Cucumber Quick Salad

For a creamier dressing, add a tsp. of mayo to sugar and mix into the vinegar. -- posted by CJAY

Ranch Chicken Pasta Salad

It's too gorgeous out to spend much time in the kithen, but I was pretty impressed how a package of Kraft Classic Ranch with Bacon Pasta Salad can be doctored up to taste homemade. I threw in an extra tomato because it tastes fresher and some extra chives. You could probably top this with nuts or cheese or olives...whatever your heart desires. I think this would make an easy potluck dish or a whoops we have unexpected company and now what are we going to feed them last minute meal.
Ranch-Style Coleslaw With Bacon

This is an easy-to-make coleslaw that is very good with grilled steaks and potato salad!! Another way to make it is Mandarin-Style Coleslaw: Prepare using Kraft Signature Mandarin Orange with Sesame Dressing and substituting 1 small apple, chopped, for the bacon. Italian-Style Coleslaw: Prepare using Kraft Extra Virgin Oil Tuscan Italian Dressing substituting 1 small red pepper cut into short thin strips for the bacon. This coleslaw can be made ahead and refrigerated up to 2 hours before serving. -- posted by Chef mariajane

This dip is so good you'll want to eat it with a spoon! It's really great served with a fruit platter, chicken fingers, coconut shrimp and so much more. My friend serves it with her baked ham. We like it chunky but if you want it smooth, put everything in the blender and give it a whirl for a minute or 2. For a side salad we like it with lettuce, chucky cucumbers, pepper pieces, green onion, avocado and topped with crushed tortilla chips. I usually use Chi Chi's brand Fiesta Salsa in Medium and Hidden Valley Ranch, but feel free to use whatever is in your fridge, I like to mix it up ahead of time for the flavors to fully blend more. -- posted by Michelle S.

Sesame-Soy Dressing for One

I had some soy ginger dressing but I had forgotten that I'd used it up and my chicken garden salad really cried out for it. I whipped this up and really like it. No ginger though.

Note: I made this low calorie but one may find this dressing does not stick to the salad well. If calories aren't a problem for you, replace the water with a mild oil such as canola and add water if needed after tasting. -- posted by Chef Tweaker

Smoked Turkey Gazpacho

Gazpacho, the classic fresh-vegetable salad from Spain that eats like a soup, usually takes a lot of chopping. In this streamlined recipe, most of the chopping is done for you by using canned tomatoes and vegetable juice. Because vegetable juice is a combination of several vegetables, you get most of the garden-fresh quality of a traditional gazpacho in a single ingredient. By adding some smoked turkey, this traditional light soup serves as a hearty, one-pot main-dish meal. For a spicier gazpacho, add a dash of hot pepper sauce. -- posted by Chef #1365024

Simple, Simple Green Peas and Sweet Onions Salad

This is a real quick and easy recipe. I got it from my Mother and I've been making it for over 40 years. It uses simple ingrediants you probably have in your pantry. You can adjust the amount of onions to your personal taste. I like it with a lot of Vidalia onions and lots of fresh ground pepper. It taste better if you prepare it an hour or two ahead of time. Can be served at room temperture or cold. -- posted by Naturelover

Quick and Easy Garlic Aioli

I was taught to make this Aioli in Spanish cooking classes, it is basically a fast way to make an real (or almost real) Aioli without resorting to using pre made mayonnaise. It tastes great and takes under 5 minutes to prepare.

You will need a thin tall measuring cup or jug and a hand held (vertical or stab) blender.

If you don't like garlic, you can make without.

You can add things like herbs (fresh or dried), black pepper, smoked paprika or other things you like.

Experiment with the amount of oil and lemon juice.

If you want it to be more rich add two eggs yokes instead of one whole egg. -- posted by Claytox
