Fire Roasted Tomato and Zucchini Vegan Pasta

This fantastic blend of fresh vegetables, fire roasted tomatoes and peppers, and pasta can be modified to include any seasonal vegetables. It's easy, healthy and delicious!
You can find fire-roasted tomatoes and fire-roasted peppers at most grocery store olive bars, including Whole Foods. If you don't have access to these, you can make your own, substitute sun-dried tomatoes, or substitute fresh versions. The beautiful thing about veggies is that there's no "right" way to do things!
You can also substitute basil or oregano paste or powder for the fresh version, if you need to - but fresh is best! -- posted by Mountain Bike Mom

Carrot Pasta Sauce

The fresh ingredients and the short cooking time, make this a perfect light summer pasta dish. I found this recipe online claiming to be a fake tomato sauce.
Cottage Cheese With Banana and Blueberries

One of my favorite snacks growing up in southern California with plump berries from Portland, OR. Now that I'm in Norway and surrounded by free-for-all blueberry bushes, I can't wait until the blueberries become ripe and ready in August, so I can start enjoying this simple treat again.
Eric's Pasta Salad With Tuna and Peas

This recipe came about at the last minute on Memorial Day. I needed something to take a to a barbeque, but didn't want to go to the store. My husband suggested shells, tuna and peas, all things we had on hand. I thought, ewww, sounds gross in the heat, but, I whipped it together. It was a huge hit. So much so our kids, my sisters and niece request it frequently. I'm estimating the measurements for the dressing, as I don't usually measure. -- posted by nanner18411

Garden Tomato Soup

If you have an abundance of tomatoes - or can get them cheap - here is a soup recipe that not only is delicious, its salt-free, and if you omit the milk or yogurt til later, you can freeze it for the winter. Very adaptable to suit your own taste. I found this in a soup cookbook by Debra Mayhew, & tweaked it to our needs. With tomato plants exceeding expectations, this is the way to eat well all winter long. I favour it to provide a kidney patient with no-salt soup she can still enjoy - we add some salt at the table, though. It wraps itself around your tongue like canned soup never, ever will. -- posted by Maple

Magic Fresh Tomato Spaghetti, Pasta or Pizza Sauce

Check out this trick - a whole, unpeeled tomato goes in the pot, and a tasty, seed-free, peel-free tomato sauce comes out! Okay, well, maybe it's not really magic, but it's a great trick to save you from having to peel, chop, and de-seed all those tomatoes (which is the reason I almost never made sauce from my garden tomatoes until now).

We'll take care of the peels and seeds with a blender/food processor and a fine mesh strainer. Yes, a couple of extra things to clean, but it's still faster than all that peeling and chopping! Also, because the peels are cooked in the sauce, you preserve more of the nutrients in them.

This is a highly customizable recipe (really more a framework than anything else) - make it smooth or chunky, with meat or vegetarian, regular or low-sodium, or even use it to hide a few extra veggies (a tip for you parents of picky children - you can make them completely undetectable). The quantities are inexact because there's so much variation in the size, taste and texture of fresh tomatoes, and anything else you add will change the flavor. So you really have to adjust the seasonings and other ingredients to compensate. This is part of the art of making tomato sauce, but don't be intimidated! Just add a little bit at a time until it tastes right to you, remembering the axiom: "You can always put more in, but you can't take it back out." Unless you have a real magic wand, of course. :) -- posted by ItalianMama

Homemade Lemonade

I make this by the gallons every summer very refreshing!
This summer I made 3 1 gallon jars of this lemonade for Erika's 4Th birthday party we bought the extra - large peanut glass jars at Wal - Mart and they looked really pretty sitting on the counter top and island in the kitchen with the raspberries and sliced lemons floating in the lemonade in the jars with the ice glistening in the sun coming in through the kitchen windows. There was not a drop left after the Birthday Party! Although Deb, Erika's mom did ask for a special request more sugar to go in the lemonade than I usually use so it was much "sweeter" and not as tangy but still very refreshing on a very hot and special day for Erika! -- posted by oilpatchjo

Orange-Avocado Salad

I got this recipe from the Betty Crocker website and made it with my housemates as a side dish to Corn Casserole. Instead of making them in individual bowls we made it in our big salad bowl with all ingredients combined and it turns out quite nice. We all really liked it and think it would make a good summer salad as it's very refreshing. We were also thinking of adding nuts or sunflower kernels next time we try it. -- posted by RicanDownUnder

(rub rosemary and basil in the palm of hand and add over all)
(Add cayenne pepper to add a lil heat to it.)

Kiwi, Strawberry and Grape Juice.

I got this recipe from 'The top 100 juices' by Sarah Owen, published by Lifetime Distributors, Castle Hill, Australia.
Sarah Owen says "All three fruits in this juice provide a massive infection-fighting boost of vitamin C and can help to shorten the duration of a cold. The kiwi fruit a also contain lutein, a phytonutrient known to reduce the risk of cancer, heart disease and eye disease. Both strawberries and grapes are high in ellagic acid, which neutralizes carcinogens. The tannins, flavones and active compounds in the grapes combine to make them energizing and strengthen the cell walls of blood vessels"
You could make more than one serving, and serve with lemonade and ice in a punch bowl for a party if desired.
I haven't made this yet, as I don't have a juicer, but if I ever get one, this will be the first juice that I make.
Enjoy! :) -- posted by TALIA #3

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3

Sugar, Salt & Vinegar Red Tomatoes

I just reviewed a Sugar Glazed Fried Green Tomato recipe on Zaar and it reminded me of a recipe I use constantly during the summer and it is not posted. My mother stated it was Swedish and my father stated it was German or Bavarian. Very simple and the marinating juice can be used in soups, stews or vegetable pies. Note: You can use raw sugar also.
These tomatoes can be added to a simple lettuce salad and no dressing is necessary or served separately with juice drained. -- posted by Montana Heart Song

Awesome Cucumber Infusion Summer Cocktail

Infusing vodka is really easy and gives your cocktails unique, pure flavors that can't be approximated by buying already-flavored vodka. This recipe also tells you how to make homemade sour mix, which is so much tastier than store-bought! This cocktail is always a huge hit at summer parties and barbecues. It's adapted from a cocktail served at the Delta Cafe in Portland, OR.
(This recipe is portioned for 16 drinks, but depending on the mix you like, you may end up with leftover juice, or sour, or vodka.) -- posted by CptShane

Tomato and Fetta Salad

A Greek inspired salad of fresh tomato halves, fetta cheese, olive oil and herbs. Perfect side dish for a meal, or wrapped up in a piece of flat bread it makes a great sandwich. It is absolutely essential to have good quality tomatoes for this dish. Little mini roma tomatoes are ideal, or any vine-ripened or organic fruit. -- posted by becy
