Taco Soup

This is a very easy, but delicious hearty soup. It is like a chili in some ways. It is great when you need to throw something together. It is easy to entertain with, at the end everyone can add their own little touches with some toppings and extras. It is a crowd pleaser. -- posted by tastytwosome

Taco Lasagna

This is a fun spin on both Lasagna and Tacos. I was inspired by something my mother used to make when I was a little girl (she called it Mexican Casserole) though hers was made with flour tortillas and modeled a bit more after enchiladas than tacos. I needed gluten free, though, so though I'd try it with fried corn tortillas. Ours turned out nothing like my mom's (probably has something to do with the fact I never actually asked her for the recipe) but it was a big hit here!

It takes about an hour from start to finish and I love it because I have just enough time to do all the dishes before pulling it out of the oven and setting the table. It's simple, easy cleanup, and all the food is in one dish. Garnish with sour cream and hot sauce. -- posted by ChefLadyJax

Twisted Beef Koftas (Middle-Eastern Meatballs)

Traditionally made with lamb and mint, this is my own altered version of the scrumptious Indian dish. These meatballs are pretty spicy, so season to your known preferences. I like to use lots of pepper and cayenne and minimal salt.

The prep time can be cut by preparing the ingredients in a food processor. All measurements are approximate, feel free to use what you have on hand!

There are many ways to serve them. My favorite method is in a fresh, warm pita with a cucumber-yogurt sauce or with terriyaki and a handful of onions. My boyfriend likes to eat his with spicy mustard. Or for a flavor crossover use them as meatballs for spaghetti!

Try a cool, light salad as a side, and don't forget dessert! -- posted by YourCakeIWillTake

Sexy, Spicy Chili for the Gourmet Cowgirl - Wstrn North Carolina

I came up with this Chili after trying to match the ingredients in recipe #328352 - an OUTSTANDING recipe! It is so delicious, I figured I would share my version for those who do not have the products for Liza's FABULOUS chili recipe. The different peppers add a number of levels of heat to the chili and the different flavors are discernible. I do believe this is the best chili I have ever put in my mouth! If you do not like spicy foods, keep searching. This chili is spicy, but certainly not over the top torture! I found it paired well with Amstel Light, Corona and Negra Modello! -- posted by NcMysteryShopper

M & T's Crock Pot Chili

I had a taste for chili and a pound of ground beef in my refrigerator that needed using. A match made in Heaven if I could find the right recipe. This recipe was IT! This is a chili that can be picante or rather mild and has plenty of meat. It is so very easy to make -- mostly just opening cans and throwing the contents into the crockpot. I appreciate that! I also like using refried beans instead of whole beans. They gave the chili good substance and body. This recipe is from "Fix It and Forget It Recipes for Entertaining" submitted by Sherry Conyers. -- posted by Lorraine of AZ

This is a chili recipe that my mom has made for years. She's passed this recipe on to me and now I make it a couple times a year when the weather gets cold. This chili is very good on the day you make it but EXCELLENT the day after when the flavors have had some time to meld. Its fantastic with some shredded cheddar cheese and Frito Scoops. Its also perfect for freezing and eating later for a quick and tasty meal. -- posted by Jason B

Easy Chilli Con Carne

This is a really simple and versatile chilli con carne recipe that I've perfected over an admittedly short period of time, but it seems to work pretty well.

It's really easy to adapt to vegetarian tastes - use whatever kind of tinned beans you like, mixed bean salads are easy to find at supermarkets. I really recommend that variation with tortilla chips and sour cream. It can be spiced up by varying the chillis to your preference. I usually chop them finely and put them in at the start with the garlic as it smells good.

My starting point for this was a recipe in a book called Just 1 Pot by Love Food, with no author specified.

This recipe is very much a work in progress so feedback would be very appreciated =) -- posted by cydon

Cajun Chili (Roux Based)

Delicious with or without beans. If made without beans, the chili can be served over elbow noodles for a delicious version of chili-mac. Don't forget to top with shredded cheese. What makes this chili different is the first step. The roux base gives the chili body and a saucy texture.
That Chili

"So when are you going to make that chili again?" I heard it so frequently, it became the name.

