Smoky Black Bean Soup

This is a meat-free but smoky tasting black bean soup. No soaking of beans is required...just drain and rinse the beans. The inspiration for this recipe was #102274, TGI Friday's Black Bean Soup. I tweaked it enough that I thought I should enter an altogether new recipe. -- posted by Epi Curious

Spicy Turkey Slow Cooker Soup (Ww - Only 3 Pts/Serving)

We enjoyed this simple soup which I adapted from weight watchers.com. It is a little soupy - so if you prefer a thicker soup, you may want to decrease the amount of broth or add some extra veggies. It also freezes great - and actually is better re-heated in the microwave. -- posted by ellie_

Chipotle Chicken Stew

This was originally a recipe for the crock pot. I tend not to use my crock pot too often for meals because I'm away from home for more than 10 hours and I don't have one that can be programmed. I've adapted it to be made on the stove top, but you could still make it in the crock pot. Just put all the ingredients in your crock pot and cook on low for 7-8 hours (or 3 1/2-4 hours on high). -- posted by LARavenscroft

Easy Vegetable/Black Bean Soup

With most of the food in the house being saved for christmas eve/day, I was hard-pressed to find anything to eat. I decided to make soup out of canned goods i had in the house. Couldn't find a recipei liked, so i made up my own. It was really good and my parents couldn't eat enough of it. The tomato puree adds a thick body to the soup which makes it hearty and thick.
I made this about a week ago and I may not have remembered all the ingredients or steps. If i left anything out I'll be sure to add it. However, this soup is really versatile so don't be afraid to make it your own! Any leftover vegetables would be a welcome participant. Enjoy! -- posted by Lindsay!

Vegetarian Black Bean Taco Soup

I swiched around ingredients from several recipes to come up with this version of a vegetarian taco soup. I like black beans best, but you can throw in whatever you like. This is my fall - back recipe when I need something qick and easy - yet good enough for company. Dress the finished soup however you like - sour cream, cheddar cheese, or crushed tortilla chips go great with it - but on its own this soup is filling and nutritios and very low fat. -- posted by Kalija

Black Bean Chili / Soup

This was the product of a craving for Mexican food, a cold day and the contents of my cupboard, the result is a thick soup or a thinner veggie chili. It's quite versatile it makes enough for a few meals. The day after I made this I discovered the leftovers make a delicious queso mixed with cheddar cheese soup, paprika and hot sauce to taste. I am guessing at the amount of water since I just threw some in, add whatever you think will yield the right consistency.
*If you've never worked with jalapenos before broil them for a few minutes before trying to peel them and the skin will come off much easier. Also wear gloves or bags over your hands because they burn! -- posted by bmarie

Black Bean Tortilla Soup

I found this in the January 2009 Good Housekeeping. I cooked chicken thighs to make homemade broth so I'd have more chicken broth for other recipes instead of using reduced-sodium chicken broth, and I didn't have poblano chilies so I used jalapenos. I had black beans already cooked in the freezer so I didn't use canned. The cilantro and lime juice make the recipe very flavorful...the soup would be bland without them. There are other recipes for Black Bean Tortilla Soup posted, but this one is another variation. Hearty and filling... -- posted by AmyZoe

Refried Bean Soup

This is an award winning recipe from Taste of Home, Darlene Brenden of Salem, Oregon. I will post the recipe as listed, but I did make quite a few changes. I sauted a cup of red onion in oil and then added garlic after it was translucent. Then I used homemade refried black beans and refried pinto beans my friend made for me (i.e., with lard). I had frozen some homemade black beans and used those too instead of canned. I had homemade chicken broth in the freezer and used that in place of canned. I didn't use any water--only chicken broth. For the tomatoes, I used a combination of fresh and stewed (whatever I had). I didn't use green chilies, but I used around 7 ounces of jalapenos for more bite. I ended up adding another cup or so of corn for color and flavor (no, my corn wasn't garden fresh). Plus I added cayenne pepper, cumin, chili powder, and salt because I thought it needed more flavor. I also added a bunch of fresh cilantro at the end. If you don't want your food to talk back like I do, you'll probably enjoy the recipe exactly as posted. I must confess I almost threw in a bunch of frozen hash browns at the end, but I didn't because that would really tell you I live in Idaho. Maybe next time...it'll be hash brown and refried bean soup, the Idaho way. -- posted by AmyZoe

Black Bean Soup Like Panera Bread Co.

I've been trying to replicate Panera Bread Co.'s black bean soup because I love it so much. I think this is my best attempt. Their soup has no discernable vegetables - just black beans in a thick bean broth. I've added vegetables here but pureed them so that they are just thickening the soup and adding fiber.
Home Canned or Stove Top Black Bean Soup

I loved the Black Bean Soup that the restaurant Lone Star use to serve. So I called a local radio station that has a show called 'Listen to the Mrs.' to ask if they had a recipe for it. This is what they gave me, and it was very similar to the restaurant's soup. This stove top version is easily adapted to home canning. Then you will have several quarts in your pantry!

The following ingredients are for one stove top recipe. To use for home canning, be sure to add each of the listed ingredients to each jar of soaked black beans. -- posted by Cooking Wannabe

Slow-Cooker Black Bean Soup

Cumin and fiery serrano chile infuse this simple soup as it cooks, and a dollop of sour cream provides a refreshing foil for the spicy flavors. For less heat, seed the chile first or use a milder pepper, such as jalapeno. You can also omit the chile altogether, if your prefer. You can soak the beans before you go to bed, then wake up and put everything together in the crockpot. You will have a hearty, satisfying soup that is low in calories and fat waiting for you when you come home from work. -- posted by JackieOhNo!

Something especially nice to pack for lunch from the LA Times.
Easy Vegetarian/Vegan Black Bean Soup

Hearty, yummy, and healthy! This is a really easy soup to make, it cooks really fast without many steps, and is very rich with black beans. Some fresh cilantro would make a nice replacement to the coriander but I usually don't have it on hand, so I used dry spices for everything but it came out great. I like my soups with a tad of salt, but you can omit the salt if you're watching your sodium intake or lower it/replace with something like SaltSense. It's very pleasant and mild, though you could probably put some Bayou Blast or red cayenne in the spice mixture if you want it hotter. Yields about 2-3 small servings. -- posted by the80srule
