Grilled Asparagus

I like to start off with this as an appetizer. It prepares and cooks quickly. I usually put all my vegetables on the edge of the grill that'll take a while to cook, and cook these in the middle before I put the meat on. It's a great finger food, and even people who don't like asparagus will love this. -- posted by The Paco

Vegetable Party Sandwiches

This is my sister's recipe which she makes for parties and holiday events. The sandwiches are always a popular food item! In Spring of 2007, this recipe was featured in two North Carolina newspapers by the famous Food Editor, Helen Moore. Plan ahead because the vegetable mixture needs to be refrigerated 25 hours for the flavors to blend well. The recipe yields 112 party-size, quartered sandwiches. Preparation time, not refrigeration time, is stated. -- posted by Seasoned Cook

Healthy Baked Corn Tortilla Chips (Homemade)

A wonderful healthy snack and a great way to use up leftover corn tortillas. Great with Recipe #287183 or for making nachos. I vary the toppings on this depending on what I will be serving them with, but lately have just been making them plain. VARIATION: If you need more healthy oils in your diet, brush with olive oil. -- posted by Emily Elizabeth

Absolute Best Mango Salsa

I absolutely adore fresh mango, and this salsa is the perfect way to make them shine! The result is very fresh, sweet and spicy, and chunky...similar to pico de gallo in texture. Make sure you use mangoes at their peak...if they are too ripe, your salsa will be mushy. I make this often for guests by serving with blue corn tortilla chips (the color is so much prettier than plain ol' tortilla chips!) or serve alongside mahi mahi or other grilled fish. I hope you enjoy it as much as I do! -- posted by Elle Woods Can Cook!

Peanut Butter, Banana and Sultanas Sandwiches or Pinwheel Style

Yummy little snack for little kids or big kids. Alternatively, you can use either two slices of the same bread (either two white bread or two wholemeal bread) it's just to make it look pretty and healthy for kids. The pinwheel style is difficult to do without making a mess so if you don't like a mess or a challenge. You can use two more slice of bread and place them on the top, this will then be a serving size for two. Please be careful with nuts, we don't give Little Miss (DD) nuts because her cousin has a severe nut allergy. -- posted by Chef floWer

Veggie Flautas With Skinny Guacamole

Flautas are crisp, little rolled tacos, sometimes called "taquitos". To reduce the fat content, these flautas are filled with mushroom slices (instead of meat) and are baked (instead of fried). The guacamole was fat-reduced by using tomatillos for a portion of the sauce.
Traditional Devon Cream Tea Strawberry Jam - Strawberry Conserve

A fabulous recipe for a soft set strawberry jam, or rather a strawberry conserve, where most of the fruit remains whole and is suspended in a delicious strawberry flavoured jammy syrup! This conserve reminds me of the traditional Cream Teas you get in the West country of England - especially Devon and Cornwall; a pot of tea served with fluffy fresh scones, butter, thick cream and this strawberry conserve. (Preparation time includes the 2 days allowed for the fruit to stand in the sugar.) This type of jam recipe is also very French, they tend to have a softer set jam here in France - it is lovely to see WHOLE pieces of fruit on your toast or scones! I also use this for steamed puddings - absolutely divine! -- posted by French Tart

Smoked Salmon Rolls

These are a sushi-style combination - pancake with smoked salmon and creme fraiche all rolled into a swiss roll. It sounds complicated, but trust me....it is dead easy - even my hubbie can make it! They can also be made in advance. They make a great starter or canape. The recipe is from the BBC's Good Food Christmas 2004 magazine. My hubbie has demanded these every Christmas and regularly in between ever since I got the magazine in 2004. The pancake recipe is also a great one to keep handy for those pancake moments!! -- posted by keribarr

Membrillo (Aka: Quince Paste)

Quince is very bitter until it is cooked. This is one of many versions of this old recipe, but this is my favourite.
I serve this mainly as a dessert, on a cheese plate.
The amounts of sugar used in the recipe are guessed, when you read the recipe, follow the suggestion for an equal amount of sugar to cooked quince.
Also, the amount for the dusting of superfine sugar is a guess, and ditto for the nuts; I've never measured them, I just toss them in! -- posted by Barefoot Beachcomber

Veggie Sandwiches A.k.a. Veggimiches

I used to make these all the time in southern Cali for my BF. Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages. I'm not sure where the "m" stems from in "veggiemich," that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down. Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe! We loved using a lot of pepper for a nice kick. You can make it a more filling meal with other additions, too! ^_^ -- posted by FuzzyKiwi

Obelisk Breadsticks

From the Washington Post. Obelisk is a restaurant in Washington, DC.

These make a savory, crisp snack. Don't be discouraged if they're not perfect the first time; they'll still taste great.

The dough is much easier to do in a mixer fitted with a paddle attachment, and easier to cut using a dough or bench scraper. A convection oven makes for crisper breadsticks; shorten the baking time as needed.

MAKE AHEAD: The dough needs 30 minutes' resting time. -- posted by RDcook444
