			<description>I found these so tasty that I didn't even bother putting syrup on them... Just ate them with my fingers straight off the griddle! I used Pamela's Ultimate Baking and Pancake Mix, so the measurements are for that particular product. You may need to adjust the measurements slightly if you use a wheat-based pancake mix or a different brand of gluten-free pancake mix. Just remember that you're basically following the instructions on the package, but adding shredded coconut and replacing the milk or water with coconut milk. You are also eliminating any additional oils the recipe on the box/bag might call for, since the coconut milk provides enough fat. 			<description>Ok, fine, I am a cheesecake snob. The rich, dense, smooth &amp;amp; unctuous cheesecakes (no flour please) with shortbread crusts are my favorites (no greasy graham cracker). This cake developed for Easter dinner - I yearned for coconut but did not want to disrupt the smoooth texture of cheesecake - it's &amp;quot;sine qua non&amp;quot;.  Family insisted I post ASAP to keep recipe intact (even though cake is gone - before it could fully develop its flavor!). Recipe is truly easy - I believe this is much easier than flour-based cakes. Hardest thing is making the crust (which isn't that tough)!

You'll want to make sure to use ripe bananas for this recipe, as it will provide more flavor and sweetness that way. Also, make sure to use only enough liquid to keep the blender going. NOTE: Cook time is freezing time for the bananas. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other &amp;quot;Hawaiian&amp;quot; treats.  I also use valtrompia bread tubes in different shapes and then slice.  The slices look so pretty on a plate.  If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. 			<description>We're in love with Tom Douglas' Coconut Cream Pie from Dahlia Bakery here in Seattle, but at $35 a pie plus a $5 deposit for the plate--I knew I had to come up with my own.  I watched a demo of his on the local public television website, but still felt I needed to add my own touch.  I'm proud to say it's a winner!  Take that, Mr. Douglas. . . . 

One note:  I would highly recommend you follow the instructions for a great pie crust below, for optimal crispiness and flavor.  Otherwise, you can roll out a store-bought dough, and just before rolling it out, sprinkle the coconut on top and roll it in.  Will be more susceptible to burning, but should be okay if you watch it close.  I always make a big batch of my All Butter Pie Pastry, recipe #239831, and keep it in the freezer for easy prep.
