Fat Free Chocolate Muffins

A wonderfully moist fat free chocolate muffin, and a sneaky way to get that nutritious beta carotene! My kids have no idea they are eating pumpkin! They actually ask for these babies. The pudding mix is optional, it adds some sweetness and moistness, but you don't need it. The addition will add to your baking time 5-10 minutes. -- posted by Darling76

Chocolaty Chocolate Chip Whole Wheat Muffins

I was originally interested in making a chocolate nut bread from Very Best Baking but decided I needed something more chocolaty and with more spices. So I decided to merge that recipe with another muffin recipe I use that calls for cinnamon and nutmeg. I wanted it to look chocolaty too though so I also added cocoa powder. I do want to add that this recipe is not very sweet. It is just right. You can use just all purpose flour if desired. This recipe will make 48 regular sized muffins or 24 Texas sized muffins. You can also freeze some for later. -- posted by Jasmine31

Based on a Mollie Katzen recipe... but due to blood sugar issues I am trying to lower my carb count so this is pure experimentation.
Healthy Chocolate and Vegetable Mini Muffins

I developed this for a friend with a picky 3 year old. I had made some very healthy bran muffins that my girls enjoyed, but her son wouldn't touch. So I added some chocolate, and a bit more sugar, but left all the healthy stuff in there, too. The nutritional information on these is very encouraging! I substitute milk chocolate chips for the semi-sweet. These are very moist and delicious. -- posted by Legna

Double Chocolate Bakeshop Muffins

When you have to have chocolate in the morning, these are the perfect fix. The melted butter in the batter helps to make them rich and cake-like in flavor and texture, but they are not cupcake-sweet. If you eat them warm the chocolate chips will be soft and gooey, for double the chocolate pleasure. Perfect with a glass of cold milk or a cup of hot cappuccino.
Zucchini-Chocolate Chip Muffins

Easy to make, moist and delicious. Everyone loves these muffins. We omit the nuts and use regular sized chocolate chips, because that's what we usually have on hand.
Brownie Bites

These little gems are very easy to make. I started baking this recipe when my kids were in elementary school and they loved those mini brownies that you can buy 5 to package (Hostess, I think) in their lunch boxes. I didn't like buying them so I found this recipe and the rest is history. I have never gotten 40 muffins out of this recipe -- more like 32. I don't always put a nut on the top of the brownie bites. I used pecans in the picture because that's what I had -- use your favorite nut. -- posted by Lvs2Cook

Decadent Double Chocolate Zucchini Bread

Revised from a recipe that had a whole cup of oil in it, this one is lower in fat, yet still moist and delicious, more like chocolate cake than zucchini bread--a serving of vegies and a decadent chocolate escape, all in one! I use Mexican vanilla and Ghirardelli dark chocolate chips for more intense flavor.
I like Vitalicious VitaMuffins because they're so healthy and tasty, but they're expensive. I searched online for recipe clones and found ONE! It isn't mine, but I thought a lot of people here would appreciate it being posted. It doesn't have quite as high a percentage of vitamins as the original, but I hope they taste just as good for so relatively few calories.

Source: http://community.cookinglight.com/showthread.php?p=792843 . The main difference is that I exchanged sugar for Splenda. Enjoy!!

Chocolate Breakfast Muffins

These delicious muffins have a rich, deep dark chocolate taste without being overly sweet. This recipe can also make 12 giant muffins. If you want jumbo muffins, bake them for 20-25 minutes. These freeze very well. For an even richer muffin, you can sprinkle them with chocolate chips as soon as you take them out of the oven. If you want to make them a little healthier, halve the chocolate chips- they're still great! The recipe is from the test kitchen at King Arthur Flour. -- posted by blucoat

Good for You Chocolate Muffins

Okay - well they might not be good for you but they are Better For You Chocolate Muffins than a standard muffin. These use applesauce in place of oil, fat-free milk and egg substitute. I love the addition of the sliced almonds as called for in the original recipe but I've also used a white chocolate chip & peanut butter chips in it's place for a fun twist to the muffin. Original recipe was found in a Simple & Delicious flyer submitted by C. Gaus. -- posted by HokiesLady

I originally posted this on my site: http://darkcaffe.blogebay.com/ but I want to share it with everyone. It's a wonderful way to take advantage of summer's best strawberries. I hope that you will all enjoy it. The strawberries need to sit in the sugar for hours to develop the juice so do plan ahead just a bit.
Kellie's Basic, Go Ahead and Mess With It, Scone Recipe

This recipe started as a Lemon Glazed Scone recipe I found in a locally published recipe book, you know the kind sold as a money raiser with personal recipes from community members. Over the years I have adapted it many times. It has become the basic formula I use to make scones for tea with friends, family gatherings or on those mornings when I wake up and find we are out of bread and cereal. I add whatever I have in the cupboard or fridge. It has never let me down.

I encourage you to substitute and add stuff. The basic formula is mix together the dry stuff, cut in the shortening, stir in any lumpy additions then mix in the wet stuff. Have fun with it! -- posted by redplaid huf

Heavenly Sweet Cappuccino Chip Muffins With a Cream Cheese Sprea

The best muffins I have ever tasted and the only way I enjoying consuming coffee. Even the cream cheese spread made with them is incredible just by itself. These are super easy to make and you can add your own fun twists to them easily ("frosting" them with the spread and decorating them or filling the muffins with the spread works well!). Make sure you keep the spread refrigerated as the cream cheese in it can spoil easy. Don't plan on piping the spread with a frosting tip unless you thin it out and leave the chocolate chips out as it will be too thick. Enjoy! :] -- posted by Jessa M
