Christmas Morning Jewelled Muffin Mix in a Jar

Delightful festive spiced muffins, studded with jewel coloured fruit and nuts - just the thing for Christmas morning! I love all types of "mixes" in a jar! Soups, biscuits, spices, cookies and cake mixes etc! However, this muffin mix is my favourite - it makes a wonderful gift, or I make it for us, as it looks so pretty & festive sitting in the kitchen waiting to be baked! Try to use really colourful dried fruits with a good mix of tastes and textures. For those of you who cannot source Mixed Spice, an essential ingredient, I have a recipe posted on Zaar: Recipe #266688. This muffin mix is always popular as a gift, and I do try to find unusual shaped jars and hand-made paper or card for the baking instructions. A wooden spoon tied around the neck of the jar is another winning idea - and don't forget the Holly sprig! -- posted by French Tart

Almond Cranberry Bread

From Ocean Spray flyer. It has been a many years since I've made this bread but my notes say it is yummy! My notes also say I added a 1/4 cup of chopped almonds to the batter and then used another 1/4 cup of sliced/slivered almonds for the topping. So I've adjusted the original to include this but feel free to leave the chopped almonds out of the batter itself. -- posted by HokiesLady

Judy's Date Muffins

From TOH muffin booklet. Submitted by Judy C. I am saving this recipe for the fall season as I just think it will go great with that season. I love dates and these just seem really simple to throw together. It states these muffins can be frozen up to 3 months too. Another tip offered is to spray your paper liners with non-stick spray and then the liners peel off very easily without leaving crumbs behind. Hmmmm. -- posted by HokiesLady

Alla's Cranberry Scones (Raw Foods)

From Victoria Boutenko's 12 Steps to Raw Foods. I haven't tried it yet, but I have to give the book back to the library. The recipe says: "you have to experiment to get the consisitency desired." I guess that means add more water if necessary or more solids if it's too wet. -- posted by mliss29

Betsy's Lemon-Cranberry Bread

Found in a TOH magazine and clipped out to try! Boy was I ever glad I did. A lemony loaf of bread with the extra zip of dried cranberries. I've made this as a regular sized loaf and also in mini loaf sizes for gifts. I have also used walnuts and almonds in this bread and actually prefer the almonds - but use whatever nut you love. The addition of the lemon glaze just takes this bread over the top. *** Edited 11/19/09 - This recipe makes TWO 9x5x3" pans instead of one. Sorry for my error! If you want just one loaf just halve the recipe and it will work perfectly! *** -- posted by HokiesLady

Blueberry Pecan Muffins Using Food Processor

Entered for safe-keeping, just got a heavy-duty 12-cup food processor. From George Geary's "125 Best Food Processor Recipes". He warns that 1) if the berries are thawed before adding to the batter, they can turn it an unpleasant blue color and 2) if you use butter instead of shortening, your muffins will not be as flaky.
Dad's Famous Banana Bread

By far one of the best banana breads I have ever had! Simple but well worth it! My dad will always make at least once a month. I've made a few changes from my dad's recipe by adding chocolate chips and some chopped nuts. This makes the banana bread even better, still great without those two items though.
With any banana bread, make sure your bananas are over ripe or really bruised...this makes for the best bread. So the next time your bananas go bad, make some banana bread or freeze them for later. =) -- posted by mn7twins

Carrot Spice Morning Glory Muffins

These are wonderfully satisfying breakfast muffins. They are moist, warmly spiced, and only just sweet enough. They are full of good nutrition too! For an extra health boost, you can add 1/4 cup of ground flax seeds; it doesn't affect the texture. They are great warm, and maybe even better after having cooled. This recipe is from Dorie Greenspan's fabulous cookbook, "Baking: From My Home to Yours".
Cranberry Quick Bread With Variations

This is an easy, moist and very flavourful quick bread. You can substitute the cranberries with equal amounts of blueberries, rhubarb or chopped apples. There is even room to add pecans or walnuts. You may want to substitute vanilla or lemon extract in place of the orange...or not. :) For a quick 'out of the freezer' snack, slice before wrapping in portions of 4 or 5 slices each. Great for unexpected company. Servings will depend on how thickly it it sliced. Note: You can use fresh or frozen cranberries. I've not tried it with the dried sweetened variety. -- posted by Diana #2

Hawaiian Tea Bread

I love this bread. It's so moist and versatile. I make it for breakfast, brunch, tea parties, and even desert. I like to use a mini loaf pan and give the loaves as gifts in a gift basket along with other "Hawaiian" treats. I also use valtrompia bread tubes in different shapes and then slice. The slices look so pretty on a plate. If you use the bread tubes, be sure to fold wax paper to fit over both ends of the tubes before fitting the lids on. I learned this recipe when I used to be a consultant for Pampered Chef. -- posted by JeanieK

Banana Morning Glory Muffins (Cooking Light)

A delicious, nutritious and satisfying muffin from "Cooking Light Magazine (July 2007). You can definitely play around with this recipe- it does well with substitutions. These freeze very well. Either microwave for 20 seconds or just pull one out of the freezer before you leave for the day, and it will be defrosted and perfect in about an hour, just in time for a snack!. If you want, you can fold the flax into the batter, rather than sprinkling it on top. -- posted by blucoat

Mani's Bakery's High Protein Muffin

This recipe comes from the LA Times Food section's SOS column posted in response to reader pleading. It is an adapted recipe from the bakery. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins & likely need a slightly shortened cooking time. Should be getting about 11 grams of protein & 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds & canola oil. Just the thing for hiking, fishing or hunting - easy to eat & needs no fridge! -- posted by Buster's friend

Banging Banana Bread

I LOVE banana bread. So, I have made it for many years. I am always looking to get the flavor just perfect! I use "old" bananas. The upscale produce shop won't sell them, so I usually call and see if they have any. That way I can use them right away AND they sell them to me super cheap! I usually bake around 150 mini loaves to include in my Christmas Goodies Bags. I like my recipes to have measurements for items, sizes for pans, and baking directions. So you will find all of that in this recipe that I have finally decided I have "tweeked" it right down to d-e-l-i-c-i-o-u-s. -- posted by Tantric1
