Broccoli Cheese Soup (W/ Cheese Whiz & Bacon Bits)

This recipe is so easy! Five ingredients!
*I haven't perfected it yet but here are a few things I've done so far:
*After adding the half-and-half, I add a little water mixed with skim milk in the empty half-and-half container and pour into the soup and then heat it. Or you can add a pint of water if you wish. This just dilutes the soup so that it isn't soo rich when using just the half-and-half.
*I use almost all of a 16 oz. jar of Cheese Whiz instead of 8 oz.
*Just a hint when grocery shopping, I found that Hormel's bacon bits no longer come in a glass jar but they now come in package form. Also, I wasn't exactly sure how many ounces the package is so I guessed. -- posted by Lynsey Beth

Super Easy Tomato Soup

This has got to be the easiest tomato soup recipe ever, and it's delicious. It tastes like canned homemade tomato soup that my mamaw used to make. Yes, all the ingredients are from a can.. but I assure you it's so tasty! And best thing, it takes about 10 minutes to make.
Tamari Bouillon Broth With Instant Variation

Entered for safe-keeping. From Martha Rose Shulman's "Fast Vegetarian Feasts", received in February 2009 Cookbook Swap. The author often makes just enough as needed using the instant variation to substitute for broth or water in recipes. Per the author, make sure you buy unadulterated vegetable bouillon cubes, and if they are not available, substitute plain water instead of this broth. -- posted by KateL

Nickey's Chicken N Asparagus Soup

A very light, simple chicken soup. Time does not include time to bring stock to boil ... might add another 5 minutes?

Hehehe, I know I shouldn't write this here because you might not want to try it! Here's my friend's reaction even though I warned him that it was mildly flavored and easy on the stomach...and that he might want to add the very ingredients that he did!

"About the soup...hehehe...I boiled the chicken in water for the broth, then added the chicken stock, shredded chx and asparagus. Well, the flavor just wasn't there and so I added a little salt then shoyu...something is missing...Aha, a little bit of dashi, the one with no MSG. Suddenly it changed the whole flavor! Auwe! Jam-up! And SO I decided to add sesame oil. Now this soup has gone through a metamorphosis...I call this soup: Oriental flavored Chicken Asparagus Soup. Guess I'll be bringing the soup to work for lunch." -- posted by marisk

Taco Bean Soup

My MIL gave me this one, and it has become a favorite at our house. Easy, low calorie, and the whole family likes it. You can throw in any beans you like (pinto, black, kidney, navy, chili, garbanzo, white, etc.), and this is flexible to additions like a can of tomatoes or green beans, or a package of ranch mix, though I find that makes it too salty for my taste. Makes a great lunch soup, or can become dinner with a salad and some biscuits or rolls. -- posted by Proverbs31gal

Excessively Simple Cream of Tomato Soup

This is a very simple and quick recipe.
I adapted this from a recipe I found elsewhere on the internet that included butter and cream. I found that recipe too rich, and so cut out those ingredients.
Since this is a bare bones recipe, it is very easy to experiment with and add things to. In fact, it's very difficult to go wrong with this one. My favorite things to add include garlic powder, freeze dried oregano, and cayenne pepper. Feel free to share your experimentation!
Also, if you are partial to cayenne pepper, I highly suggest adding it to this recipe when you have a sore throat. It won't irritate your throat going down and even sometimes helps temporarily relieve the soreness. -- posted by vcnielson

Cream of Broccoli Soup

A quick, easy, cheap recipe I got from a friend (Laura Rich) who years ago tried to teach me how to cook. I am going to try it again soon, now that I'm one of the many unemployed and have the time to learn how to cook in earnest. I will be substituting the almond milk with soy milk. Let me know how it goes, if someone else tries cow's milk. Thanks!

