Prep time is an estimation and cook time is 8 minutes per batch. 			<description>This recipe came about as I searched for a recipe for my future sister-in-law's Hawaiian-themed bridal shower. I found several recipes that sounded good, but not quite right, so I combined and modified them to make this one. This is a very moist cake that is somewhat Twinkie-like in flavor (if Twinkies had coconut!). The fruit is pulverized and while it adds to the flavor of the cake, you really can't pinpoint that there's fruit in it. I winged the frosting recipe, and it came out good. This makes a thick and custardy frosting, and the fruit is more perceptable here. If you prefer a lighter and fluffier frosting, add in more Cool Whip. So I found two recipes and combined them to make what I wanted.  (They are Cherry Pineapple Bars and Cherry Macaroon Bars.)  I omitted the cherries (marashino - yuck!), and already reduced the sugar to half, since most recipes have too much sugar.  It was just right. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other &amp;quot;Hawaiian&amp;quot; treats.  I also use valtrompia bread tubes in different shapes and then slice.  The slices look so pretty on a plate.  If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. It is recommended that you use Bacardi rum as it is from Puerto Rico as well (we visited the distilllery that same day). I did not include the freezing time.
