Peeled Tomatoes for Soups and Sauces ( a "how To")

Was surprised when I saw so many recipes for tomato soup calling for peeled tomatoes....but no instructions as how to peel them! If you try to peel a fresh tomato, you know it's a mess, that's why so many folks use canned tomatoes! Well, for the uninformed, here's how..............and a good-bye to canned! NOTE: for ease of printing this I am using 20 tomatoes as the guideline. -- posted by Happy Harry #2

Make Your Own Single-Serve Vanilla Yogurt

Although it lacks the portability of something like Yoplait, Dannon, Stoneyfield Farms, etc. it's a good alternative if you like a cup of yogurt with breakfast. Most are 6 oz instead of a full cup, so I decided to use that measurement instead. Except for when I can get them really cheap or need to carry them to school or work, I think I'll use this method to make vanilla yogurt from now on. No HFCS monkey business here! -- posted by the80srule

Pan Roasted Almond Brussels Sprouts

This was a side dish my mother taught me to make after she modified a recipe she'd found in a cookbook to suit our family's tastes. These get deliciously crunchy on the outside and soft on the inside. So good I could eat them as the meal itself.

NOTE: Try to choose sprouts that are all about the same size. Smaller sprouts work best. -- posted by kolleen1021

Healthy, Fast, and Delicious Macaroni and Cheese With Vegetables

I love macaroni and cheese. It's homey, comforting, delicious, and versatile. I love this mac and cheese recipe because in addition to being cream and soul-satisfying as all mac and cheese should be, it is also incredibly easy to prepare and lower calorie.
Herb-Roasted Potatoes and Onions (Ww 3pts)

My guess is that the small red potatoes in the cookbook are smaller than those used in Zaar's data base. -- posted by Dreamer in Ontario

It looks especially pretty if you garnish each serving with a strawberry fan.

Cabbage With Caraway

This is my mother's recipe - I don't know where she got it from. It is a great way to cook cabbage, which leaves it slightly crunchy and tasting delicious. Nothing like the awful boiled cabbage you remember from school!

Cabbage is very good for you, as it contains anti-oxidants, vitamin C and all sorts of other things.

Try this as a vegetable with chops or burgers and plain boiled potatoes. You can use leftover cabbage and potato to make Bubble and Squeak. -- posted by SarahEmmm

Kadhi Pakora / Pakoras

At the local Indian market, they have a small, vegetarian "cafeteria-style" lunch/dinner counter that we go to as often as we're able. One of my favorite dishes there is a yogurt curry with pakoras swimming in it. Pakoras are a snack made with, in this case, veggies dredged in a chickpea (besan) flour batter and then deep fried. I've been on the hunt for a good kadhi pakora recipe and found this keeper. Just don't use thick, Greek style yogurt like I did; you want more of a soupy consistency rather than what my photo shows. You can vary the veggies you use here. Try onion strips, spinach and even paneer, Indian cheese. Adapted from a recipe at http://www.indianfoodsite.com/. Enjoy! -- posted by Sandi (From CA)

Ginger Fried Rice

This looked awfully good, simple, almost perfect! I made this last night and my BF and I were very pleased with the outcome. If possible, use leftover rice as fresh rice will be too moist. Leftover rice from Chinese takeout works well too. After making the dish the amount of garlic didn't seem excessive to me, but use your judgment. Courtesy of Mark Bittman, the minimalist, from today's version of the New York Times. I reduced the oil as it seemed excessive. Use 1/2 cup if you'd prefer. For a vegan dish, omit the eggs.
Tofu Vegetable Dumplings

absolutely delicious! From my most cherished cookbook: Moosewood Restaurant Low-Fat Favorites. No vegetarian kitchen should be without it.
To make these completely vegan, be sure to get Chinese wonton wrappers (either from your local Asian food store or from the freezer section of a good grocery). Melissa's wonton wrappers, and other brands, typically sold in the produce section of grocery stores contain EGGS. -- posted by Chef #767224

This humble and hearty combination makes a satisfying main dish, especially on a cold night. Lentils are an excellent source of folate and molybdenum and a very good source of dietary fiber, protein and manganese. Any type of lentil will work in this recipe.
Easy Vegetarian Black Bean Tortilla Soup

Quick, hearty soup with a bit of a kick. Can be made Vegan by omitting sour cream. Tame the spice down by substituting diced tomatoes for the Ro-Tel. I serve the soup with corn chips, but tri-colored tortilla strips add some visual appeal. I like to leave the black beans whole, but you can make it creamy by mashing the beans. -- posted by Chef #1540606

Super Quick Tomato Basil Cream Pasta (Vegan!!)

I made this tonight and it is super delicious!! I found this recipe on veganyumyum.com and here is her description: "When it’s summer, I can’t get enough of recipes that use up fresh tomatoes and basil. But no matter what time of year, I’m always down with quick recipes. You can make this sauce in the time it takes to boil the pasta. My whole wheat pasta cooks in 9 minutes, so this simple sauce makes a 9 minute summer meal that’s hard to beat." -- posted by SPrins