I came up with this recipe based on what I had on hand at the time. I've attempted to alter it, and got nothing but complaints! Apparently this combination just works. Of course, with all chili, you can substitute ingredients in or out of the recipe, but I recommend trying this one "as is" first.

Unfortunately for some, my cooking style is very free, and I don't often measure spices. Everyone is a little different, so this is mostly "to taste." Sorry to those cooks out there that like clean measurements.

I sometimes make this is a small 3 qt crock-pot. I just alter the amount of beef broth and water used so it will all fit. Turn it on high, and let it go for 2 to 4 hours; or turn it on low and let it go for 6 to 8 hours. -- posted by Laneydey

Texas Senator Sam Pendergrast "greasy Spoon" Chili

As a kid, there was a "greasy spoon" across from my school. I remember running full tilt to get my favorite Winter lunch, a steaming paper cup of their chili with crispy saltines to crunch up on top. You could tell a good batch because the bright red "grease" would begin to soak through the cup before it was time to go back to class. I searched for years to find this recipe and finally caught up with it in a cookbook called "Texas Home Cooking" by Cheryl and Bill Jameson. It's typical of what was popular in the 1940's and is comforting and delicious to fans of chili. Follow it to the letter the first time and "adjust if you must" the next time. It's not terribly hot, just very, very spicy. Your favorite "Chili-Head" will love you for making this recipe. Also, the amount of cumin is not a mistake in case, you're wondering. It's not health food, but anything in moderation is ok. Enjoy! -- posted by Max Thames

This goes together quickly and then bakes for about an hour. This recipe can be taylored to your own tastes quite simply. You can vary the flavors by using different chili powders, beans, cheese blends or Dorito flavors. It's easy to control the heat level by which Ro-tel you use. If you don't like it hot replace the jalapenos with mild green chilies. -- posted by Puppies777

Meatball Torta Ahogada

Torta ahogada means drowned sandwich and is a typical dish from the Mexican state of Jalisco, in particular the city of Guadlajara. It is called drowned beacause the sandwich is submerged totally or partially in a sauce made with dried chile peppers. Tortas ahogadas are made with a thick crusty bread called bollilo, which has a soft, slightly salty interior. The crisp bread allows the sandwich to soak without falling apart. -- posted by Moontan Master!

Homemade Taco Seasoning Mix

¼ cup seasoning and ¾ cup of water per pound of meat. As long as its stored in a cool, dry place it keeps forever.

possible add-ins:

dried jalapeños
ancho chilli powder
chipotle ( I always add chipotle)
dried onions they’ll rehydrate during cooking.

This recipe will make enough for about 4 lbs of meat.
This is pretty spicy stuff, if you don’t like a lot heat remove some of the peppers. -- posted by Jemshui

Super Bowl Chili

This is the recipe I make every year for the Super Bowl, for my boyfriend and two dozen or so of his closest beer-drinking, football-watching friends.

The problem with trying to find a good chili recipe is that what makes a "good" chili is a personal opinion; my idea of a great chili may be very different from yours. My chili is heavy on the meat, garlic and spice; rather rich-tasting, hearty, thick, fiery, and smoky. If that sounds like something you'd enjoy, I'm also going to include plenty of advice on how to adjust it to meet your tastes.

Enjoy.

Notes: To cut down on fat, lean, turkey/chicken Italian sausage can be used, without affecting the flavour or texture of the final meal. Extra-lean beef can also be used. -- posted by ClarenceKitchenDiva

Jim's Award-Winning Chili

I started this recipe a lot of years ago, and have changed and improved it (I hope) a lot of times. My mother recently made a batch with this recipe and entered it in a contest where it won (in Yuma, and I think they KNOW their chili down there!) What makes this great, I believe, is the use of almost all fresh ingredients, keeping canned items to a minimum. Using FRESH vegetables, I believe, is the real key, especially if they are certified organic! Depending on the specific jalapenos, it will be mild to medium spicy. -- posted by Jim N.

