			<description>This has to be one of the best antipasto recipes ever!  The original recipe came from one of those cookbooks where everyone submits a recipe but it has been modified.  The only reason for this is when my Dad and Sister were making it they weren't sure if you were supposed to drain the olives and pickled onions, ...they didn't and it came out great!  The longer you can let it sit the better it taste. 			<description>I just LOVE tuna! It's so fun to open a can and make a recipe up. This one turned out so flavorful and yummy... just popping with flavors. I also love a versatile recipe. You can enjoy this atop a bed of lettuce, rolled in lettuce leaves, in a wrap, in a sandwich or my favorite as a melt! I spread some of this on some whole grain sourdough and sprinkled some lowfat cheddar on it...stuck it in the broiler for a few minutes and WOW! The tangy sourdough went really well with it. I can also imagine this with pasta added for a cold pasta salad or as a hot tuna casserole...YUM!  I think I'll be making it every which way I can think of because the flavor is soooo DELISH! If you prefer a non-creamy salad just cut the mayo and sour cream and you might increase the lime juice and perhaps add a little bit of oil. If you want more heat add a jalapeno or two. I was trying to keep fresh cut up veggies on hand and I love tuna so this was quick to throw together when I didn't want to think about what to eat. It is also very colorful...I love green, purple and red together. I also love the spicy tuna with the crunch and flavors of the fresh veggies. 			<description>My sister's boyfriend made awesome shrimp ceviche for our Thanksgiving dinner.  The raw shrimp turned pink as they &amp;quot;cooked&amp;quot; in the lime juice.  The juice also cooks the onions and the other ingredients.   He mentioned that you can also make ceviche using store-bought, canned tuna.  The tuna's already cooked, but the taste is the same. 			<description>This zesty baked potato is very easy and light on calories.
If you wish, chop a red pepper into small pieces and stir into the mix. 
If you're cooking an ovenful of potatoes, increase the temperature. Use metal skewers or baking prongs pushed through the potatoes to reduce the cooking time by up to a quarter. When I came across this recipe in 'The Terrace Times Minimum Effort Maximum Effect Cook Book: Melbourne edition' (first published in 1979 and the tenth in a series), I just had to check it out!  First I read &amp;quot;Seafood Chicken is hardly a recipe but a useful idea when the remains of a roast chicken are inadequate for a second meal. They can be extended and revitalised with canned tuna.&amp;quot;  &amp;quot;Revitalised&amp;quot;: that's a quaint concept!  Amazing just how dated the descriptions in older recipe books can sound. But as a useful idea rather than a recipe, this could be just as &amp;quot;useful&amp;quot; in 2009!  And that's the spirit in which I'm posting it. Naturally to be acceptable for a Zaar posting, I've had to specify some ingredient amounts but basically I'm offering this as a &amp;quot;how to use leftovers&amp;quot; recipe or - if not &amp;quot;recipe&amp;quot; - then idea!
