Pasta With Fresh Fruits and Yogurt

I know it sounds strange but, this combination is just right. It's low in calories and can be served as a dessert or lunch. When I plate this I separate the fruits around the pasta on the platter in triangular shapes. -- posted by Smurfetta Chef #427781

Yogurt and Coconut Fruit Salad

I made this up yesterday at the grocery store. Alltogether it was about $17, and because there is no actual sugar, it makes you feel good. It was worth every penny. I could have eaten a pound of it. -- posted by acedogcottoncat

Cantaloupe Pie Ala Texas and Pacific

Recipe courtesy of: Dinner in the Diner - Great Railroad Recipes - T&P Railway was originally chartered by Congress in 1871 to establish rail service from Texas to San Diego. This pie was a signature dessert in their first class dining car. DH and I are avid railfans and his huge collection of models and memorabilia is all T&P badged. The original, ornate station in south Fort Worth was recently refurbished and sold as loft condominiums http://www.texasandpacificlofts.com - This has nothing to do with the recipe of course but is where we dream of living someday (after everyone else moves out and we have the whole building to ourselves, of course ;-)). I will make cantaloupe pies as I listen for the steam engines to come puffing up the tracks; a long wait for sure but hey, it is *my* dream! -- posted by SusieQusie

Cantaloupe-Lime-Granita

Not overly sweet and lime, mint and white wine (Pino Grigio or a very dry and fruity white wine) give this Granita a summerly freshness. The sweetness of a ripe cantaloupe melon is often enough, so that you don't need to add more sugar. I like the cantaloupe not too ripe with a still lightly green colored flesh. In this stage the cantaloupe has some pear flavors and a sweetness of honey. This goes well together with lime and a dry white wine. The mint or peppermint add just a hint here. I prepare a Granita often one day in advance and mix it with a fork from time to time. Served in chilled glasses or a freezed half melon it is a wonderful dessert on a hot summer day. -- posted by Thorsten

Watermelon Sorbet

This refreshing guilt-free sorbet is perfect for a hot summers day. I found it fairly easy to make for one of my first attempts at a sorbet because it only requires you to break up the mixture twice instead of up to four times like in most other sorbet recipes. You can REALLY taste the watermelon in this delicious icy treat! Can also be made vegan by emitting egg whites but it will just be a little trickier to scoop. -- posted by Brittney_xo

Grilled Watermelon

This is something you need to try (as a side dish, dessert or incorporated into a salad or salsa). You will be surprised to taste that the watermelon is not quite as sweet as you'd think and it's more "meaty". I first had it in Sweden as a side dish and came home looking for the recipe! You can easily turn this recipe into a grilled watermelon salad by serving each wedge on a bed of baby lettuces or arugula, drizzled with a raspberry vinaigrette dressing then sprinkled with a little crumbled feta, blue, or chèvre cheese. Cooking time includes the "resting time" for the watermelon prior to grilling. -- posted by JanuaryBride

Agua Fresca

Very refreshing drink, very easy to make. It works just as well with Cantaloupe or Honey Dew melons. I've made this recipe with many different types of melon with great results. The grocery store I use has a yearly melon sale in the summer. You can try and buy several types of melons that you normally couldn't get in this area of Wisconsin. The Santa Claus melon has a very mild flavor and light color. I like to use my LaLane juicer. -- posted by Jess4Freedom

Watermelon Ice

Really pretty and sounds refreshing. Haven't yet tried. Cleaning out my cookbook cabinet for a garage sale and posting a few recipes I'd still like to try.
Perhaps garnish with a bit of fresh mint. Comes from a book called "Thai - the Essence of Asian Cooking". You can do this in an ice cream maker too. Prep time is freezing time without the ice cream maker. -- posted by charlie #5

Watermelon and Berry Soup

This is a wonderful, easy recipe. Dairy free, no cook, quick to make! Perfect for entertaining in the summer. I "adjusted" the original of this recipe which came from "Vegetarian Cooking for Everyone", a fabulous cookbook by Deborah Madison which won Julia Child and James Beard awards (I'm not vegetarian, it's just a great book!). I always keep Costco's 3 Berry Mix in my freezer. I use these frozen berries, but use fresh if you prefer. I like the texture the thawing berry's have in the soup as well as the unexpected chill they add to each bite. This is really an easy recipe to adapt, be creative, go wild! -- posted by Mrs Goodall

Cardamom-Flavored Fruit Salad (Salatat Al-Fawaakih)

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented. -- posted by Engrossed

Peachy Fresh Fruit Salad With a Flourish of Angelica and Mint!

This was the first thing I was taught to make at secondary school in Domestic Science! We were all taught to make basic lemon syrup for the fruit salad, a great classic and a standard recipe that I have never forgotten! However, here I have deviated a little and have taken advantage of some excellent local peach syrup instead of the homemade lemon syrup I usually make; and I have garnished the salad with mint and angelica from my herb garden. I have suggested certain fruits to use, but the beauty of a fresh fruit salad is that you can always rustle one up with whatever you have locally and to hand. Serve with fresh pouring cream for a real treat! -- posted by French Tart