Kpd's Awesome Retro Burritos, Tacos or Chimichangas

This is my basic recipe for a Mexican ground beef mixture. This way everyone can make what they want: DH makes burritos, I make tacos or chimichangas, and DD makes what I call a fiesta bowl! I usually double the recipe so we can use the leftovers for a Nacho Night! If I'm low on time or spices, I'll just throw in a taco packet, no biggie! Please use your judgement on the seasonings: we like it spicy, so I actually use a lot more than written...if you prefer mild, go a little light initially and increase as necessary. -- posted by KPD

72 Market Street Kick-Ass Chili

If you like your chili with a kick, this meaty, spicy one has it. The recipe calls for "chili-grind" meat, a cut you can ask your butcher to grind. The restaurant uses Bass ale but feel free to use any ale you like. This is the
chili that I make for pot-lucks, in part because it is requested, but also I can be pretty sure it will be consumed before the party is over. The recipe was developed by chef Leonard Schwartz at the 72 Market Street Restaurant in the Venice community of Los Angeles, California. The restaurant is no longer there but many of their recipes live on in print. For example, you can find the restaurant's meat loaf recipe in the New Basics Cookbook by Rosso and Lukins. This chili recipe was published in the Los Angeles Times. -- posted by lynnski / LA

Cheddar BLT Burgers With Tarragon Russian Dressing

At BLT Burger in Las Vegas chef Laurent Tourondel brushes burgers with butter while they're on the grill. The natural sugars caramelize, making the meat extra-delicious. Food & Wine Magazine, June 2009 edition. From: Dip Meat in Cold Water, 20 Smart Tips for Everyday Grilling Chef Tourondel suggests that by dunking the patty in cold water for about 30 seconds before grilling will make the burger juicier - and it does! :) We made these last night and they were awesome! However, we did make a few changes. We omitted the tarragon (don't like anise flavor!) and replaced with an extra tablespoons of parsely. We then made the dressing with shrimp and seafood sauce with horseradish instead of the ketchup. Thay are really fantastic! A luscious burger topped with both cheese and bacon should be paired with a substantial red wine—the tannins in the wine will cut through the richness of the burger. -- posted by Manami

Southwestern Green Chili Enchiladas Casserole

I got this recipe from a cookbook called Comida Sabrosa that I purchased at the ranger station at Bryce Canyon National Park. I've made it many, many times. This is a favorite of my husband's. I've made it both ways, with chicken and grond meat. Both are good but my favorite is to use smoked chicken. -- posted by Oh!Susannah

The best enchiladas I've ever had- really, the only ones I've ever liked! I crave these, and usually make them at least two times a month.
The Perfect Chili

After testing out a number of chili recipes, none were quite what I was looking for. I decided to come up with a chili of my own, and here it is. My whole family (including two fairly picky toddlers) just loves it!
It's fairly quick and easy to make, and doesn't have a long long list of ingredients. If you're looking for a simple, straightforward and pretty darn delicious chili, this is definitely the recipe for you... -- posted by The Portugarians

Jamies Chilli Con Carne

I was given 'Happy Days With The Naked Chef' and found that I enjoy Jamies style, he can be relied on for sensible recipes that work.
I decided to try his Chilli Con Carne for my son and husband one weekend when the girls were away. Good comfort food, served over rice, DH found this spicy while I thought it could be pepped up a little more (sometimes I surprise myself!!).... adjust for your own taste! Jamie recommends chuck steak, minced, but I used ground beef that I had in the freezer. I don't think the sun-dried tomatoes are traditional, but they are a nice touch! This dish is ideal for make-ahead, and definitely tastes even better the next day! -- posted by Karen Elizabeth

Don's Queso Dip

My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. My mother likes to put this into a Crockpot to cook while she makes dinner. -- posted by Bekahbv

Ggrandma Molnar's Stuffed Cabbage

My mother got this recipe from my grandfather's mother. Phew! She lived her life in southern Hungary. I have loved it since I was big enough to help mom peel the cabbage leaves. You could probably substitute diced tomatoes for the can of whole tomatoes, but I have never tried it that way. I still fix it the way I was taught as a little girl. I have also tried Bavarian Sauerkraut and its just as good. -- posted by saharann
