ancho chilli powder
chipotle ( I always add chipotle)
dried onions theyll rehydrate during cooking.

This recipe will make enough for about 4 lbs of meat.

			<description>I was preparing recipe #227325 posted by chef #296027 and found this recipe/technique online for the ancho chile puree called for.  Apparently, the Food Network's Bobby Flay uses this puree in several recipes.
Prep time does not include the 1 hour required to soak the dried chiles.
(Just a note:  my mesh strainer was more on the small side...so I ended up spreading and pushing with the spatula and then having to sort of 'shave' the puree from the bottom of the strainer with a knife!!  It worked....and I think I ended up with a finer puree, but it made the process more cumbersome.  So DO use the larger meshed strainer if you have one. 			<description>I am a complete novice when it comes to making Dosa.  I searched around Zaar for a recipe that didn't use white rice or par-boiled rice.  I ended up finding a version here - http://dalitoy.blogspot.com, which gave me an idea for the ingredients, but not much in the way of instruction.  So I searched around some more and found some more straigh-forward instructions.  I have yet to try this, but I like the sounds of it and plan to try it soon.  Note there is soaking and fermenting time to consider, so you'll have to plan in advance.  Dosas new to you too?  It's basically a crepe made from rice and split/hulled black lentils (aka white lentils...I take it these lentils have black skins and are white inside).  Dosas can be stuffed with vegetables or served with sauces/sambar for a light meal or snack.  I believe these would be gluten-free, but I'm no expert so please look it up if that's important to you.  I'm hoping to pair these with a variety of vegan fillings for an easy, portable, lunch. 			<description>These are great dry rubs to try before you go out and buy the whole bottle and then find out you don't like them. Most of these ingredients are already in your cupboard. I keep all my old spice jars, wash, remove label and reuse for recipes like these. Dry rubs do not need standing time but can be applied several hours in advance if kept refrigerated. The flavors become more pronounced the longer the rub is on the meat.
