Yogurt Honey Health Mini Muffins

This recipe comes to us courtesy of the Renegade Lunch Lady Chef Ann Cooper and her book Lunch Lessons: Changing the Way We Feed our Children. The addition of yogurt not only makes these muffins moist, but helps them stay fresh in an airtight container for up to three days and still taste wonderful. If cake flour is not readily available, all-purpose flour can be substituted. The muffins will be slightly denser, but will taste just as good.
Pancakes--Healthy, but They'll Never Know!

The dry ingredients can be mixed up in large volume, stored in the fridge or freezer to retain freshness, and used as a substitute for Bisquick for things like muffins, biscuits, etc. Bisquick contains shortening so be sure to add enough fat to compensate (generally, 1/4 C per 2 cups baking mix). I buy all the dry ingredients at my local natural foods store; they're sold in bulk and are both cheaper and fresher than supermarket varieties. -- posted by firefly68

Manx Style Berry Bonnag

Bonnag is a traditional bread-like breakfast or tea-time sweet loaf native to the Isle of Man.
Lemon Basil Blueberry Muffins

From The Herb Society of America: This is a wonderfully delicious and fragrant muffin; it is sweet like cake. The addition of blue corn is fun and tasty – gives a bit of added texture and the corn is sweet. If you aren't familiar with blue cornmeal, try it and you will find its earthy taste is good in cornbread, muffins, and blue corn pancakes. You can use yellow or white cornmeal if you don't have the blue. Use a combination of lemon and cinnamon basil for the fragrance and flavor; the citrus and the spice go well with the blueberries. However, if you don't have both basils, either one can be used on its own and still make a tasty muffin. -- posted by Ariella

Banana Muffins, Diabetic and Delicious

I met this muffin on the Christine Cushing Live show and had to try it. For my money this is the ultimate banana muffin when it comes to the health aspect and just plain good taste. This can be made with some chopped nuts in place of the blueberries (or a small amount in addition to the berries). The nuts will add fat but nuts are heart healthy fat, you know the good kind. -- posted by Annacia

Sugar Hill Inn's Raisin Scones

I stayed at this quaint little inn, located in New Hampshire, for several nights and was lucky enough to enjoy their amazing breakfasts. This is just one of their delicious recipes that I know I will be making for years! We had the cranberry scones, so I would substitute cranberries for the raisins in this recipe. The scones were also served with a delicious orange butter. This recipe results in a soft, not-too-sweet scone that absolutely melts in your mouth.

I remember course sugar being on top of these scones, which is not mentioned in the recipe. If desired, I would sprinkle enough to taste on the dough before baking. -- posted by Mitra <3

I threw this together for quick breakfast one morning using what I had on hand- lots of bananas. It is a basic biscuit recipe with a banana twist. Be sure to mix using a light hand. Top with butter, jam, coconut oil, or your favorite other topping. You can use all milk or buttermilk in place of milk and yogurt. I was just using up the last of my plain yogurt. -- posted by Cooking4TenOfUs

Gluten Free Banana Muffins (Or Fruit of Your Choice)

Finally! A moist, gluten free muffin without any odd plant flavors or mysterious zing. The recipe calls for extra finely ground rice flour which at this time I've only found from Authentic Foods. The extra fine grind prevents the gritty texture often found in gluten free baked goods and gives the muffins a light crumb. I've listed individual flour ingredients for bakers with a stocked gluten free pantry but you can cheat and buy this flour blend premixed from Authentic Foods as GF Classics Blend.

This recipe is given for a banana nut muffin, but feel free to swap out with the fruit of your choice. The muffins are fairly sweet, you can easily reduce sugar to 1/3 c. if you prefer. -- posted by ravingcutie

Pareve Waffles

I am so addicted to these waffles, I eat them every morning, and then crave them the rest of the day. I will make a batch, then freeze the leftovers. When I am ready to eat them, I just pop them into the toasted straight from the freezer. Just be sure that the first time you make them, not to make them overly brown. Serve with maple syrup, butter/margarine, whipped cream. Whatever you like. I usually just spread on a little bit of strawberry jam. My 2 year old, and 7 month old love them too! -- posted by Lee Hock

Banging Banana Bread

I LOVE banana bread. So, I have made it for many years. I am always looking to get the flavor just perfect! I use "old" bananas. The upscale produce shop won't sell them, so I usually call and see if they have any. That way I can use them right away AND they sell them to me super cheap! I usually bake around 150 mini loaves to include in my Christmas Goodies Bags. I like my recipes to have measurements for items, sizes for pans, and baking directions. So you will find all of that in this recipe that I have finally decided I have "tweeked" it right down to d-e-l-i-c-i-o-u-s. -- posted by Tantric1

Cornmeal-Oatmeal Cranberry-Orange Loaf

My husband, being a true Texan, loves cornbread almost as much as he loves me. I was not a great cornbread baker, so I bought The Cornbread Gospels by Crescent Dragonwagon to learn how to make his tummy happy, and what a great book that turned out to be. Every form and fashion of cornbread you can imagine, and (almost) all good. This recipe is from that book, and has earned rave reviews everywhere I have taken it. It's beautiful, and the essences of orange and cranberry combined with the crunchiness of stone ground cornmeal sets it apart from other quick breads, and it will leaving you wanting more. I hope you like it as well as we do. -- posted by Feisty

Buttermilk and Sour Cherry Scones for Afternoon Tea and Picnics

A delightful and EASY scone recipe that is perfect for a proper afternoon tea or to take on a picnic. Dried sour cherries are sensational and give a deep essence of cherry flavour to these scones, whilst the buttermilk makes them light and airy. This is a casual eating scone, easy to rustle up, and is perfect when eaten fresh from the oven with butter and maybe some cherry jam and cream too! If taking on a picnic, wrap the scone in a clean tea towel to keep it warm and pack the butter and jam separately. Makes one large scone, which is marked to split into wedges when served. -- posted by French Tart
