Red, White and Blueberry Tart

This recipe is from Splenda.com. It is very easy to make and delicious. A great summertime treat for fresh berries and the presentation is so elegant. This would be a great tart for the 4th of July. The recipe calls for a premade crust. I used Flaky Pie Crust Recipe #20984 by Teresa M. -- posted by PaulaG

Another Nigella Lawson recipe, this one from How to be a Domestic Goddess. If you love the flavour of Orange Lime Ice-cream #71438 you will love this too.
Low Fat Blueberry Cheesecake Pie

My brother is a huge cheesecake fan and often gets his from Junior's in Brooklyn. With his new years resolution to shed some pounds I thought this recipe might be a great way for him to have his favorite dessert without derailing his efforts. Knowing that others are also making an effort to lighten up, I thought I would post it here as well. I have not tried this yet, but this includes my minor modifications.
Bill Corbett's Blueberry Tart

A recipe I came across on Donatella's Dish on Yahoo! Food. It sounds intriguing and I'd like to try it. I am a bit puzzled by the addition of egg yolks in the pastry.
Donatella says this is a delicious tart, not at all gummy and quite tart. The crust is baked before the filling is poured and chilled. According to her it is a big hit.
I've guessed the times but there is a fair bit of resting and cooling. -- posted by Sherrie-pie

Fluffy Blueberry Cream Cheese Dessert (No-Bake)

This can also be made in a 10-inch deep-dish pie plate, plan ahead there is a 4 hour chilling time for this dessert --- I make this using my recipe#159429 that is completely cooled, but canned pie filling will do fine, if you prefer a thicker layer of blueberry filling then use two cans pie filling, one for the top of the crust and one for the top of the dessert :) -- posted by KITTENCAL

Maine Wild Blueberry Pie

This pie is the perfect end to a summer meal! I adapted it slightly from a recipe in Coastal New England Summertime Cooking by Sherri Eldridge. I prefer it the second day, after the flavors have had time to meld together. Yum! Cook time includes time for blueberry mixture to sit. You can also dot the top with a small amount of margarine or butter before adding the second crust for a slightly richer texture and flavor. -- posted by Kree

Yogurt cheese is a wonderful way to reduce calories and fat. This recipe makes a delicious and creamy low-fat dessert. I used recipe #145891 for the tart crust. The longest amount of time is in straining the yogurt to make the cheese. In place of the vanilla yogurt, you can use a 32 container of plain lowfat yogurt and add 1 teaspoon vanilla. The powdered sugar in the recipe might need to be increased to 1/3 cup depending on taste. -- posted by PaulaG

Best-Of-Show Cherry Pie

Hosted a 4-H Food Project meeting at my home featuring "Fall Produce". Although I had planned to use pumpkins, apples and cranberries for the from-scratch fillings, I figured this is another way to make a pie (from the can). She made a beautiful job of it by putting a lattice top-crust on it, then glazing with an egg wash, and sprinkling with baker's sugar crystals. When it came out of the oven, the kids and I decided this was "Best of Show" -- it was so pretty and perfectly beautiful. -- posted by Debber

Fried Apple-Stuffed Biscuit Turnovers (Aka Fried Apple Pie)

This is a cheat recipe that uses canned biscuits like Pillsbury refrigerated biscuits. It's pretty easy too as it uses canned apple pie filling, but I suppose if you're feeling inspired, you could create your own apple filling instead. The trick is really to roll these out enough so they appear more like a turnover instead of having that biscuit thickness. These are great on Sundays in the Fall. Also, these are supposed to be made in a cast iron skillet for best results. You can also use other fruit fillings too instead of just apple, like blueberry, strawberry, peach, even bananas with caramel sauce & cinnamon. Garnish with a dab of fresh whipped cream or cool whip and sprinkle the turnovers with confectioners sugar. Serve with fresh berries as a dessert. -- posted by BlondieItaliana

Deep Dish Blueberry Pie

I got this recipe from Epicurious.com. I wanted to try making a blueberry pie using frozen blueberries. This one came out very good. It wasn't overly sweet which my DH loved. However, I found it a bit runny. Next time I make it, I will increase the amount of tapioca by one or two tablespoons to thicken it more. You can also use 6 cups of fresh wild blueberries in this. I can't find them here in the south west so I opted to use the frozen.

I served this a al mode. I used Vanilla Soy Ice Cream which was really delicious. The pie crust I used with this is:
http://www.recipezaar.com/97877 In my opinion, this is one of the best crusts for a berry pie. This recipe is for one crust only so you will have to double it. When I make this crust I prepare each crust separately and put the first one into the fridge to chill while I make the second. Then I assemble the pie. -- posted by Chef Joey Z.

