			<description>This recipe is a cross between banana cake and carrot cake!  It is a healthier version of a cake recipe from an old Bon App&amp;eacute;tit Magazine (Oct. 1993).  I replaced the oil with applesauce and it is still exceptionally moist and delicious. You could substitute some oil for the applesauce if you prefer. This bread stores well and picks up flavor when wrapped with a rum-soaked cloth. To store, dip a 12- to 14-inch square of muslin or cheesecloth into a cup holding 2 or 3 tablespoons dark rum, wetting the fabric all over. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. 			<description>Adapted from the Be-Ro home recipes book. As an english person I actually have no idea why scones are considered so British. But these are great with tea, a good breakfast food and look very pretty. You can use a variety of fruit fillings (my favourite is glace cherrys), to be honest I think any dried fruit will work as long as it's chopped to a good size (think around the size of a sultana). Also the recipe calls for 8oz self raising flour but when I made these this morning I used 4oz self raising, 4oz plain and 1 teaspoon baking powder and that worked wonderfully. The salt is optional, you can use margarine or butter and caster sugar is white granulated basically. Handle lightly for best results. 			<description>Served warm and oozing with butter, these fabulous fruity griddlecakes make a great treat for breakfast or afternoon tea. I remember my grandmother making these when I was little; she lived in a very old stone cottage in Northumberland, and made these on a huge cast iron black griddle, or girdle as they were also called! We used to eat them hot from the griddle, with butter  in front of a roaring wood fire during the winter months. Singin' hinnies are a type of fried fruit scone or griddle cake, so called as they 'sing' and sizzle whilst cooking. 'Hinny' is a Northern term for endearment used especially to children - my grandmother used to call me &amp;quot;hinny&amp;quot;. Similar to singin' hinnies are Northumbrian griddle cakes, also known as Gosforth gridies.

You can double this recipe and bake in at 13x9-in. pan.

Variation: For outrageously good pumpkin bars, substitute canned pumpkin for the banana and add 1 tsp. fresh grated ginger.  Outstanding!

			<description>The secret ingredient here is pudding!  Either banana flavoured or vanilla pudding works great. It makes the banana bread moist.  Another tip is use bananas that are so overripe that they are all completely brown.  This will add better flavour to the loaf.  This recipe is all about the techniques which will help keep the loaf moist.  Covering the loaf with foil while baking is necessary, and will ensure a moist top that isn't crusty.  I've added some cake flour to the mix because Canadian wheat has alot of gluten and I wanted to make the bread dense but will bake evenly.  Feel free to experiment with adding different types of nuts or sweeteners to make this receipe your own.  So far I've baked this loaf in flimsy aluminum pans and glass pans, and the disposable aluminum works better than the glass pan.  I've also made mini acorn-shaped bread in Williams-Sonoma decorative pan as well as the W-S bundt pan and had impressive results with pretty designs.
