Scottish Cream Crowdie With Raspberries

This is a name that isn't really known on these shores, although there may be a small group or two of people of Scottish descent who use it. It is an Anglicized version of an old Gaelic (Scottish) word for curd. A crowdie was a porridge (or pudding) and was usually eaten for breakfast. This version is one that was used on special occasions at harvest time. Although a crowdie doesn't traditionally include fruit, it, like any breakfast cereal, is certainly lifted to another level when it is included. Adapted from King Arthur flour. -- posted by Sharon123

Nif's Grandpa's Baked Granola

When I was a little girl, my Grandma would make batches of this for my Grandpa. It filled her house with a wonderful aroma and tasted terrific. She would store it in large glass Mason jars when it cooled. This is a half batch of what she used to make and my Sister makes this amount fresh every week. You can eat this as regular granola with milk or sprinkle on yogourt or ice cream. Thanks Grandma!
Pebble Beach Granola

My friend's hubby goes to Pebble Beach to play golf once in a while. She really loved the granola the restaurant served and asked for the recipe. To her surprise, they sent her that recipe and it is really good. You could add dried cranberries or raisins if you wanted.
Lower Fat Cinnamon Granola

This recipe will probably not rate as "low fat" because of all the nuts, but they're a healthy source of fat. In an effort to reduce the unhealthy fat, there is a minimal amount of butter in the entire recipe. It makes for a dry granola which is especially good for topping yogurt or as the topping for a fruit "cobbler". Feel free to swap out different fruits and nuts to suit your tastes. Enjoy! -- posted by QOU4LIFE

Creamy Grits (Rice Cooker)

I first tasted grits as an adult and was underwhelmed. But I really started to enjoy them with added ingredients, so I started thinking of how to improve them for breakfast. I realized that I had also disliked oatmeal made with water, so taking a cue from my mother, I prepared them with milk. I really liked the results, but not the cooking of them. So I threw everything into the rice cooker - yummy grits with no fuss. This recipe can be doubled readily. -- posted by duonyte

Malt-O-Meal Cake

This is an adaptation of "Semolina cake soaked with lemon syrup" from "A Baker's Tour" cookbook. The semolina cake was originally from Greece & called "Revani". When I saw you could substitute the semolina for cream of wheat, I figured my malt-o-meal would work just as well. I had maple brown sugar malt-o-meal & we loved it so much, I don't think I will ever be able to make it any other way. If you don't have that kind of malt-o-meal, I would imagine you can incorporate those flavors in the syrup that is drizzled on top. This cake was gone in 2 hours. We really liked it & I hope you will too. -- posted by Feej

Brown Rice Louise

A Dom DeLuise recipe. He says this makes a healthy, filling and delicious breakfast or lunch. . .or a great side dish at dinner time. You may use instant brown rice, but make sure you follow the instructions on the box (as it may use more or less water and will cook much more quickly). -- posted by JanuaryBride

The one that sits in your cabinet til next Thanksgiving, when you start the whole vicious cycle again? This is a great recipe to use it up!
Costco Clone Granola

I tried Costco's granola the other day, and is it EVER good! Now, I'm not saying this recipe is an exact clone of Costco's, but it's the best I found. Add or subtract ingredients according to your taste - you can use less sugar if you like, increase the amount of wheat germ, add flax seeds, sesame seeds, pumpkin seeds, other dried fruit or nuts - it's perfect for experimenting.

Pumpkin Pie Steel Cut Oats/Oatmeal for Slow Cooker

Healthy Pumpkin Oatmeal (For One)

This is a tasty concoction I came up one morning. I can't tolerate too much oatmeal, so the pumpkin, flaxseed, pumpkin seed kernels, and nuts really fill out this dish. Substitute other nuts as you wish. Feel free to top with vanilla yogurt--I just like plain because of the flavor contrast.
Summer Camp Gorp

I used to work in the kitchen of a summer camp back in the day and we would always make this recipe for the kids at snack time and set some out for breakfast. During the breakfast hours I would see some kids pour milk over it and have it as a kind of makeshift cereal. Of course we would make this in tremendous quantities so I've had to do some math and lessen the ingredient amounts needed. So just a quick tip: if you decide to double this recipe, please use 3 large eggs instead of 4 small eggs. Also keep an eye on the oats as they're cooking, as all ovens are different, so they don't burn. -- posted by NapalmFairy

Mom's Simple Granola

My Mom literally makes this granola every other day. It barely makes it off the cookie sheet before it is gone. Great as a cereal with milk, as a snack, as a topping to yogurt, OR dare I say, a topping to create fruit crisp. I like to make mine with milk chocolate chips or dried cranberries, but you can add any extras you like! -- posted by Hadice

Apricot-Walnut Oatmeal

My husband and I eat this every morning M-F. The oatmeal is low sodium, low sugar, high fiber. The apricots are high Vit A (beta carotene), the walnuts are high Vit E. Without honey, it's quite bland. Honey, I feel, is a better choice than sugar because it is antiseptic and is thought to help with allergies, from which my DH does suffer. -- posted by DonitaK

Peanut Butter Granola

Here's a healthy granola that doesn't have a lot of oil, but has a lot of good-for-you ingredients in it. It's good sprinkled over vanilla yogurt or with milk -- or out of hand as I walk through the kitchen! I bake it at 325 for about 40 minutes, but my oven is going wonky, so I put the recipes original instructions here. You can substitute orange or cranberry juice for the apple juice. I've used almond butter instead of peanut and it turned out great. My picture shows goji berries and dried blueberries instead of raisins. -- posted by wife2abadge
