Abc's Sauteed Apple, Brussels Sprouts and Cabbage

A healthy side nicely seasoned with onion, garlic, nutmeg and parsley.
This side is rich in nutrition and fiber, cabbage is an absolutely phenomenal source of Vitamin C also Vitamin A, E and B, rich in iron and sulfur. This is a good thing to add to your diet if trying to lower blood cholesterol. Just skip the butter! -- posted by ~Rita~

Sarasota's Fresh Crunchy Creamy Celery Salad

This is just a nice twist on a celery salad. I would love to say this is my recipe, but I can't. This is from a small Bed and Breakfast in North Carolina. The Owner / Chef was nice enough to share her recipe with me, and had many other recipes that looked wonderful, but this is the only one I asked for. Unfortunately, the Bed and Breakfast is no longer there and the owner can't be contacted. She was a fantastic cook. The cherries with the combination of the pecans and the creamy dressing, just make it a perfect combination. I love to serve this with a honey roasted chicken, just something light and simple. Enjoy it! -- posted by SarasotaCook

Salsa Criolla - Peruvian Onion, Pepper & Lime Salsa

Quick and easy to prepare, salsa criolla is the perfect accompaniment to many dishes. The lime juice is what makes this onion salsa/relish special. It adds a bright flavor that sweetens the onions and livens up everything else on the plate.

For authenticity's sake, it's important to cut the onions "a la pluma," or like feathers. Slice them into to very thin half moons, retaining the curve of the onion, so that they look like little curls on the plate. In Peru, this salsa is made with ají peppers, but jalapeños make a reasonable substitute. Some people also add tomatoes and/or garlic. -- posted by Chef #1334111

One of my originals. Snake beans are also known as yard-long beans. You can grow them yourself, or buy them in Chinese markets. Fresh green beans are a fine substitute.
Onion Tart

This is adapted from Alice Water's onion tart recipe. It is deceivingly simple, but the flavors are surprisingly complex. I use the basic pie crust recipe from Edna Lewis's Taste of Southern Cooking cookbook, usually making several extra crusts to freeze and then pull out for a wonderful dish like this one.

The simplicity of this tart is adapted from Alice Water's onion tart found on another website. -- posted by So Happy at Home

Dehydrator Creamed Corn

To rehydrate and cook dried corn: In a saucepan, combine 1/4 cup dried corn with 1 cup hot water. If the corn has been blanched, it will rehydrate in 5 to 10 minutes, unblanched corn will take about 30 minutes or longer. Bring the rehydrated corn to a boil and cook for 3 to 5 minutes, cover and let sit for 5 minutes. Drain. This will yield 3/4 cup cooked corn.
This recipe adapted from "Mary Bell's Complete Dehydrator Cookbook". Prep time does NOT include dehydrator drying time. -- posted by TxGriffLover

This is such a tasty, fresh way to serve green beans! Very quick and simple; it can even be made a day ahead. The kiddos will eat it up! I have an aunt who requests that I bring this every Thanksgiving. I originally got this recipe from Parenting magazine. If you want to prepare ahead of time, just fully prepare as directed then cover and refrigerate. Bring it to room temperature before serving. -- posted by MN*Kelly

Cream Corn

This is the way my paternal grandmother made cream corn. She had a garden of her own, so fresh corn was easy to come by. If you can't get fresh corn or your corn is dry, you will have to use the option to add dairy cream. The very best time to make this is when Silver Queen Corn is coming in! -- posted by breezermom

Roasted Green Beans With Crispy Shallots

This is an easy and flavorful way to prepare green beans. Roasting is a method I use often when cooking green beans, as the beans turn out tender with crisp, browned edges. The crispy, caramelized shallots and savory seasonings further accentuate the flavor of this dish. -- posted by MarthaStewartWanabe

Best Homemade Rice Pilaf

Mixture of rice and vermicelli slightly browned with a buttery flavor. I love this with ribs, salmon, or barbecued chicken. This recipe is from my mother-in-law, takes about 1/2 hour to prepare, and you need 2 sauce pans. Don't sub with brown rice because it doesn't taste as good. You can cut the butter a little if you want but the more you reduce butter the drier the rice. Use real butter! I suggest make it as is written the first time around. -- posted by Chef #1537226

Potato Gratin

From Martha Stewart -
In this classic gratin, thinly sliced potatoes soak up all the goodness of a milk-and-cream mixture that has been spiked with nutmeg. A sprinkling of grated Gruyere cheese on top becomes gooey in the oven. Using a mandoline creates thin slices, which helps the gratin cook more evenly. -- posted by Chef #1082664

Spicy Coleslaw

I am a single woman living on my own. When I come home from work the last thing I want to do is slave over a hot stove or spend hours making dinner. I need quick and easy options. I try to utilize as many "convenience" items as I can in order to help spend less time in the kitchen and more time relaxing. I like to keep the condiments from takeout and fast food places if I think I can use them for something else. I like to experiement with recipes and make them simple. This has to be one of the easiest recipes I make. The only thing that might be a problem for some people who want to make it, is you need to be near a Chick-fil-a. I use their spicy dressing. I don't normally like typical coleslaw dressing, so this is my little spin on it. I also like to double and even triple the recipe up for family bbq's and potlucks at work. Feel free to add your own items that you like....diced red onion, julienned bell peppers, etc. That's what is so great about recipes, you can make them your own. Enjoy! -- posted by Chef #188403
