Cocomacadana Bread

A couple of nice wee twists on the good ol' banana bread recipe. My personal preference is to chop the macadamias into big chunks because that and the toasted coconut add lovely texture and flavour to the bread. Serve a la Two Fat Ladies, i.e. slathered with lots of butta. -- posted by Mille® ™

Banana Wontons with Coconut Sauce

Wontons filled with banana and cinnamon, fried and served with a coconut-y sauce. Lower fat and sugar version of a recipe I've wanted to try for a while. The banana and sweetened coconut give these plenty of sweetness for me, but you can add 2 T sugar to the banana and 1/4 to 1/2 cup sugar to the sauce if you like. Nice snack or dessert. This made just over a dozen wontons, though my bananas were on the small side so I'm guessing it would make 16 with larger bananas. -- posted by yogi

Banana Coconut Cookie Bars

Coco Loco Banana Daiquiri Bread

A moist, luscious banana bread with a touch of coconutty Malibu rum and a sprinkling of shredded coconut within! The original recipe is from the Sugar In The Raw website, but I changed it to add the Malibu rum, shredded coconut and allspice. As always, be sure that the bananas are REALLY ripe - the skins almost need to be black - and do not overmix the batter. -- posted by EdsGirlAngie

Banana Faux-lada

I came up with this when I wanted to use up a couple of ripe bananas and I was in the mood for a Colada type drink. I didn't want to use cream of coconut or coconut milk, so this is the result. It still has the same sort of taste, but is much lighter.
Whole Grain Banana Coconut Bread

While this site already has numerous recipes for banana bread with a coconut theme, this one is unique in its emphasis on a whole grain flour base. The coconut flavor is subtle-- if you like a strong coconut flavor, up the amount of coconut extract, and include the optional fresh coconut. As with many of my recipes, this one calls for ingredients that are "nonstandard" (i.e., weird!...the province of health nut fanatics!), but go out on a limb and try it--your taste buds won't be disappointed. -- posted by Heather U.

Tropical Coconut and Banana Shrimp

A light dish that is wonderful for summertime or for dreaming about being at the shore. It blends the flavors of coconut, pineapple, and banana that complement each other so well. I use cooked tail-off shrimp and canned pineapple as it makes the preparation much shorter -- posted by Babushka

From "The Fitness Kitchen" by Shelly Sinton and inspired by Sally Schneider's recipe in "A New Way to Cook." Like a faux ice cream that tastes sublime without the heavy cream and sugar. Need frozen banana slices so need about 1 hour ahead of time. Finished dessert can be frozen in an airtight container and thawed for 30 minutes before serving to soften. -- posted by Oolala

It is good just plain, or it can be embellished with cream cheese or butter. It freezes well. -- posted by evelyn/athens

Baked Bananas With Tamarind Sauce

"Jerk Barbecue from Jamaica" by Helen Willinsky, neat little book jam packed with interesting reading. This dish serves a dual purpose; as a dessert with ice cream or as a side for meats or fish. I love the flavor of tamarind and there's no need to say that bananas are a wonderful fruit. -- posted by Manami

Is this healthy? Maybe and maybe not. Beware! This is like eating dessert. All amounts are to taste.
Oatmeal from the Tropics

This is a very yummy oatmeal I made up this morning.:) Mmm...a great reminder that summer is on it's way when when it's chilly in the spring!

This is more for people like me that need a lot of calories. However, you can easily reduce the calories by ommitting the coconut oil and using regular milk or water. Not that it's as yummy then.;)

Time does not include soaking since that is optional. -- posted by Missmagill

Banana Colada (Non-Dairy Mocktail)

A luscious-looking drink for all you coconut lovers out there (like me!) who want something smooth and creamy, but don't want or can't have alcohol or dairy. I found this over at the World's Healthiest Foods site while browsing their recipe collection. This variation on the more traditional pina colada recipe is a good cure any tropical cravings you might have! You'll want to make sure to use ripe bananas for this recipe, as it will provide more flavor and sweetness that way. Also, make sure to use only enough liquid to keep the blender going. NOTE: Cook time is freezing time for the bananas. If you're like me and usually have leftover ripe bananas already in the freezer waiting to be used, this recipe is a snap to put together. -- posted by Lynne the Pirate Queen

Hawaiian Tea Bread

I love this bread. It's so moist and versatile. I make it for breakfast, brunch, tea parties, and even desert. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other "Hawaiian" treats. I also use valtrompia bread tubes in different shapes and then slice. The slices look so pretty on a plate. If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. I learned this recipe when I used to be a consultant for Pampered Chef. -- posted by JeanieK

Pineapple, Banana and Coconut Smoothie

I made this smoothie, trying to copy a store-bought kind and this is so much better! The fresh pineapple gives it such a light, fresh flavour- it's just not the same with canned pineapple.
If any of this smoothie makes it to the fridge, you may like to water it down with some pineapple juice as the coconut milk thickens as it cools. -- posted by Shuzbud
