			<description>I had some fajitas once at a chain restaurant....Chilis or Applebees I think....that had bacon and mushrooms.    It was an unexpected twist.   I used that idea as an inspiration for this recipe where I used a bottled Mesquite Marinade (because I can't seem to create one I like), chicken, portabello mushroom strips, bacon, and a nice sauce.   I've served it several times (although not in a few years) and it is a hit every time. 			<description>Cold weather is just around the corner so this recipe from the LA Times' SOS column, kindly provided by chef Kamil Majer Blu Jam Cafe on Melrose Avenue at an appreciative customer's request, caught my eye. The customer noted he is a first generation Hungarian-American, who for twenty years has been searching for a goulash recipe that even remotely resembled his beloved grandma's... &amp;amp; this is it. Not only does it reheat well, it actually tastes better the next day - another one for the brown bag wide mouth thermos. BTW - pork shoulder works fine too - just trim either of excess fat &amp;amp; shoot for a pound and a half of meat to cube. 			<description>Wild mushrooms, caramelized onions, creamy ricotta, tangy cheese, fresh herbs make this a great dish.  Now I prefer whole wheat manicotti if you can find it. I found some at Whole Foods which I love, but if not, good ol' Ronzoni or Muellers or any brand will work just fine.  To me it is just a nice option to the tomato based manicotti or that with beef or chicken.  I just enjoy the change of having a lighter vegetarian dish now and then even though this has a rich cream sauce. 			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower. 			<description>This is one of my favourite quiche recipes.  I received the recipe card and spice packet from the Egg Producers of Nova Scotia.  I do change it slightly for our tastes, by using either a mild cheddar or marble in place of the swiss.  I also go the 'crustless' route.  If you add extra mushrooms and onions (like I often do), I suggest putting them, along with the cheeses in the pie plate first. Though I am still experimenting with this, here is my current version.  It does not make extra sauce but is somewhat dry, because I don't eat it with rice.  I lightly steam the veggies (sometimes I add chicken) in water or broth and then give them a very quick fry in a small amount of oil.  The veggies are only suggestions - use what you like.
