Chicken Chips

Long story short: started to get things ready for dinner one night only to realize that I only had two very small chicken breasts and no time to run to the store. Trying to stretch the chicken as far as I could to feed two adults and a preschooler with a big appetite, I made these wonderful chicken chips! The cook time is an estimate because I just cook mine until they turn a nice golden brown. -- posted by KayVery

Slow Cooked Beef Tips

I love throwing this in the crock pot before I leave for work. It is so easy to prepare but taste even better. You can substitute 2 pounds of beef stew meat cut into smaller sections if you like instead and double the onion soup mix and mushroom soup if more gravy is desired. -- posted by Chef #709115 BECCA BOO

Toula's Octopus

This came to me from friends of ours in Volos, at the foot of Mount Pelion in east central Greece. It could be served as meze (appetiser) or as the main dish, either way, there is no simpler dish to prepare. It is a bit like Evelyn's version, but even simpler. One difference is that personally I do not remove the suckers and membrane before serving. It is very healthy (pure protein) and very easy. -- posted by (Bruce) Tony Hubbard

Pork Wraps

This is a quick easy meal for supper. I have added a tomato sliced and seeded and that was really good too. You can season the pork while sauteing but its not necessary. Of course the taste will vary depending on what barbecue sauce you use. I like this with thick and spicy barbecue sauce. Something different and kids like to wrap their own! I also have used chicken and it is equally just as good! -- posted by Dissie

I have looked for a couple of years for a good restaurant style pizza dough recipe I could make at home. Most of the recipe's I had tried tasted like bread, not pizza dough. This is the closest I have found to a great dough recipe! Please note Recipe is by weight, you will need a scale. Measuring by weight allows exact measurement and can be duplicated perfectly each time. The recipe is based on 65%-68% hydration.
Three-Ingredient Sticky Baked Chicken

From the Canadian Family Website: Sticky, sweet with a little savory soy sauce, this chicken is pure yummy. Destined to become a family favorite because kids love it and parents love the simplicity of this oven-to-table meal. I had a great result making this with bone in chicken leg thigh quarters. I had one piece that was skinless, and we discovered that using skinless does allow the flavor of the glaze to permeate the chicken better. This was a hit with my whole family - including my hard to please 3 year old.
I used ketchup, reduced sodium soy, and lite maple syrup. Ingredients I happened to have on hand. This could NOT be easier. Adjust cooking times as needed for bone in cuts. Great with white rice and steamed broccoli.
This recipe is so simple that you will probably have this assembled before your oven is preheated. -- posted by Linda Sue

I usually just buy the hard shell taco kit because the seasoning is already included. It's so juicy and full of flavor, you'll love it!!! I list my portions for 2 so just multiply if you are serving for more people.
Sopes

Sopes are very traditional in mexican households. The toppings range from just beans and cheese, to eggs, shredded chicken or beef, picadillo, or even just guacamole. To form the sopes you will need either a tortilla press orflat plate or the bottom of a skillet. Also, you will need plastic wrap or a small ziploc bag cut into two pieces and the zipper cut off. -- posted by Tiny_Toodles

Vegetarian Brown Rice Casserole

Vegetarian main dishes often require hours of chopping and cooking, and a laundry list of ingredients – but not in this dish. This easy casserole turns a can of vegetarian lentil soup into a hearty casserole with the help of nutritious, ready-to-serve whole-grain brown rice, canned vegetables, and cheddar cheese. Because all of the ingredients go into the casserole already cooked (canned vegetables are simply cooked vegetables in a can), all they need is a few minutes in a microwave before they are delightfully done and ready to serve. -- posted by Chef #1365024

Curried Ground Beef and Beans

My mom made this all the time. My dad and I loved it. It is so simple to make it was one of the first things I made on my own. The basic recipe has only four ingredients. You can customize to your own taste. I would try it first the way it is and modify as you see fit. I sometimes add onion and garlic when browning meat. I also have some nice hot curry that I mix with my regular curry to spice it up a bit. -- posted by Deglazing Dad

Easy Oven Barbequed (Barbecued) Chicken

Is this the very best barbequed chicken you ever tasted? Nope.... but it's pretty darn good! It's also about as easy as any scratch entree recipe you'll ever make. I prepared it a few nights back when I couldn't come up with anything for supper until late in the day -- that's when I remembered the frozen chicken (cut up) in my freezer. If the chicken is still half-frozen even after some defrosting in the microwave, this recipe still works fine. -- posted by Bone Man

Emily's Easy Cheesy Vegetable Soup

My friend, Emily, shared this recipe with me at my bridal shower. Its a quick, easy, tasty meal for cold winter days. I like preparing it in a crock-pot instead of on the stove to avoid burning the cheese. Emily also told me that while any mixed veggies will do, Veg-All is her favorite and I agree! I use low sodium cream of chicken soup, since left-overs tend to get salty in the fridge over time. -- posted by Chef #1067801