Icebox Blueberry Pie

From an old Farm Journal cookbook & adjusted a bit. If you can get fresh or your own frozen blueberries it'll be so much better, but frozen store-bought berries are good too. Pre-bake the pie crust according to your own recipe or the package directions, since the pie filling is cooked and put into the shell with no further baking.

From "Baking with Julia" (1997), by Flo Braker. You can use any combination of berries you like in the sweet filling, as long as it makes 1½ cups; Flo avoids strawberries because they tend to have more liquid and make for a runny galette.
Summer Memories: Jumbleberry Crumble With Shortbread Topping

This was a quick throw it together Sunday Lunch pudding idea - raid the freezer for all the nearly used bags of frozen summer fruits, such as cherries, raspberries, blackcurrants, redcurrants, bilberries (blueberries), blackberries and strawberries. Fling them all into an ovenproof gratin dish; whizz up a shortbread crumble topping - and Bob's your uncle and Fanny's your aunt, as we say down our way!!!! We loved it, the combination of fruits was wonderful - and it is a great idea for using up whatever fruits you have lurking in your freezer. I am sure that fresh fruit would also be suitable. We like our fruits to be on the tart side - so pleased add sugar to taste! Serve the crumble with hot custard, cold custard, cream, ice cream, crème fraiche or whatever you fancy! -- posted by French Tart

Johnny Jalapeno's Cast-Iron Blueberry Pie

Cooking in a cast iron skillet is the true cowboy way and no one knows about cowboy cooking more than the famous outlaw, 'Johnny Jalapeno'! Legend tells that Johnny went all out with this pie. Eyeing a delicious looking patch of wild blueberries, he crept up to it injun style (real low and quiet) and got the best berries he could gather up. But soon the chase was on as Johnny Jalapeno heard the crows coming! Quick as lightning, and running like the wind, poor Johnny was being chased and pecked all the way to back to the campsite. The McDaniel gang had a hootin-hollerin' time shootin them birds away as Johnny made this dessert for the clan. "We gotta look after the best cook in the west boys!" Shouted Ricky Mac, the gangs leader.
Glazed Fresh Berry Pie

This is an absolutely scrumptious pie, based on one originally published in The Vancouver Sun. With its fresh summer berries piled high in a baked pie shell and a glaze poured over top, it makes a nice change from traditional pies, where the fruit is cooked. It makes a wonderful summer dessert with a dollop of sweetened whipped cream on top. (I am from Canada, but for you Americans, it would make a wonderful 4th of July dessert (strawberries, blueberries AND whipped cream) (smiles). The original recipe in The Sun called for fresh raspberries (2 cups for the glaze and 6 cups for the filling), and it's wonderful with that too, but raspberry season is very short, and this strawberry/blueberry filling is wonderful too. I have yet to try it with blackberries, but might do that this summer too .... -- posted by JacquelynLee

This is a family favorite. I found the recipe in the Pillsbury Classic Cookbooks, November 1992 #141. I've been making it ever since. When you roll out the crust for the lattice top it does break so don't try to weave like a traditional lattice.
The Best Blueberry Pie

From America's Test Kitchen: "This recipe was developed using fresh blueberries, but unthawed frozen blueberries (our favorite brands are Wyman’s and Cascadian Farm) will work as well. If using frozen berries, in steps 16 & 17, cook half the frozen berries over medium-high heat, without mashing, until reduced to 1 1/4 cups, 12 to 15 minutes.

Grind the tapioca to a powder in a spice grinder or mini food processor. If using pearl tapioca, reduce the amount to 5 teaspoons. Vodka is essential to the texture of the crust and imparts no flavor; do not substitute."

We typically use a pre-made graham cracker crust but would be delicious with a homemade one, too! -- posted by Chef #631739

Famous Fresh Blueberry Pie

I live in Florida and it is difficult to make a non-runny blueberry pie due to the humidity, but this recipe is perfect. I got this recipe through trial and error of 5 different published recipes. The filling is dense enough so that little loose liquid is present, but you still feel like you are biting into whole berries when you eat it. This fixed my problem of getting a pool of liquid in the bottom of my pie shell. I recommend using only fresh blueberries.
Use a 9-inch deep-dish pie plate. Regarding the crust, the store-bought frozen crusts did not work properly for me. They either didn't bake on the bottom or resulted in an overflow of pie liquid into the bottom of my oven. I recommend the Pillsbury brand rolled pie crust dough found in the refrigerator section of the grocery store (by the biscuits/crescent rolls). These bake nicely, are easy to work with, and have an appropriate amount of moisture. Of greatest inspiration for the filling was from http://www.pickyourown.org/blueberrypie.php -- posted by MerryD
