I tend to go a little light on the tofu and a little heavy on the cream cheese, and I put some or all of the optional cheddar cheese in the enchiladas as opposed to on top.  I recommend light tofu, as it has a lighter flavor as well as being lower in fat.  I also tend to process all of the tofu as opposed to half of it.  Prep time is an estimate. 			<description>I LOVE spinach dip!  Healthy alternative and fun way to eat tofu.  I was going to make this today before posting this, but ran out of time.  I'll give an update once I make it which if I can help it should be very soon!  This is another one of my new recipes from Neva &amp;amp; Jim Brackett's 7 Secrets Cookbook to lose weight, lower cholesterol, and reverse diabetes.  Cooking time does not include time needed for dip to chill which is 2-3 hours. Update: I know honey isn't vegan which is why I listed or sugar, but I personally don't mind using honey.  So, if you want this meal to completely vegan for you, don't use honey. If you do that, you'll want to let it come to room temp before baking it.  Also, I was going to make some hashbrowns and mix it in with this, but I didn't have time.  Just bake a potato, peel it, grate it, fry it in a pan with some veggie oil and layer it on top of the bread. Dr Weil's note: Baked, pressed tofu is available refrigerated in health-food stores and Asian grocery stores.

ETA: I made this tonight. Sorry, I didn't time the prep. Lots of chopping of course. I used PAM instead of oil in my well-seasoned cast-iron skillet and didn't miss it. I found the flavoring mixture tasty but it stayed runny. You could either add it earlier in the stir-frying to see if it cooks down or add some cornstarch. 			<description>A variation on Ethiopian Dorowat made with tofu instead of chicken.  

For a complete Ethiopian feast, make this dish with (other recipes from my book):
- Lentils of Doom
- Cabbage of Ostracism
- Beef Stew in Berbere Sauce

Making these four dishes together, you can:
- Pick up one lg white onion and chop it finely.  Split it four ways between the dishes.
- Pick up one 28-oz can of crushed tomatoes and split it between the Dorowat and Beef Stew

Start the beef early, then the dorowat.  Then, do the lentils (assuming pre-cooked potatoes) and cabbage.
