Black Bean, Hearts of Palm, and Corn Salad

This was my first time using hearts of palm, and I found out by accident that they will hold up better if you let them drain for a while before cutting them. I also want to try pineapple or mangoe in this. Adapted from epicurious. -- posted by Chandra M

Banana Black Bean Salad

A fresh/zippy salad that can be made well in advance and served with a dollop of sour cream and chives/parsley/cilantro as a garnish or alongside fish, rice or something else fun.

Mango may be used in addition to or in place of the banana.

I developed this recipe to combine the delicious flavors of Island and Latin food with Californian cuisene. -- posted by Food Snob in Israel

Easy Black Bean Dip

This is one of the easiest recipies I know of and it can be served and eaten many ways. It can be served with virtually any chip as a dip for a party (or as I more commonly eat it which is whenever I'm hungry for 2 or 3 days till it's gone). It can be used on top of salads or as a condiment for Southwest-style wraps or eaten like a bean salad. -- posted by BeautyBlondeC

Mexican Bean Salad

This is the perfect salad to take to a family reunion or potluck. It's colorful, keeps well and is full of flavor without being too spicy or vinegary. I think the Sun Vista brand of beans has the best flavor for this recipe.
Easy Yummy Black Bean Salad

This one grabbed me for seconds at a potluck recently, so I just had to snag the recipe from the chef. I was amazed at how easy it was, and if you've never liked black bean salad...well, just try this one! Update Jan 8, '08: I just realized that I should warn those who love things hot & spicy that this is NOT! It is what I would consider tex-mex for those who don't like things hot.
Asian-Style Three Bean Salad

By Ellie Krieger, as featured in her book "The Food You Crave" and also in Fitness Magazine. Three-bean salad gets an exciting Asian twist, made with a trio of legumes all commonly used in the Far East: green beans, edamame and black beans. The dressing is sweet and tangy just as in the traditional recipe, but this one, inspired by Chinese duck sauce, gets its sweetness from apricot preserves and has a zingy hint of fresh ginger. -- posted by ~Jen~

Black Bean Salad

I had a very similiar salad when I was in Costa Rica. I use it for a side dish but most people start scooping it up with tortilla chips, crackers, raw veggies, tortillas or arepas like a salsa. The seasonings can be adjusted for your taste. Great vegetarian dish. -- posted by TLu

This recipe from Chatelaine magazine is a great way to use up leftover barbecued chicken, grilled corn, and grilled peppers. You can simplify things like I did by using cooked corn kernels and roasted peppers out of a jar. The dressing is tasty, too.
Southwestern Summertime Quinoa Salad

Wanted a refreshing wholesome side dish to accompany some spicy Mexican meatloaf, and this is what happened. Use a LARGE bowl to mix as it makes quite a significant amount. With the seasoning amounts given, the predominant tastes are the lime, cumin, and cilantro. My family doesn't like spicy things, so there isn't much kick to it, so you could probably double the chili powder, increase the other seasonings, and add some cayenne if you desire. Could also be made with long grain rice if quinoa is unavailable. -- posted by Stylobille24

Bean Salad

Using a variety of beans and other vegetables to make a delicious cold salad. Though I use these beans, you can substitute any other beans. sometimes I forget the tomatoes, sometimes my forgetfulness is intentional. ;-) You can serve immediately after making at room temperature or refridgerate for a different taste. Holds well in fridge for leftovers. -- posted by Chef JVDreamWorker

Corn and Black Bean Macaroni Salad - Tex Mex

Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
I opted for yogurt and smart balance for better health. But you can use sour cream and mayo. -- posted by ~Rita~

So refreshing, would taste great on a burger or chicken sandwich. It tastes a lot like the topping of the quesadilla explosion salad from Chili's!
Fresh Corn, Black Beans, and Tomato Salad

Another great tasting recipe from Cook's Illustrated:
Fresh off the cob is perhaps the best way to eat summer corn, but corn tossed with beans and tomatoes is a close second. The sweetness of the beans and the acidity of the tomatoes bring out the flavor of the corn. We wanted to find the best way to combine and flavor this trio. Here’s what we discovered:
Boil the ears of corn until just tender, then cool them quickly under running water so that they don’t overcook.
Canned black beans taste fine, as long as you rinse and drain them thoroughly to remove any of the liquid in which they come packed.
Choose sweet-tasting, firm-textured grape or cherry tomatoes. They release less watery juice into the salad than diced full-size tomatoes do. -- posted by Pi-E

Perfect in a warmed flour tortillas wrap with some shrimp, or a lettuce wrap with a bit of Avacado. It can be used with seafood, chicken, beef or pork as a relish. Or as I like it, alone for lunch. High fiber, low fat and awesome taste. I hope you enjoy it.