Quick and Easy Vegan Tomato Soup

In my opinion, this tastes just like Campbell's, but without the dairy, gluten, and other nonsense. For the non-dairy milk, I used So Delicious brand coconut milk. This is a new product which you can find next to the refrigerated soy milk at your health-food store. It doesn't have a strong coconut flavor, but it does have a lot of good fat, which means it works really well in a recipe like this. You can also try soy milk, nut milk, etc. -- posted by Prose

Avgolemono Soup

this is a greek soup, it's a lemony chicken noodle [or rice] kinda soup. i learned the recipe from my yia-yia [grandmother] when i was younger. it's great for those cold wintery days or a rainy fall or spring day. or if you're just in the mood for some soup.

now you can either used canned chicken noodle/chicken and rice soup [which is fastest] or make homemade chicken soup which is healthier and probably overall better tasting. but it's up to you. this recipe is going to go by the canned soup. -- posted by koukla007

Plain Hotpot Broth (Sichuan) -- Bai Tang Lu

Recipezaar has (as of July 2009) 29 hotpot recipes, but all but one of these are not the Chinese style hotpot. The exception (Mongolian Hotpot With Chicken and Shrimp #327359) is listed as Mongolian style hotpot. This recipe, and several that will follow, are authentic Sichuan. The source is Fuschia Dunlop's Land of Plenty, which focuses on Sichuan cuisine. One of her other books, The Revolutionary Chinese Cookbook, discusses the Hunanese version of hotpot cuisine, which appears to be more similar to the Mongolian than is the Sichuanese. I haven't had this specific recipe, but I have had Sichuan hotpot at several Chengdu and NYC Chinatown Sichuan restaurants ... an absolutely wonderful meal. Fuschia spent several years in Chengdu as a student at Sichuan's most notable cooking school ...IMHO her books are among the most authentic and best sources in English for Sichuanese and Hunanese recipes. The basic process is as follows; Prepare the broth (this recipe) or multiple broths (plain, spicy, vegetarian, etc.). Prepare raw ingredients which will be dipped by each individual guest. Each guest will remove his/her ingredient when cooked to their preference, then dipped in a dipping sauce (there may be 4-12 sauces for the party) and eaten. When all are done with the dipping ingredients, the broth, now flavored from all the dipping ingredients, is served as a soup/broth. Enjoy!! This is heavenly ... like a fondue but so much better!! -- posted by Gandalf The White

Soupa Avgolemono

This recipe is from epicurious.com; there was a particular recipe for Avgolemono that one dissatisfied user reviewed and posted this variant instead in the user comments... The user: aka "A Cook from Boston, MA". I have modified some of the directions to be more concise and to be in a more recipezaar format. "I'm 34 and have been making this since I could stand up on the stool in my Yia Yia's kitchen (my grandmother who is now 80 yrs. old). This recipe will make a perfectly balanced salty, rich, filling, comforting soup. I sometimes add more than juice of 3 lemons, as the sourness is the best part of the taste! You should taste lemon, richness of eggs, salt of chicken, and starch of rice, in that order and you've made it perfectly. You can also add thin pieces of shredded chicken meat (pull off bone in strips), although classic recipes don't include chicken, vegetables, garlic or any of the ingredients many reviewers added to "fix" this recipe. Try mine and you'll be hooked for life!"

Ten Mothers Garlic and Spinach Soup

Found this recipe on Care2 website @ http://www.care2.com/greenliving/ten-mothers-garlic-and-spinach-soup.html

Adapted from The Roasted Vegetable, by Andrea Chesman (Harvard Common Press, 2002).

This delicious broth, redolent with garlic and enriched with the vitamins and minerals of fresh spinach, takes its name from an old folk saying that garlic is as good as ten mothers.

This soup is not only tasty and nourishing, it makes a comforting remedy for winter sniffles and sneezes. -- posted by SassiFras

An Unusual Borscht

An combination of beets, squash, and yogurt makes a sweet yet savory soup that is quite filling. Slow roasting the vegetables takes quite a bit of time but is well worth it for the intense flavor it gives to the borscht.
Mexican Shrimp Stew

There are seafood stews swimming through every cuisine in the world. This one has a decided Mexican flair, which you can create instantly with a can of diced tomatoes, a can each of corn and black beans, and a handful of chopped cilantro. The shrimp cook in seconds, so they should be added in the last minute of simmering.

Grandma's Rivels

This will forever be a soup that makes me think of my grandma. Rivels are kind of simple little dumplings dropped into any flavor of broth. When I asked my grandma how to make it, she said, "take some eggs and some flour, a little salt, and rivel 'em up!" We often ate this soup with bbq grilled chicken during the summer.

(When I was younger we always had chicken rivels, but recently I made a stock with the ham bone from christmas, added some ham soup base, and diced up some leftover ham to add in. This also produced great results!) -- posted by PSU<3
