walnuts were added. Well, I am taking poetic license and making some more changes to it. It has always been served on a bed of lettuce. Based loosely on a recipe provided by The National Chicken Council. You can make this with a store-bought rotisserie chicken(if you do skip the first four steps.) 			<title>The Raffles Hotel Original Singapore Gin Sling Cocktail</title>

			<description>The Singapore Sling is one of those wonderful drinks that we probably have all heard of, but perhaps have never had. And because this recipe is often incorrectly recorded in most recipe books, even if you've think you've had it, you probably haven't.

One of the key, and often overlooked ingredients in this drink is Benedictine. While the resulting flavour is not overly predominate, it does add a certain taste profile that would be totally missing without this secret ingredient.

None dispute that the Singapore Sling was originally created by Mr. Ngiam Tong Boon for the Raffles Hotel in Singapore. However that is where the agreements end. The exact date is in question, with some people claiming it was in 1915, some 1913, while the hotel itself claims that it was created sometime prior to 1910. There is also plenty of disagreement as to how closely the current version of this drink that is served at Raffles is to what was originally served. Apparently the original recipe was lost and forgotten sometime in the 1930's, and the drink that they currently serve at the hotel's Long Bar (see recipe below) is based on memories of former bartenders, and some written notes that they were able to discover. Whatever the truth may be, this &amp;quot;iconic&amp;quot; drink is still enjoyed today, as much as it was back in the early 20th century! When I moved west I had to plan a buffet so I decided to carve a watermelon and asked some of my volunteers to make fruit salad so I could continue filling the watermelon basket with fruit throughout the evening.  Well, I got everything but what I thought!  I got jello molds, towering quivering things with berries and cool whip all over them; I got a berry and mayonaise and brown sugar concoction, and absolutely nothing I could fill my watermelon with.  One of the gals said I should have asked for fresh fruit cut up and on a plate.  duh.  Now I know.  Honestly, I never saw such amazing creations.  They were all eaten up and once the watermelon balls were gone I just tossed my carved melon. (Just another idea for dressing this fresh fruit salad up with frills!) This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with cr&amp;egrave;me fraiche or vanilla yoghurt, but its also wonderful when served naked, the salad that is, not me!
