The pancake mix says to the 6-8 servings but I got lots of pancakes out of this mix. 			<description>A wonderful brunch recipe for the morning after or when you need an early boost for a busy day ahead; although this is super healthy and refreshing, I have also served this as the dessert dish for a buffet, BUT with champagne as the liquid instead of orange juice! (Just another idea for dressing this fresh fruit salad up with frills!) This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with cr&amp;egrave;me fraiche or vanilla yoghurt, but its also wonderful when served naked, the salad that is, not me! 			<description>This is a recipe from the Bagley House Bed and Breakfast.  It is their most requested recipe and is an adapted version of Miss Bobo's Apple Goodie recipe from Lynchburg, Tennessee.  It's very much like an apple crisp. Their recipe gives instructions to clean the dish as soon as possible or reheat adding water and a few drops of dishwashing soap to help remove the caramelized sugar.  I didn't and boy do I wish I had.  The recipe reads 4-5 servings, but because it is so sweet, I cut down on how much to serve. In any case, this particular salad appealed to me one morning so I threw it together and it turned out delicious.  Prep time includes time to boil egg.  While egg is boiling, cut all the rest of the ingredients and it comes together in a jiffy. The original recipe calls for making the black beans part (Tsah Bi Bu'ul) from scratch, but I find using refried black beans is much simpler...it also calls for frozen peas (what?!?) and from-scratch Chiltomate sauce, but I personally like salsa verde better with eggs.  All amounts listed for ingredients are approximate. There are tons of low fat recipe options out there but the always take out the walnut. Side Note: Many people use &amp;quot;Splenda&amp;quot; as a sugar substitute, if you get an icky aftertaste try Stevia, like &amp;quot;Truvia&amp;quot;.  I personally prefer &amp;quot;Sun Crystal&amp;quot;, a mix of natural sugar cane and stevia.
