Being in a dilema one day with some sea bass that I needed to cook, but would not be eating the same day, I steamed it with some thyme, refrigerated it and then used it the next day in this recipe in place of the raw fish and just feel in love with the cold salad! In as much as we love sushi and sashimi, I will try it with the raw fish as well. I will also try it with cooked shrimp, scallops, lobster, etc. It has so many possibilites and is so low-cal, with an Oriental flair in the dressing. 			<description>Sure to make your picnic a LOT more interesting or the Hempstead, TX Watermelon Festival! Here are three ways to achieve this dastardly deed. I prefer rum over vodka for this but champagne is nice too especially with the open and honest method. UPDATE: I tried this recently with Vanilla Vodka and OMG! It was FAB! 

BUT FIRST- Rinse the whole melon to remove any dirt or icky stuff that might be on the skin- seen or unseen! ewwww!!!! I never used to do this part until I saw a large dog &amp;quot;marking&amp;quot; the watermelons! EWWWWWWW! NOW I wash them VERY WELL! ugh! 

Now all that is left to do is to choose which method you would like to use! 

Cooking time does not include the hours of cooling.

			<description>An appetiser and aperitif all in one sunny melon bowl - I use the local Pineau des Charentes to fill up these charentais melon starters, but white port, fino sherry or any fortified wine would be just as good. Charentais melons are grown mainly in SW France and Spain and have a smooth pale green to creamy yellow skin. The very juicy flesh is deep orange in colour and it is one of the best dessert melons; they are also great in fruit salads, as well as being used as a refreshing starter course - as in this recipe. Preparation time includes the 4 hours to chill prior to serving them.
