Afghan Biscuits

Biblical Cake

This recipe is the result of a puzzle I was given to solve at my Sunday School. If you found the verses you found the ingredients. It makes one of the best fruitcakes I have ever tasted and I use this recipe as the base of my Christmas fruitcakes. A truly blessed recipe. -- posted by Missy Wombat

Crown Lamb Roast with Sage Stuffing

Ask your butcher to shape the crown roast and tie it with string. Wrap foil around the tops of the cutlet bones to prevent them from burning. Any excess stuffing can be moistened with a little apple juice, rolled in greased foil and baked with the lamb. Cook this dish just before serving. Serve with roasted vegetables and your favourite Sauvignon Blanc or Cabernet Merlot. One of my favourite meats to cook; my recipe library includes many variations in the preparation and presentation of lamb and this recipe is just one I am pleased to share.
New Zealand Holly Cookies

Almost too pretty a cookie to eat, but they taste so good! I actually won first prize for these cookies when I was a girlscout at age 13. Although I am unsure of the origin of the recipe, I thought it was too good to keep to myself. If you're creative and are up for a challenge, this is a perfect recipe for you.
Rack of Lamb With Chilli-Mint Sauce

Adapted from Delicious magazine. For Dave and I, we usually use 3 lamb racks with 4 cutlets on each and all the marinade and sauce (I don't halve it). Nice served with a sweet potato rosti or mash. Prep time includes 30 minutes marinating time. -- posted by Jewelies

Leslie lived across the road from us and was a very good friend of Mums. Mum cooked this alot when we were growing up as kids. Make sure you weigh your roast for cooking times. I have quoted cook time for a 1 kilo roast.
Non-Traditional Christmas Cake - No Cherries

This is a recipe from www.cuisine.co.nz which I have modified slightly. The 900g mixed dried fruit refers to anything but sultanas, raisins or currants. I used crystallised ginger, dried peaches, dried figs, glace mixed peel, dried papaya, dried dates and dried pineapple. You can use anything you like (for instance dried mango sounds nice but it was too expensive here).

To prepare the tin I lined it with 4 sheets of newspaper, then 2 sheets of heavy brown paper, greasing the uppermost sheet. Some people also put damp newspaper around the outside of the tin & tie this with string to secure it, but I didn't have any string.

Finally, if you do not want to use alcohol, orange juice is fine in place of the brandy.

(Time does not include fruit marinating time). -- posted by LilKiwiChicken

Berry Mascarpone Christmas Gateau

I saw this on the cover of Family Circle magazine and it looked amazing. Just perfect for our hot Aussie Christmas. This need to be chilled overnight. For Australians or New Zealanders out there, instead of the 90grams chocolate you can use 3 flake bars. -- posted by Jewelies

Christmas Ice-Cream Bombe

Ideal for a hot Aussie Christmas. From Family Circle. This needs to chill for 12 hours. In Australia we get plain nougat bars and this is what the original recipe recommends, but the software wouldn't allow me to type in plain nougat bars, instead I had to type in honey-nougat chocolate bars. -- posted by Jewelies

Anzac Day Oaty Biscuits

I found this recipe for a healthier Anzac Day biscuit on the New Zealand Heart Foundation website. It comes from a program they have done aimed at schools. I was also drawn to it because of the lack of coconut which I was finding in a lot of Anzac Day biscuit recipe. Since I am not a fan of coconut these sound perfect for me. The recipe didn't give a yield. So, I am guessing on that. -- posted by Sarah_Jayne
