An easy, economical and tasty meal. My mother would make this for our family of 12 quite often and we always looked forward to it. I always add more tarragon. In place of the cheddar cheese, I melt Velveeta on top. Quick, easy and delicious. Enjoy! -- posted by Penelope P

Taiwanese Spaghetti

I recently started dabbling in Taiwanese cuisine and came across this recipe that is commonly made in Taiwan, comparable to the American spaghetti and meatballs made for children here in the States. It's considered a comfort food, served on either rice or Japanese somen noodles. It has a sweet taste to it so children like it, and you can make it with or without tofu. It is also traditionally served with sliced cucumber, but I have found that it doesn't make that much of a different to the food. It is usually made with ground pork, but I avoid pork so I have only had it using turkey. I imagine it probably tastes just as good with ground beef as well. I will post my somen noodle sauce recipe soon, too - it tastes much better than plain somen noodles. -- posted by Fluffkins

Chicken " Soup " Risotto Style!

Chicken Risotto. A yummy creamy ( as in texture but has no cream ) chicken, rice and veggie concoction I made last night for dinner. However, I used sushi rice instead of the typical italian arborio- but it absorbs just as much!! Good stuff. As for taste...think of your favorite chicken soup recipe...but risotto syle.
If you use arborio rice you may need to increase liquid and cooking time...it takes a little longer to cook than sushi rice (approx. 5-10 mins..) read the instructions on your package of arborio rice to get an idea. -- posted by Amy Duchesne

Easy Oven Barbequed (Barbecued) Chicken

Is this the very best barbequed chicken you ever tasted? Nope.... but it's pretty darn good! It's also about as easy as any scratch entree recipe you'll ever make. I prepared it a few nights back when I couldn't come up with anything for supper until late in the day -- that's when I remembered the frozen chicken (cut up) in my freezer. If the chicken is still half-frozen even after some defrosting in the microwave, this recipe still works fine. -- posted by Bone Man

Spicy Indian Potatoes

I got this recipe from manjulaskitchen.com. It was so delicious we just ate it without any bread or accompaniment. I didn't even have time to take a picture because it was all gone! Maybe next time.
Crock Pot Beef Chili Beans

Very easy to put together. I have a 6qt All-clad crock pot with the insert that I'm able to use on the stove top as well, which comes in sooo handy. Otherwise, just brown your beef in a large skillet, drain, and transfer to your crockpot. This makes a good size batch so if your crock pot is much smaller, just try cutting the recipe in half. If you work during the day, this can be thrown together the evening before, stuck in the fridge, then started before you leave for work. Can't get any easier than that! -- posted by Noni Suzanne

Eggplant Pizza

In a pathetic attempt to make eggplant parmigiana, I created this instead. It's very easy and uses basic ingredients that are probably already in your kitchen. I've made it about a dozen times in the past few months and my husband loves it. It's a very flexible recipe and I've tried it a few different ways already and it always tastes great and surprisingly like pizza. Goes well with any pasta dish or risotto. -- posted by California Girl in Brazil

Sarah's Secret Recipe Refried Beans

I have been making this recipe for years. It is a very simple recipe and it always meets rave reviews. I prefer it with bacon fat (I'm the sort of person who keeps bacon drippings in a canister in the refrigerator), but if you don't have any on hand, or want to make this recipe vegetarian, it tastes almost as good with vegetable oil. Black beans are my favorite, but you can also make this recipe with nearly any other type of canned bean. I've used pinto, kidney, cannelli and even chickpeas. Use this as a dip or a filling for burritos. -- posted by SarahCKS

I like meals prepared in a Dutch oven because after the prep time, just place into the oven and let it cook. This can also be cooked in a slow cooker on low heat, just add cooking time to adjust for heat differences.

A Better Marzetti

Had never heard of Johnny Marzetti until recently stumbling on his recipe in some newspaper website. Actually, research shows Marzetti's Restaurant in Columbus, Ohio was the source of this great comfort food dish back in the 20's (..is it still there?). Have seen ingredients of several versions of this dish here, but none with all these great ingredients. This is an ultimate comfort food that is even better at the second and third sitting. I think that the sausage and Italian cheese blend is key to success of this rendition. Dish is great with a nice green salad. -- posted by ebbtide

Uyghur Polo (Pilaf)

Polo (a Central Asian variant on the word pilaf) is a food staple found across Central Asia, including Kazakhstan, Kyrgyzstan, Uzbekistan, Turkmenistan, Tajikistan, and parts of northwestern China. The different peoples of each region have their own takes, and their own flavors, for the recipe. This recipe is for Uyghur polo, the variant of the dish found in China's Xinjiang Uyghur Autonomous Region. Uyghur food is on the whole closer in taste to Indian, Persian, or Mediterranean food than it is to conventional Chinese food.

I credit this recipe to my Uyghur language instructor. The recipe can be a challenge to cook correctly at first, but the challenge will prove well worth the effort because it is absolutely delicious. -- posted by mpevans

Spaghetti Alla Puttanesca, Italian Style

I first was introduced to this recipe when I was reading the book, "Belong to Me", when the main character "would have sold her soul" for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! Italians customarily do not use cheese in this dish; the cheese overwhelms the sauce and makes the anchovies more pronounced, unbalancing all the delicate flavours you just worked so hard to create. -- posted by The_Swedish_Chef

Steamed Taiwanese Meatloaf

Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether. -- posted by Fluffkins

Who-Dat Stew (Burgundy Beef) With Cornmeal-Thyme Dumplings

If your fresh thyme made it through the freeze, here’s a perfect recipe to showcase this quintessential Louisiana flavor. The recipe is from Southern Living’s “Glorious Grits” by Susan McEwen McIntosh (Oxmoor House, $22.95).

I listed the recipe as published, but I did add a 1 T additional Herbes de Provence in the cornmeal dumplings: I think it improved the taste; otherwise, this was a very good recipe, well-thymed for the SuperBowl :-) -- posted by East Wind Goddess

Honey Mustard Baked Chicken

I found this in a Cookshelf: Chicken cookbook, and tried it, because my hubby loves honey mustard so much. It was a hit! The sauce it actually for 8 pieces of chicken, but we liked extra drizzled on top of the chicken after it came out, so it worked out better for 4 pieces.
